SPANISH-STYLE GRILLED FISH



Spanish-Style Grilled Fish image

4 large red onions, thinly sliced
3/4 cup extra-virgin olive oil
1/2 cup red wine vinegar
1 head garlic, cloves separated and peeled
1 lemon, thinly sliced
1 bunch scallions, chopped
2 1/2 tablespoons sweet Spanish paprika
2 teaspoons cayenne pepper
2 to 3 sprigs rosemary
2 to 3 sprigs thyme
Kosher salt
1 3-to-6-pound whole fish (such as striper, rockfish or sea bass), cleaned and scaled
Vegetable oil, for brushing

Steps:

  • Preheat a grill to medium high. Combine 1 sliced onion, 1/2 cup olive oil, the vinegar, garlic, lemon slices, scallions, 1 1/2 tablespoons paprika, the cayenne, rosemary, thyme and 2 teaspoons salt in a large bowl. Set aside at room temperature, 1 hour.
  • Spread the remaining 3 sliced onions in a large disposable roasting pan. Drizzle with 2 tablespoons olive oil and sprinkle with 1/2 tablespoon paprika and 1 teaspoon salt.
  • Combine the remaining 2 tablespoons olive oil and 1/2 tablespoon paprika in a small bowl. Rinse the fish and pat dry. Rub all over with the olive oil-paprika mixture. Stuff the cavity super full with the marinated onion-herb mixture, adding anything that doesn't fit to the disposable pan.
  • Brush the grill grates generously with vegetable oil. Sprinkle the fish on one side with 1/2 teaspoon salt; place salt-side down on the grill and cook until charred on the bottom, 4 to 5 minutes. Sprinkle with 1/2 teaspoon salt; gently flip and cook until the other side is charred, 4 to 5 more minutes. Transfer the fish to a baking sheet and let rest, uncovered, 10 minutes. Meanwhile, transfer the disposable pan with the onions to the grill. Cover and cook, stirring occasionally, until the onions begin to soften, 8 to 10 minutes.
  • Remove the pan with the onions and reduce the grill heat to medium (if using a charcoal grill, break up the coals to reduce the heat). Add the fish to the pan, belly-side down, making sure you don't spill the stuffing (use your hands to hold him together). Once he is settled, push more onions around him to prop him up. Add 3/4 cup water to the pan; place on the grill, cover and cook until the flesh is opaque, firm and slightly flaky, 20 to 25 minutes.
  • To serve, use a large spoon to pull the flesh from the bones-it will fall off easily. Serve with the grilled onion mixture.
  • Duff says to make sure you save the fish cheeks for your favorite friend at the table-they're sweet and tender.

WHOLE GRILLED PARROT FISH

2 ti leaves or banana leaves
1 whole uhu (parrot fish), scored (about 5 pounds)
Salt
1 cup mayonnaise
1/4 cup prepared pesto
4 lap xiong or Chinese sausage, diced
2 cloves garlic, crushed and minced
2 large Hamakua mushrooms, diced
1 bunch green onions, sliced into 2-inch pieces, 1/4 cup reserved for garnish
1/2 yellow onion, diced

Steps:

  • Preheat the grill.
  • Place a large piece of aluminum foil on a flat surface. Place 1 ti leaf on top, followed by the fish. Sprinkle both sides of the fish with salt.
  • Mix together the mayonnaise and pesto in a small bowl until smooth. Smother the mayonnaise mixture all over the fish, getting into all the scores. Combine the sausage, garlic, mushrooms, green onions and yellow onions and stuff the mixture into the fish scores, flipping and stuffing into the other side as well. Top the fish with the second ti leaf, and then another piece of aluminum foil, tightly wrapping it all up to form a pouch.
  • Grill the fish for 30 to 40 minutes. Carefully unwrap the foil and serve family-style, garnishing with the reserved green onions.

8 fish collars
Salt and pepper
Chimichurri Sauce, recipe follows
Tortillas, for serving
4 limes, cut into wedges
1 1/4 cups olive oil
1 cup minced fresh cilantro
1/2 cup minced fresh parsley
1/2 cup minced fresh thyme
1/2 cup red wine vinegar
1/4 cup minced fresh oregano
2 tablespoons minced garlic
2 tablespoons minced shallot
1 tablespoon dried red pepper
Salt and pepper

Steps:

  • Prepare a grill for cooking and preheat the oven to 350 degrees F.
  • Sprinkle the fish collars with salt and pepper, then grill for 4 to 6 minutes on each side. Remove to a baking sheet, then cover with the Chimichurri Sauce (don't be stingy, the more sauce, the more flavor).
  • Bake until the meat reaches an internal temperature of 140 degrees F, 10 to 15 minutes. Let rest for 4 to 6 minutes. Serve with tortillas and lime wedges.
  • Whisk together the olive oil, cilantro, parsley, thyme, vinegar, oregano, garlic, shallot, dried red pepper and salt and pepper in a bowl.

CHAR GRILLED LEMONGRASS TILAPIA FISH

2 stalks lemongrass, white parts finely diced, long green leaves reserved
2 tablespoons light soy sauce
2 cloves garlic, finely chopped
2 spring onions, sliced
1 long red chile, sliced
One 1 1/2-inch piece ginger, finely chopped
1 whole tilapia, cleaned
1 tablespoon vegetable oil

Steps:

  • Preheat the grill to medium-high heat. Soak the green lemongrass leaves in cold water and set aside.
  • Mix together the diced lemongrass, soy sauce, garlic, spring onion, red chile and ginger in a bowl.
  • Lay the fish on a chopping board. Create a fillet by using a sharp filleting knife to slice from the spine of the fish down to the belly without cutting the fillet off. Just leave it lying open.
  • Now add the lemongrass mixture to the inside of the fish and close the fillet back up.
  • Secure the fish by tying it up with the lemongrass leaves. Brush the fish with the vegetable oil, and then char grill the fish, 10 minute per side. Cut the lemongrass leaves and serve.
