- Heat oil in a large skillet over medium heat. Coat the pork chops with flour, and place in the skillet. Brown about 4 minutes on each side.
- In a small bowl, mix the Parmesan cheese, salt, and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Layer chops with the potatoes. Sprinkle with remaining Parmesan cheese mixture. Top with onion slices.
- In a small bowl, dissolve the beef bouillon cubes in hot water. Stir in the lemon juice. Pour over the layered pork chops.
- Cover skillet, and reduce heat. Simmer 40 minutes, until vegetables are tender and pork chops have reached an internal temperature of 145 degrees F (63 degrees C).

ONION-HERBED PORK CHOPS WITH PARMESAN
This is one of my favorite recipes for pork. I was inpired for the method by an article in a cooking magazine and then made it my own. The flavors are great and it really a fairly easy dish to make. Switch around the herbs and flavors, I always try something new and switch between fresh and dried herbs. I know 2 whole onions sounds like a lot for 4 servings, but they cook down and are the carrier of all of the flavor, after trying it you will probably increase it to 3! Use any kind of breadcrumbs you like, I love to make my own from whole-wheat bread and it tastes great. I truly believe it is a meal your family or friends will love to eat!

- Dice the onions.
- In a saute pan melt a small dab butter and saute the onion until starting to turn clear. This should take about 10 minutes.
- Stir in the broth and herbs and bring to a boil and simmer for 5-10 minutes.
- Meanwhile season the chops with salt {and pepper if desired}. In another saute` pan, brown the chops in a little bit of butter, do not cook through.
- Prepare a baking dish by spraying with nonstick spray.
- Put a small bit of the onion mixture down for each of the 4 chops, then place the chops on top. Place the remaining onion mixture on top of each of the chops.
- Combine the breadcrumbs and Parmesan cheese and sprinkle over top. Melt 1 T. of butter and drizzle over the top. Bake at 400 degrees, uncovered, for 20 minutes or until juices run clear.

- Heat oil in skillet. Cook chops 10 minute or until browned.

Steps:
- Season chops with flour, salt and pepper.
- Heat 2 tablespoons olive oil in cast iron skillet over medium-high heat; sauté chops until golden brown.
- Remove.
- Add onions and lightly brown.
- Remove.
- Add 1 tablespoons unsalted butter; when melted, add mushrooms. Remove and de-glaze skillet with 1/3 cup beef broth or wine, if preferred.
- Pour remaining beef broth into crock pot.
- Add sauce from skillet, Worcestershire and spices; add chops, onions and mushrooms.
- Cover and cook on LOW heat setting for 7-8 hours, until very tender.
- EXTRACT BAY LEAF.
- Turn temperature to HIGH; add 1 tablespoons butter.
- Mix cornstarch with Half and Half.
- Whisk to blend well. Add to crock pot and whisk.
- Cook for an additional 15-20 minutes(depending on sauce thickness preferred).
- Serve over cooked rice.

- In a small skillet, melt 1 teaspoon butter over medium heat. Stir in the onion, broth, tarragon and thyme. Bring to a boil. Reduce heat; simmer uncovered, for 8-10 minutes or until onion is tender.

- Heat oil in large skillet.
- Over medium-high heat, add chops and cook until golden brown on both sides (2 to 4 minutes) Reduce heat to low and cook, turning often until chops are cooked through (10 to 12 minutes) Remove from pan and keep warm.

- Sprinkle chops with salt and pepper.
- Melt 2 1/2 tablespoons of butter in a large heavy frying pan over medium-high heat and brown chops on both sides, turning frequently so they do not stick.
- Remove from pan, sprinkle with tarragon, cover and keep warm.
- Add another tablespoon of butter to the pan drippings and saute onions for 3 minutes or until soft and golden.
- Spread 2/3 of the onions in the bottom of a shallow casserole, arrange chops, tarragon-side down on top.
- Sprinkle lightly with thyme and cover with onions.
- Pour wine into pan, bring to a boil, add chicken stock, return to the boil and cook until liquid is reduced to about 2/3 of a cup.
- Pour mixture over chops.
- Combine bread crumbs and cheese, spread over onions and chops.
- Melt remaining 2 tablespoons butter and drizzle it over the crumbs.
- Bake at 400 degrees for 30 minutes.
