- In a large skillet, cook beef and 1/4 cup green onions over medium heat for 6-8 minutes or until beef is no longer pink, breaking into crumbles; drain. Stir in mixed vegetables, salsa and barbecue sauce; cook, covered, over medium-low heat 4-5 minutes or until heated through., Layer stuffing over beef; sprinkle with cheese, red pepper and remaining green onion. Cook, covered, 3-5 minutes longer or until heated through and cheese is melted.

BBQ BEEF AND MASHED POTATO PIE
Put a deconstructed spin on burger and fries with this homey combination of sweet barbecue beef and mashed potatoes.

Steps:
- Place the potatoes in a pot. Add cold water to cover; bring to a boil. Add 1 teaspoon salt; simmer until just tender, 15 to 18 minutes. Reserve 1/4 cup of the cooking liquid; drain the potatoes and return to the pot. Mash with 3 tablespoons oil, 1/4 teaspoon each salt and pepper and 2 tablespoons of the reserved cooking liquid (add more liquid if necessary).
- While the potatoes are cooking, heat the remaining tablespoons oil in a large skillet over medium heat. Add the onion and 1/4 teaspoons each salt and pepper and cook, covered, stirring occasionally, until tender, 8 to 10 minutes.
- Heat broiler. Add the beef to the onion and cook, breaking it up with a spoon, until no longer pink, 5 to 6 minutes. Spoon off and discard any grease. Add the tomatoes and cook, stirring occasionally, for 4 minutes. In a bowl, whisk together the ketchup, vinegar, mustard, molasses, and Worcestershire; add to the beef and cook, stirring, for 1 minute.
- Transfer the beef mixture to a 2-quart broiler-proof baking dish and top with the mashed potatoes. Broil until beginning to brown, 2 to 4 minutes.

SHEPHERD'S PIE WITH GARLIC MASHED POTATOES
I got this out of a magazine many years ago (can't remember which one). I try different shepherd's pie recipes but always come back to this one. The prep time is merely guess work as is the number it feeds (depends on the appetite of those eating).

Steps:
- In large nonstick skillet over medium heat, cook ground beef until no longer pink, breaking it up as it cooks.
- Add onions and garlic; cook until softened.
- Stir in flour, pepper, salt, thyme and savory.
- Add broth, water, worcestershire sauce, bay leaf and carrots.
- Cover loosely and simmer, stirring occasionally, for about 20 minutes or until quite thick and carrots are tender.
- Stir in corn.
- Add salt to taste.
- Remove bay leaf.
- Spread mixture in 11 x 7 baking dish.
- let cool slightly.
- Garlic mashed potatoes: in boiling salted water, cook potatoes with garlic until tender.
- Drain well and mash.
- Beat in milk, salt and pepper.
- Reserve 1 tbsp.
- of beaten eagg; beat remainder into potatoes.
- Spread over meat mixture; brush with reserved egg.
- Bake in 400 oven for 29 minutes or until bubbling.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted. Freeze option: Prepare beef mixture as directed but do not add sour cream. Freeze cooled meat mixture in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a large skillet, stirring occasionally and adding a little water if necessary. Stir in sour cream and proceed as directed.

- Cook potatoes, slice 1/4 in. thick.
- Mash lightly just until broken up into several pieces.
- Stir in buttermilk and scallions and season with salt and pepper.
- Heat just enough oil to coat bottom of non stick skillet.

- Turn the heat to moderate and cook until the bottom of the pie is crisp and browned.

- Fry the beef in a nonstick pan, and when finished, drain off the fat and set it aside Place the potatoes in a medium sized mixing bowl, mash them, or if using the instant, follow the directions on the box.
- Add the milk and whip them until creamy.
- In a medium sized baking dish, place a layer of the whipped potatoes about an inch thick. Add all of the ground beef for the second layer. Add half of the cheese for the third layer. Use the rest of the potatoes for the fourth layer. Add the rest of the cheese on top.
- Place in oven and bake at 350°F until the cheese is melted and you see part of the potatoes golden brown.
- Let it set for five minutes and then serve.

- Preheat oven to 375 F degrees. Heat a BIG oven safe skillet over MED heat. Add oil and ground beef and cook about 4 minutes, or until cooked through, breaking it up into small crumbles as it cooks. Once browned, transfer to a plate. If needed, drain excess grease before adding the beef to a plate.
- Add butter to same skillet. Once melted, add onion, carrots, mushrooms, garlic, dried oregano, and 1/2 the salt. Cook, stirring occasionally, about 8-10 minutes.
- Add in tomato paste, stirring to combine, and cook 5-7 minutes, until tomato paste is a dark, brick red color (this really brings out the tomato flavor).
- Return cooked ground beef to the skillet, then stir in beef stock, Worcestershire sauce remaining salt, and black pepper. Simmer for a few minutes, until mixture is slightly thickened.
