As an avid bread baker, I was thrilled to find this recipe. It makes delectably different rolls that are a hit wherever I take them. The onion and mustard flavors go so well with ham or hamburgers, but the buns are special enough to serve alongside an elaborate main dish. —Melodie Shumaker, Elizabethtown, Pennsylvania

Number Of Ingredients 10

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
2 cups warm 2% milk (110° to 115°)
3 tablespoons dried minced onion
3 tablespoons prepared mustard
2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons salt
6 to 6-1/2 cups all-purpose flour
Optional: Beaten egg, poppy seeds and additional dried minced onion

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, onion, mustard, oil, sugar, salt and 4 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide into 24 pieces. Flatten each piece into a 3-in. circle. Place 1 in. apart on greased baking sheets. Cover and let rise until doubled, about 45 minutes. If desired, brush with beaten egg and sprinkle with poppy seeds or dried minced onion. , Bake at 350° until golden brown, 20-25 minutes. Cool on wire racks.

4 tablespoons unsalted butter
2 large yellow onions, thinly sliced into half moons
⅓ cup rye whiskey
1 teaspoon kosher salt
2 large navel oranges
¼ cup dijon mustard
¼ cup yellow mustard
1 teaspoon orange bitters
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
2 lb ground beef
1 tablespoon olive oil
8 slices american cheese
4 burger buns
1 large egg, beaten
1 tablespoon sesame seed
1 cup iceberg lettuce, shredded
8 slices beefsteak tomatoes

Steps:

  • Make the whiskey-caramelized onions: In a large, high-walled skillet, melt the butter over medium-low heat. Add the onions and cook, stirring occasionally, until they caramelize and turn golden brown, about 45 minutes. Add the whiskey and salt and stir to combine. Remove the pan from the heat and let sit until ready to use.
  • Make the roasted orange mustard: Turn the broiler on high.
  • Use a sharp knife to remove the peel from the orange, then slice the orange crosswise into ½-inch rounds. Arrange the rounds in a single layer on a baking sheet.
  • Broil the orange slices until they begin to brown and crisp on the top, about 10 minutes.
  • Remove the oranges from the oven and transfer to a large bowl to cool slightly. Use a potato masher to mash the juice from the oranges, and then strain through a fine-mesh sieve, pressing on the flesh to extract as much juice as possible. You should have about ¼ cup of roasted orange juice.
  • In a medium bowl, whisk together the orange juice, Dijon mustard, yellow mustard, and bitters until smooth. Refrigerate until ready to use.
  • Make the smash burgers: Reduce the oven temperature to 375°F (190°C).
  • Divide the ground beef into 8 4-ounce portions, being careful not to work the meat too much.
  • In a small bowl, mix together the salt, pepper, and coriander.
  • Heat a large cast-iron skillet over medium-high heat until nearly smoking. Pour the olive oil into the hot pan. Place 2 portions of ground beef, or as many as will fit without overcrowding, in the pan and use a flat metal spatula to flatten into patties. Use the back of a wooden spoon to press the spatula more firmly to flatten each patty even more. Season each patty generously with the salt mixture. Once the patties turn golden brown on the bottoms and the edges are crispy, about 2 minutes, flip and continue cooking until the other side is golden brown, about 2 more minutes. Top each patty with 1 slice of American cheese and let melt, about 30 seconds. Remove from the pan and repeat with the remaining ground beef.
  • Assemble the burgers: Place the intact burger buns on a baking sheet. Brush the top of each bun with beaten egg, then sprinkle with the sesame seeds. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
  • Open the buns and place ¼ cup of shredded lettuce on each bottom bun, followed by 2 tomato slices, a patty, ¼ cup caramelized onions, and a second patty. Spread 2 tablespoons of the orange mustard over the undersides of the top buns, then place on top of the burgers. Serve with old fashioneds.

This recipe is from Fleischmann's yeast. I absolutely LOVE the texture of these buns.They're not soft dinner rolls but sturdy sandwich buns. Sometimes I leave out the onion and mustard and make plain buns, but my favoite way to make them is to replace the mustard and onion with chopped jalapenos and cheddar cheese. They're excellent hamburger buns, wonderful for any deli type sandwich and sturdy enough for sloppy joes. Prep time includes rising time.

3 1/2 cups all-purpose flour
2 cups white whole wheat flour
4 1/2 teaspoons instant yeast
1 tablespoon dried onion
2 teaspoons salt
3/4 cup milk
1/2 cup water
1/3 cup butter or 1/3 cup margarine
1/4 cup honey
2 tablespoons dijon-style mustard
2 large eggs

Steps:

  • Note: 2 packages of yeast can be used instead of the 4 1/2 teaspoons. Also, if it is humid or raining, I somtimes have to add as much as 1 cup additional flour to get the right dough texture.
  • In a large bowl, combine 1 cup all-purpose flour, white whole wheat flour, yeast, minced onion, and salt.
  • Heat milk, water, butter, honey, and mustard until very warm (120-130 degrees).
  • Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed.
  • Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape each into smooth ball. Place on greased baking sheet. Flatten balls with hand to about 2-1/2-inch rounds. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.
  • Bake in preheated 400 degree oven for 13-15 minutes. Remove from sheet; cool on wire rack. Brush tops with melted butter while still warm.

These buns are great for sandwiches. They are just the right size...not as large as burger buns, but just right for lunches. They have a terrific texture and you can vary the garlic/onion to taste, or leave it out completely. Cheese would also be good. But best of all...no kneading and it couldn't be simplier.

2 1/2 teaspoons instant yeast
1/2 cup water
1/2 cup sour cream (regular)
2 3/4 cups bread machine flour
1 large egg
2 tablespoons finely chopped garlic
1 tablespoon minced onion
1 dash onion powder, to taste
1 dash garlic powder
slightly beaten egg
sesame seeds or poppy seed

Steps:

  • Preheat oven to 350°F degrees.
  • Add first 7 ingredients in order to bread machine.
  • Use dough cycle.
  • When dough is almost mixed, add next 4 ingredients.
  • Run through dough cycle.
  • Lightly flour board and turn out dough onto board.
  • Cut into 12 pieces, shaping into buns.
  • Place on a greased cookie sheet.
  • Cover and let rise until doubled, about 20-25 minutes.
  • Brush with beaten egg and sprinkle with sesame or poppy seeds.
  • Bake at 350°F for 15-20 minutes until golden brown.
  • Cool on cooling rack.
