3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh oregano
1/4 teaspoon red pepper flakes
Kosher salt
1/2 baguette, halved lengthwise
1 large clove garlic, halved
1 medium tomato, halved and sliced 1/4 inch thick
1/4 pound sliced provolone cheese

Steps:

  • Preheat a grill to medium high. Combine the olive oil, oregano, red pepper flakes and a pinch of salt in a small bowl. Brush the cut sides of the baguette with some of the flavored oil. Grill cut-side down until toasted, about 4 minutes.
  • Rub the grilled sides of the baguette with the garlic. Top with the tomato slices, season with salt and cover with the provolone. Grill, covered, until the cheese melts, 3 to 5 minutes. Drizzle with the remaining flavored oil and season with salt. Cut into pieces.

12 thin slices prosciutto
3/4 cup crumbled goat cheese

Steps:

  • In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Simmer, uncovered, until liquid is almost evaporated, about 20 minutes., Preheat panini maker or indoor electric grill. Layer 6 slices of bread with Asiago cheese, prosciutto, goat cheese, caramelized onions and figs; top with remaining bread. Spread outsides of sandwiches with remaining butter., Cook sandwiches, covered, until bread is browned and cheese is melted, 4-5 minutes. If desired, drizzle with balsamic glaze.

  • 1. Put toast on a broiler rack. Add cheese. cut bacon in half,or 3rds and arrange on top of cheese, side by side. Broil till bacon is almost done, and the cheese starts to melt.
  • 2. This is for one person... Depending on the size of your broiler...you could make up to six at a time. Watch closely so's not to burn.
  • 3. Those are not real ants, on my tablecloth! I had made these cloths for a picnic I had at home..Cute? eh? The kids loved them.

1 pinch table salt
fresh ground black pepper, to taste
crispbread crackers or european rye bread, to serve

Steps:

  • In a medium bowl, combine the cream cheese, scallion, parsley, chives, dill, garlic, lemon juice, salt, and pepper. Reserve a small amount of fresh dill for garnish. Mix until everything is evenly distributed. Cover and chill the mixture for at least 1 hour before serving.
  • Spread 1 to 2 tablespoons of the cream cheese mixture on a crispbread cracker or rye bread (best if lightly toasted). Repeat until all of the cream cheese mixture has been used.
  • Top with cucumber slices, and sprinkle with reserved fresh dill. Eat immediately!
  • Variation: Instead of baby cucumbers, top the herbed cream cheese mixture with smoked salmon and red onions.

4 slices rustic whole grain bread (1/4-to 1/2-inch-thick slices)
4 -6 ounces gruyere cheese (may substitute Fontina or mild Cheddar)

Steps:

  • Combine the figs and 1 cup water in a small saucepan; bring to a boil.
  • Cook, covered, over low heat for about 20-25 minutes or until almost all of the water has been absorbed; cool slightly.
  • Transfer the figs to the container of a food processor; process until chunky smooth.
  • Transfer the "jam" to a plastic container with a tight-fitting lid, and refrigerate until ready to use.
  • Preheat the broiler.

Butter, for bread

  • Combine the oregano, granulated garlic, kosher salt, parsley, basil, and vegetable oil together in a bowl. Add the rib eye to the marinade and toss to coat. Cover and refrigerate for 12 to 18 hours.

2 slices of your favorite crusty bread (I used sourdough)
1/4 cup homemade fig jam (or your favorite store bought variety)
1 1/2 oz goat cheese, softened enough to spread
2 oz Gruyere cheese, sliced
Pinch of salt
Pinch of freshly ground black pepper

Steps:

  • Heat skillet on medium-low.
  • Butter one side each of both slices of bread, then spread the opposite side of one slice with fig jam, and the other slice with goat cheese.
  • Place jam-covered slice of bread butter-side down on the heated skillet. Top with slices of Gruyere, and sprinkle with salt and pepper.
  • Place the other slice of bread on top, goat cheese side down.
  • Cook until the browned on the bottom, approximately 4 minutes. Carefully flip the sandwich and continue to cook until the opposite side is browned and the cheese is melted, about 4 more minutes.
  • Slice in half and serve immediately.
