BABY FOOD PRUNE CAKE
Mom used to make this when I was young. So glad I found the recipe!! You can top this cake with a dusting of powdered sugar.

Steps:
- Preheat oven to 300 degrees Fahrenheit.
- Combine flour, sugar, vegetable oil, eggs, prune baby food, and cinnamon.
- Pour batter into a greased and floured 9x13 pan or bundt pan.
- Bake for 1 hour 15 minutes.

Steps:
- Put the prunes and brandy in a small bowl and leave to steep for about 30 minutes until most of the brandy has been absorbed.
- Preheat the oven to 190C/Gas 5/fan oven 170C. Grease a 23cm/9in loose-bottomed cake tin or springform tin. Put the cocoa, chocolate, butter and 140g/5oz of the sugar in a pan, add 100ml/31⁄2fl oz hot water and gently heat until the mixture is smooth. Leave to cool slightly.
- Whisk the egg whites to soft peaks, then gradually whisk in the remaining sugar. Sift the flour and cinnamon over and gently fold in with a metal spoon, until almost combined. Add the chocolate mix and fold in until evenly combined.
- Pour the mixture into the tin and arrange the prunes over the top (they will sink into the sponge during baking). Sprinkle over any remaining brandy and bake for about 30 minutes until just firm. Serve with cream or crème fraîche.

- Soak prunes overnight in brandy. Melt chocolate and butter or margarine with water.
- In a large bowl, beat egg yolks and sugar until pale. Stir in chocolate mixture. Gently mix in flour and ground nuts. Stir in prunes.
- In another bowl, beat egg whites to stiff peaks. Carefully fold into cake mixture. Pour into a greased 9 inch round cake tin.
- Bake at 375 degrees F (175 degrees C) for 30 - 40 minutes. Remove from oven, and cool on a wire rack. Frost with Chocolate Ganache Frosting.

- Preheat oven to 350°F.
- Prepare bundt pan.
- Sprinkle soda on prunes.
- Pour boiling water over and allow to cool.
- Cream butter and sugar in food processor.
- Add eggs.
- Add prune mixture and process for 15 seconds.
- Gradually add flour sifted with cocoa.
- Mix until blended with on/off motion.
- Pour into pan.
- Bake 45-55 minutes.
- When cool, turn out.
- Sprinkle with powdered sugar.

BABY'S FAVORITE PRUNE CAKE
I made this when my cousin wouldn't part with her recipe for prune cake, and none of the recipes I could find seemed to match the goodness of her baking. This is almost an exact replica, and for all I know could be exactly what she uses. You will find that this cake is a very old-fashioned quick bread that uses baby food to keep it moist and provide that extra burst of flavor. I am sure it will quickly become one of your favorites!

- Preheat oven to 325 degrees.
- Grease 13x9x2" cake pan, and set aside.
- Cream together margarine and sugar until well blended; add lightly beaten eggs and mix well.
- Add prune baby food and molasses to sugar/egg mix and blend well.
- In a large bowl, sift together dry ingredients except nuts and prunes.
- Add to dry ingredients and stir until moistened.
- Add nuts and prunes and fold into batter.
- Pour batter into prepared pan and bake in 325 degree oven for approximately 45 minutes or until toothpick inserted in cake comes out pretty clean.
- Serve plain, as a snacking cake, or for a sweeter touch, sift confectioners sugar over cake; or make a glaze of confectioners sugar and milk to a drizzling consistency and drizzle over cake.
- Tastes good plain though.

- Line a 20 cm square cake tin. Melt 225 g of the chocolate and all the butter together in a heavy-based pan over a low heat. Spread the nuts on a grilling tray and toast until the skins begin to blister. Rub the nuts with a cloth, discarding the skins, then return the nuts to the grill til golden brown. When the chocolate is melted, remove from the heat and stir in the nuts, prunes and eggs. Spoon the mixture into the lined cake tin and leave to set in the fridge overnight.
- When completely set, remove from the tin and peel off the paper. Melt the remaining chocolate in a bowl over a pan of genly simmering water then pour the chocolate over the cake and return the cake to the fridge to set. With a large heavy knife, cut the cake in half. Then cut each half into 6 slices making 12 slices in total.
