CELERY-ONION POPOVERS
I found this handwritten recipe in a cookbook I received from my mom. With onion and celery, these pleasing popovers taste a little like stuffing. —Barbara Carlucci, Orange Park, Florida

Steps:
- In a large bowl, combine the flour, onion salt and celery salt. Combine the eggs, milk, onion, celery and butter; whisk into the dry ingredients just until blended. Grease and flour the bottom and sides of 9 popover cups; fill two-thirds full with batter., Bake at 450° for 15 minutes. Reduce heat to 350° (do not open oven door). Bake 25 minutes longer or until deep golden brown (do not underbake). Immediately cut a slit in the top of each popover to allow steam to escape.

CHEESE AND HERB POPOVERS

- For the blistered tomato dip: Spray a popover pan with nonstick spray and place in the oven. Preheat the oven to 400 degrees F.
- Add the tomatoes, olive oil, sugar, salt, vinegar, pepper, thyme and rosemary to a large skillet. Toss the tomatoes to evenly coat. Cook over medium heat until the skins blister and the juices release, about 10 minutes. Let cool slightly, then remove and discard the herb sprigs and pulse in a blender 3 to 4 times to make a chunky dip (see Cook's Note). Set aside.
- For the popovers: Clean the blender and put in the eggs and milk. Blend until frothy, about 1 minute. Add the Parmesan, chicken stock and butter. Blend until incorporated and homogenous, 1 minute more. Add the flour, parsley, thyme, scallions, salt and pepper to the batter. Blend once again, just until incorporated.
- Divide the batter evenly among the 6 popover cups, filling each halfway. Bake the popovers, rotating the pan after 20 minutes, until golden brown and puffed above the edge of the pan, about 35 minutes.
- Serve warm with the blistered tomato dip.

- Preheat the oven to 450 degrees F. Grease a nonstick, standard 12 muffin tin and place in the oven to heat while you prepare the batter.
- In a large bowl, sift together the flour and salt. In a smaller bowl, whisk together the eggs, milk, and melted butter until blended. Pour the wet ingredients into the dry and use a whisk to mix them together. Fill each hole in the muffin tin between 2/3 and 3/4 full. Bake for 10 to 12 minutes and then reduce the oven temperature to 350 degrees F. Bake until they develop a nice brown color, an additional 15 minutes; they should feel crusty. Opening the oven door while popovers bake increases the chances they will deflate so look through the window but don't give in to temptation!
- Remove the tin from the oven and turn the popovers out onto a flat surface to cool. Pierce the sides with the tip of a small knife to allow steam to escape as they cool. Serve immediately.

- Generously grease eight 6-ounce ramekins or 6-ounce custard cups (or use jumbo muffin tins).
- Heat butter in a large skillet over medium-high heat.
- Add in sliced onions, pinch sugar, 1/2 teaspoon salt and black pepper; cook until tender but not browned.
- Divide the onions evenly between the muffin tins or ramekins.
- In a bowl combine flour, 1/2 teaspoon seasoned salt (can use white salt).
- In another bowl whisk together eggs, cayenne pepper, water and milk until well blended; add to the flour mixture and mix until just blended.
- Pour about 1/4 cup batter into each tin over the onions.
- If you are using ramekins place on a baking sheet.
- Set oven to 400 degrees F and allow to preheat for about 8 minutes (oven must be very hot!).
- Bake for about 30-35 minutes or until golden brown.
- Serve immediately.

- Preheat oven to 425 degres.
- Grease a standard 12-cup muffin pan.
- In large Dutch oven, cook the bacon over medium heat until crisp, about 12 minutes.
- Using a slotted spoon, transfer to paper towels to drain.
- Add the onions to the pot, season with salt and cook for 8 minutes.
- Set aside 1/4 cup of the cooked onions.
- Sprinkle the remaining onions with 1/4 cup flour and cook, stirring, for 1 minute.

SAUSAGE POPOVERS
This is one of those basic dishes that you can spiff up in anyway you please. You can add cheese, veggies or anything that you like to make it more savory for a main course dinner. I can think of about a 10 herbs that would taste great in this depending on what meats and vegetables you use.

- Grease bottom of an 8 inch baking pan.
- Heat oven to 400 degrees.
- Beat together the eggs, milk, oil, four and salt until smooth.
- Pour batter into the greased pan and top with meat (and anyother leftovers you would like to use) Bake 35 minutes.
- We serve this with maple syrup or molasses when we use the breakfast sausage, but I imagine that mustard, ketchup or other condiments would be more appropriate for different types of"toppings".

- Preheat oven to 400°F Using cooking spray coat muffin pan bottom & sides.
- In a medium mixing bowl beat eggs, milk & oil with whisk until combined.
- Add flour, basil, oregano & garlic powder. Beat until well combined. Stir in pepperoni.
- Fill prepared muffin pan HALF full of batter. Bake at 400 F for about 20 minutes or until popovers appear dry.
