ONION BREAD
This coarsely textured bread has the delicate flavor of onion. This is not a soft bread. It is crusty and hearty and slightly dry. Sliced, it is perfect for building those famous Dagwood sandwiches. This bread is good eaten in crusty slabs either plain or buttered along side hot soup or cool, crisp salad. It's the bread of choice in my house.

- Place the water, sugar, and yeast in the pan of your bread machine. Let the yeast dissolve and foam in the water for 10 minutes. Add the rest of the ingredients.
- Program your bread machine for a 1 1/2 pound basic white bread. I always choose the dark setting for the crust. This bread is excellent for the time delay feature.

ONION BREAD
This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

Steps:
- Measure and add liquid ingredients to the bread pan.
- Measure and add dry ingredients (except yeast) to the bread pan.
- Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
- Close up bread machine.
- Choose the "basic" setting that most machines have - it's the three hour setting on mine.
- I always use the "light" crust color because the bread comes out quite a bit softer.

ONION BREAD
Wonderful "Old World" onion bread reminiscent of a Jewish delicatessen. A little bit of work, but worth it! You won't find bread like this in any store.

Steps:
- Pour scalded milk over 2 Tbsp.
- of the butter, the sugar, and the salt.
- Stir until butter is dissolved.
- Sauté the onions in the rest of the butter until golden, about 10 minutes over med-low heat.
- Dissolve the yeast in the warm water.
- Add to the cooled milk mixture.
- Add the herbs to 2 cups of the flour and mix well.
- Add herb and flour mixture to the milk/yeast mixture and mix well.
- Add the onions and the remaining flour and mix thoroughly.
- Turn out onto a floured surface and knead until elastic.
- Place in a buttered bowl, cover and let rise until doubled.
- Punch down and let rise again for 30 minutes.
- Shape into loaves and place in two buttered loaf pans.
- Let rise again until doubled and bake in a 400 degree oven for 10 minutes, then bake at 350 degrees until browned and done, about 30 to 35 minutes more.
- Turn out of pans and cool on rack.
- Brush crust with butter while hot for a soft crust.
- NOTE: Also makes excellent rolls and breadsticks.

SWEET ONION BREAD
Steps:
- Preheat the oven to 350 degrees. Grease a 9 by 5 by 3-inch loaf pan. In a saute pan, heat the olive oil. When the oil is hot, caramelize the onions for about 10 minutes. In an electric mixer with a whip attachment, whip the egg whites until stiff. Switch the whip attachment to a paddle attachment and cream the butter and sugar together. Add the egg yolks, one at a time, beating well after each yolk. With the machine running add the apple juice and ginger. In another bowl, combine the flour, baking powder, salt and pepper, together. With the machine on low speed, alternate adding the flour 1/3 at a time with the milk. Do not over mix the batter. Fold in the stiff egg whites. Pour the batter into the prepared pan. Bake for 50 to 60 minutes or until the center of the bread comes out clean. Remove the pan from the oven and invert onto a wire rack. Allow the bread to cool for 5 minutes before slicing. Slice a couple of slices from the loaf and place the loaf and the slices on a plate.

- After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

- Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.

ONION PAN BREAD
This quick batter bread is fabulous! If you love the taste of carmelized onions and sweet brown sugar, you must try it! It is more of a biscuit style bread, and best when still warm from the oven, but this is one of the few breads that can successfully be gently reheated in the microwave or oven. The onions form a sweet bottom layer, as they don't actually bake into the bread. I've used less onions than the recipe calls for due to not having enough, and it came out fine, but if you have enough use them all! The onions are so sweet I could almost eat it as dessert. - Preheat oven to 350 degrees F.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add onion and saute until softened and starting to become golden, about 10 minutes.
- Grease a 9-inch pie plate with remaining tablespoon butter and sprinkle bottom with brown sugar.
- When onions are done, spread out evenly over brown sugar.
- In large bowl combine flour, baking powder, salt and sugar.

- In a bowl, dissolve yeast in warm water. Add 1/2 cup flour, 2 tablespoons sugar and salt; beat until smooth, about 1 minute. Cover and let rise in a warm place for 20 minutes. , In a small bowl, combine hot water, soup mix, shortening and remaining sugar. Cool to 115°. Add to yeast mixture with 2 cups flour; mix for 1-2 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down; divide into thirds. DJ'S POTATO ONION BREAD
This recipe comes from a Jewish Baker who said it was the Sabbath Bread of Jewish neighborhoods of pre-World War II. It was originally Potato Bread. The Onions were added at a later date. Since then, I have added chopped tomatoes with green chilies! (Rotelle) This bread became a Sunday favorite.

- Boil potatoes until very tender.
- Drain and mash, (with skins) until very smooth. Let cool until lukewarm.
- Dissolve yeast in 2 cups warm water. Then add honey, milk powder, salt, oil, potatoes, onions, and Rotel. Stir well to mix. Then add 3 cups flour and stir well. Add remaining flour 1/2 cup at a time until you have a stiff dough.
- On lightly floured surface knead in enough flour so that dough is no longer sticky. Knead well until elastic.
- Place dough in greased bowl and let rise until double in size. Then punch down and form 3 loaves. To make buns, form dough into 3" round buns.
- Place loaves in 3 greased loaf pans and let rise again until double. Then brush on egg wash.
- Bake in a pre-heated oven at 350°F for 50 minutes or until bottom of loaves sound hollow. Remove from pans. Let cool on racks.
- For buns, place on greased baking trays and let rise. Brush with egg wash. Bake buns for 30 minutes. Enjoy!

- Preheat a fan oven to 200 degrees celsius. Line a baking tray with tin foil and lightly sprinkle with flour.
- Mix the flour, sugar, baking powder, salt, cheese, and onion in a large bowl.
- In a separate bowl, mix the egg, milk and sunflower oil.
- In small quantities, gradually add the wet mixture to the dry until a sticky dough is formed. Careful - you may not need to use all of the wet mixture!
- On a floured surface, roughly shape the dough into a flattened ball and place on the prepared baking tray. Place in the preheated oven and bake for 35-40 minutes, or until cooked. The crust should be golden brown and starting to darken. A knife should come out clean when placed into the bread.
- Enjoy warm, straight out of the oven or when cooled.
