2 cups all-purpose flour, plus more for work surface
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon fine salt
3 large eggs, plus 1 egg, beaten, for egg wash
Zest of 1 orange, peeled with a vegetable peeler, no pith, finely chopped
1 teaspoon almond extract
1 cup chopped dry roasted unsalted almonds
Sanding sugar, optional

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
  • Mix the flour, sugar, baking soda and salt with an electric mixer in a medium bowl. Add the eggs, 1 at a time, scraping down the bowl after each addition. Add the extract, orange zest and almonds, mixing to make a somewhat sticky dough.
  • Turn the dough out onto a floured board and knead just until it comes together. Halve the dough and shape into 2 logs, approximately 12 by 2 inches. Transfer the logs the prepared pan, spacing them about 3 inches apart. Brush the dough all over with the beaten egg and sprinkle with sanding sugar, if desired. Bake until they are firm and golden in color, about 45 minutes. Transfer the logs with a metal spatula to a cutting board and cool for a few minutes.
  • Cut the logs with a serrated knife on an angle into 1/2-inch slices. Lay them cut side down on the pan. Return to the oven and bake until golden brown on 1 side, about 10 minutes. Remove from oven, flip biscotti and continue to bake until golden, about 10 minutes more. Transfer to a rack to cool.
  • Store biscotti for up to 2 weeks in an airtight container.
  • Cook's Note: These biscotti are traditional and very crunchy. They are made for dunking.
  • Tip: Serve with Kahlua Eggnog.

These biscotti are very low in fat but they are delicious. You can substitute the almonds with 3/4 cup cranberries.

1 ¼ cups white sugar
1 pinch salt
2 teaspoons baking powder
½ cup sliced almonds
1 tablespoon orange zest
3 egg, beaten
1 tablespoon vegetable oil
¼ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a baking sheet.
  • In a large bowl, stir together flour, sugar, baking powder, salt, almonds, and orange zest. Make a well in the center and add the eggs oil, and almond extract. Stir or mix by hand until the mixture forms a ball.
  • Separate dough into 2 pieces and roll each one into a log about 8 inches long. Place logs on prepared baking sheet and flatten so they are about 3/4 inch thick. Bake in preheated oven for 20 to 25 minutes. Cool slightly, and remove from baking sheets. Slice diagonally into 1/2 inch slices with a serrated knife. Set cookies on side back onto the cookie sheet and bake for 10 to 15 more minutes, turning over after half of the time. Finished cookies should be hard and crunchy.

Mandelbrot (or mandel bread) is an Eastern European Jewish cookie, a variation on biscotti. The dough is baked twice: first in a log, and then again after it's been sliced into cookies. This recipe includes the smart trick of freezing the dough after baking it the first time, then cutting it into slices when still frozen before baking again. This makes for a thinner slice, fewer crumbs when cutting and a crispier texture. You can make it with matzo cake meal during Passover - a delicious variation.

2 cups plus 1 tablespoon/264 grams all-purpose flour or 1 1/2 cups/204 grams matzo cake meal
1/2 cup/85 grams potato starch
1/2 cup/55 grams almond flour
1 1/2 teaspoons cinnamon
1/2 teaspoon sea salt
1 1/4 cups/250 grams granulated sugar
12 tablespoons/169 grams/1 1/2 sticks unsalted butter or coconut oil, at room temperature
3 large eggs
1 cup/126 grams slivered almonds
1/2 teaspoon vanilla
Zest of 2 oranges

Steps:

  • In a large bowl, mix flour or matzo cake meal, potato starch, almond flour, 1/2 teaspoon cinnamon and the salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream 1 cup/200 grams sugar and the butter or coconut oil. Add eggs, one at a time, mixing well after each addition. Stir in flour or matzo mixture, almonds, vanilla and orange zest.
  • Place half the dough on a piece of parchment paper about 20 inches long. Use parchment paper to help mold the dough into a log about 10 inches long and 2 inches in diameter. (The dough is very soft and may be hard to worth with.) Gently press down along the top of the log to flatten it slightly. Twist ends of the parchment paper to seal. Repeat with the remaining dough. Refrigerate both logs for at least 1 hour.
  • Heat oven to 350 degrees and line a baking sheet with parchment paper. Unwrap dough logs and put on the prepared baking sheet, side by side. Bake logs for 35 to 45 minutes, until just beginning to brown. The dough should not be too cracked on the top. It is better to underbake than overbake.
  • Let logs cool, wrap in plastic and freeze until you are ready to finish them, or for at least 1 hour.
  • Heat oven to 350 degrees and line 2 baking sheets with parchment paper. Mix remaining 1 teaspoon cinnamon and 1/4 cup/50 grams sugar in a small bowl and set aside.
  • Remove logs from freezer. With a sharp, serrated knife, cut the logs into roughly 1/2-inch-thick slices, discarding the end slices if they fall apart. (If the logs have been in the freezer for several hours, let them sit at room temperature for a few minutes before slicing.)
  • Dip both sides of each slice in the cinnamon-sugar mixture and place them flat on prepared baking sheets. Bake for 10 to 15 minutes, carefully turn slices over, then bake another 10 minutes, or until golden brown and starting to crisp.

  • Prepare the Candied Blood Orange Slices (1-2 Days in Advance): Trim the ends of the blood oranges, then slice them into 1/4″ thick slices. Carefully remove and discard any seeds. Combine the sugar, water, and light corn syrup in a very wide, deep skillet and bring to a boil, whisking continuously until the sugar has completely dissolved.
  • Add the orange slices to the pan in one single layer, and bring to a simmer. Simmer the slices in the poaching liquid for roughly 1 hour to 1 hour and 15 minutes, uncovered, or until the slices have become nearly transparent (the poaching liquid will turn a deep pink color). Meanwhile, set aside a large baking sheet lined with a cooling rack.
  • Once the slices are transparent, transfer them carefully with tongs (or a slotted spatula) from the poaching liquid, allowing any excess syrup to drip back into the pan, and place the slices onto the cooling rack, laying them out flat to dry. Make sure the slices are not touching one another. Allow the candied orange slices to dry, uncovered, at room temperature for a minimum of 24 hours to 48 hours, or until they are mostly dry, and minimally tacky. [I will usually flip them after the first 12-16 hours.]The air-drying time will vary depending on the humidity level in your kitchen or house.
  • Prepare the Chocolate Bark: Line a sheet pan with parchment paper (or silicone mat) and set aside. Place the chopped chocolate in a microwave-safe bowl and melt at the lowest power setting in 20 to 30 second intervals, stirring with a rubber spatula after each interval. Alternatively, you can use a double broiler and do this over your stove-top (ideally over a pot filled with water at 90-95 degrees Fahrenheit).
