A simple recipe with a tasty crunch that is loaded with fun flavors and an amazing taste.

3 medium onions, peeled and diced ((about 1 lb.))
1 medium carrot, shredded
2 garlic cloves, minced
1 cup grated Parmesan
2 eggs
1/2 cup flour
1/3 cup chopped parsley
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup oil, for frying

Steps:

  • In a large bowl mix together all of the ingredients besides the oil.
  • Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan (a non-stick pan needs less oil). Scoop out 2- to 3-tablespoon mounds of the onion mixture into the pan, flattening the mounds slightly with a spoon and spacing them about one inch apart.
  • Cook the fritters for 2 to 3 minutes, flip them once, and cook them for an additional 1 to 2 minutes until they're golden brown and cooked through. (*See recipe note below for baking instructions).
  • Serve warm with yogurt or sour cream or my Beet Aioli (recipe in the notes section).

The French term amuse bouche (which means "amuse the mouth") describes tiny appetizers that are served with drinks to awaken the palate. One such complimentary amuse bouche that we serve out Chanterelle clients as they sip their aperitifs and look over the menu is these little fritters, which come with a slightly exotic Tamarind Dipping Sauce. The restaurant staff likes them, too: After a long, late shift, when we often have snacks before we clean up and go home, we can't resist indulging in the fritters, although we usually dip them in hot sauce since there's rarely any Tamarind Dipping Sauce left in the kitchen. Sweet Vidalia onions are harvested in the spring and are best at that time, when they're freshest. They can be found the rest of the year for as long as the supply lasts. If you can't find Vidalias, try another sweet onion like Maui (Hawaii) or Walla Walla (Washington). At other times of year you could use Spanish onions as a substitute.

Yield Makes enough for a crowd (35-40 fritters)

1 1/3 cups all-purpose flour, or more if needed
2 teaspoons baking powder
Coarse (kosher) salt, to taste
2 to 2 1/2 cups milk
2 large eggs
1/2 teaspoon white wine vinegar
1/4 teaspoon Tabasco sauce or chili-garlic sauce (sambal oelek)
2 large Vidalia onions, sliced lengthwise (top to bottom)
Canola or other vegetable oil, for deep-frying
Tamarind Dipping Sauce , for serving

Steps:

  • 1. Place 1 3/4 cups flour, the baking powder, and salt in a large bowl and whisk to mix.
  • 2. Place 2 cups of the milk, the eggs, vinegar, and hot sauce in another bowl and whisk until blended, then pour into the flour mixture and whisk until just blended; do not overmix. Stir in the sliced onions and let the batter rest for 30 minutes. It should be slightly thicker than heavy cream. If it isn't, sprinkle in a little more flour. If it's too thick, add a little more milk. The batter should look somewhat free-form, not doughy.
  • 3. Preheat the oven to its lowest setting.
  • 4. Pour vegetable oil to a depth of 4 inches into a large, heavy saucepan and heat to 375°F on a deep-fry thermometer. Drop the onion fritter batter into the hot oil by the tablespoonful, a few at a time, and fry, turning once, until the fritters are golden brown on both sides, about 3 minutes in all. The fritters will have an irregular, spiderlike look, with a few loose pieces of onion escaping here and there. Check a fritter by breaking it open to see if the center Is cooked; it it still seems unset, cook 1 minute more. Drain on paper towels. Place the fritters in the oven to keep warm while you finish frying them all. Serve on a doily-lined platter or in a lined woven basket accompanied by the dipping sauce in one or more bowls.

3/4 c flour
1 Tbsp sugar
1 Tbsp cornmeal
2 tsp baking powder
1-2 tsp salt-according to taste
3/4 c milk
2 1/2 c chopped onions
oil for frying

  • 2. add milk and stir.
  • 3. batter will be thick.

  • 6. drop batter by tablespoons in hot oil, flatten slightly, brown on both sides until nice and crisp.
  • 7. drain on paper towels.
  • 8. serve warm.

125ml milk
3 eggs, beaten
150g self-raising flour
300g frozen sweetcorn, defrosted (or use cooked fresh corn)
½ bunch of spring onions, trimmed and thinly sliced
1 lemon, zested and cut into wedges
2 x 112g cans tuna, drained and roughly flaked
sunflower or vegetable oil, for frying
100g soured cream
hot sauce, to serve (optional)

Steps:

  • Mix the milk and eggs together in a jug with ½ tsp salt and ¼ tsp ground black pepper. Sift the flour into a bowl, make a well in the centre and pour in the egg mixture in a thin, steady stream, whisking well until combined. Stir in the sweetcorn, spring onions, lemon zest and tuna.
  • Heat a drop of oil in a non-stick or cast iron frying pan over a medium heat. Drop spoonfuls of the batter into the pan and cook until crisp and golden, about 2-3 mins, flip and repeat on the other side (you'll need to do this in batches). Keep warm in a low oven and repeat with the remaining batter.
  • Serve the hot fritters with the lemon wedges for squeezing over, the soured cream and hot sauce, if using.

These are wonderful. This is also a recipe of Rachael Ray's "30 Minute Meals - Top Drawer Dinner" and they are a real comfort food.

Number Of Ingredients 7

vegetable oil, for frying
1 cup all-in-one pancake mix
1/2 cup water
8 -10 scallions, cleaned, dried & trimmed of roots, chopped
1 pinch cayenne pepper
salt, to taste
freshly ground coarse black pepper, to taste

Steps:

  • Fill a medium saute pan with 2-3 inches of vegetable oil and heat to medium-high heat.
  • Arrange a paper towel lined plate on the counter to place the fritters on when they come out of the hot oil.
  • In a bowl, make the batter by combining the all-in-one pancake mix with the water (the batter will be on the thick side).
  • Add the chopped green onions and season with cayenne, salt & pepper.
  • When the oil is ready for frying, drop by spoonfuls of the batter into the oil and fry on all sides until golden brown and puffy.
  • This should take no more than 3-4 minutes.
  • Remove and drain on the paper towel lined plate.
  • Reseason with salt while they are still hot.

  • Using a cast iron skillet or other heavy bottomed skillet, heat 1 tablespoon oil over medium-high heat. Once oil is hot, drop the batter by rounded tablespoons into the hot skillet, flattening them slightly as you do. Fry until the fritters are golden brown on the bottom, about 2 minutes. Turn over, and fry on the other side until golden, about another 2 minutes. Remove the fritters to a paper towel lined plate. Oil the pan as needed to finish frying the fritters
  • Keep fritters warm in a low oven, about 200 degrees F while you fry the rest of the batter. Serve warm, plain or with sour cream for garnish.
