One 16-ounce box cavatappi pasta (I like De Cecco)
4 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups heavy cream, warmed
1 cup evaporated milk
1/4 teaspoon cayenne pepper
Fine sea salt and freshly cracked black pepper
3 large egg yolks
1 pound extra-sharp Vermont Cheddar, shredded
8 ounces processed American cheese, such as Velveeta, diced into 1/2-inch cubes
One 8-ounce bag ridged potato chips, lightly crushed

Steps:

  • Cook the pasta per the manufacturer's al dente specifications, then rinse with cold water in a colander. Set aside. Preheat the oven to 375 degrees F.
  • In a 4-quart Dutch oven, melt the butter over low heat, then add the flour, stirring until thickened. Add the cream, evaporated milk, cayenne pepper and some salt and pepper, then whisk until thickened to the point that the sauce coats the back of a wooden spoon, about 5 minutes. Turn off the heat.
  • In a small bowl, whisk together the yolks and a tablespoon or two of the white sauce to temper the yolks, stirring constantly. Add the tempered yolks back to the white sauce, whisking, then add the Cheddar, followed by the American cheese, stirring until the cheese has melted completely. (If the cheese is not melting completely, return the saucepan to the stovetop over low heat and stir just until the cheese melts.) Gently stir in the pasta until coated. (The mac and cheese can be served at this point if desired, for a stovetop version.)
  • Turn the mixture out into a 9-by-13-inch baking dish. Crumble the chips on top of the mac and cheese and bake until golden brown and bubbling, 20 to 30 minutes. (If traveling with the mac and cheese, put a lid on it and bake on-site, preferably over a campfire!)

1small1 small onion, grated

1large1 large egg
1/2teaspoon1/2 teaspoon salt
1/2teaspoon1/2 teaspoon ground black pepper
1/4cup1/4 cup mayonnaise
3/4cup3/4 cup shredded mozzarella cheese
1/4cup1/4 cup grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with foil, then lightly coat the foil with nonstick spray. In the bowl of a food processor, pulse the bread until they resemble crumbs. Heat a small skillet over medium heat. Add the bread crumbs and toast until golden brown, about 4-5 minutes. In a small bowl, combine the toasted breadcrumbs and milk. Let stand until all of the milk is absorbed. In a large bowl, add the breadcrumb mixture, ground beef, grated onion, sour cream, egg, salt, & pepper. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/4 inch meatballs and place onto prepared baking sheet. Drizzle a small amount of mayonnaise on each meatball. In a small bowl, combine the mozzarella & Parmesan. Sprinkle each meatball with 1 Tbsp cheese mixture. Place into oven and bake until the cheese has melted and is slightly golden brown, about 15-20 minutes. Broil for an additional 2-5 minutes, or until the cheese has crisped up. Serve immediately.

4 chicken bouillon cubes

  • Mix all ingredients together in a crockpot untill cheese is hot and melted. Simmer in crockpot for 1 1/2 hours.

I found this recipe on Facebook recently and had to try it. I believe the original recipe called for ground chicken but was adapted to use ground beef. This recipe is great served with a side salad. I did not miss the tomato pasta sauce that meatballs are generally in. Be sure to spray your foil well because the cheese and meatballs will stick. The recipe also calls for broiling the meatballs to crisp and brown the cheese but I didn't have to do that as it happened while baking.

1 slice bread
1/4 cup milk
1 lb ground beef
1 small onion, grated
1 tablespoon sour cream
1 large egg
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup mayonnaise
3/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a baking sheet with foil; then lightly coat the foil with nonstick spray.
  • In the bowl of a food processor, pulse the bread until they resemble crumbs.Heat a small skillet over medium heat. Add the bread crumbs and toast until golden brown, about 4-5 minutes.
  • In a small bowl, combine the toasted bread crumbs and milk; let stand until all of the milk is absorbed.
  • In a large bowl, add the breadcrumb mixture, ground beef, grated onion, sour cream, egg, salt and pepper.
  • Using a wooden spoon or clean hands, stir until well combined.
  • Roll the mixture into 1 1/4-to-1 1/2-inch meatballs and place on onto prepared baking sheet.
  • Drizzle a small amount of mayonnaise on each meatball. (A squeeze bottle or Ziploc bag is perfect for this.).
  • In a small bowl, combine the mozzarella and Parmesan. Sprinkle each meatball with 1 tablespoon cheese mixture.
  • Place into oven and bake until the cheese has melted and is slightly golden brown, about 15-20 minutes. Broil for an additional 2-5 minutes, or until the cheese has crisped up.

  • Crack the egg into a large mixing bowl and beat well with a fork. Add the meat, breaking it apart as you add it to the bowl Add in the rest of the ingredients EXCEPT the tomato sauce and the mozzarella cheese. Mix to combine everything well, using your fingertips. Don't compact the meat, and don't over mix it, you want these meatballs to be fluffy and light.
  • Scoop out the meat into approximately 22 balls and roll the balls round with your hands. I used my 1 1/2 inch cookie scoop.
