1 teaspoon seasoned salt
1 pinch garlic powder, or to taste

½ cup margarine, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish.
  • Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish.
  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

One Recipe, Two Meals: Pasta Primavera image

What we have here is a ridiiiiiculous pasta primavera, but super-stripped down on the front end for your babes. I included some peas in the kid-friendly recipe. The mature version is loaded with veggies, a bit of dry white wine, a little bit and a lot of butter, tons of good Parmesan and a heavy handful of fresh herbs.

Coarse salt and freshly ground pepper
One 14.5-ounce box rotini
3/4 cup chicken stock
4 tablespoons butter
1/4 cup plus 1/3 cup freshly grated Parmesan, plus extra for garnish
1 cup frozen peas, thawed
2 tablespoons extra-virgin olive oil
4 cups broccoli florets
1 medium bunch asparagus, ends trimmed, cut into 2-inch pieces
2 cups cherry tomatoes
1/4 cup dry white wine
4 cloves garlic, minced
1 tablespoon fresh thyme leaves
Chopped fresh parsley, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, according to the box directions. Save a cup of the pasta water and drain the rest.
  • At this point, scoop out two cups of the cooked pasta and place it back in the pot. Add 1/4 cup chicken stock and 1 tablespoon butter. If needed, add a little bit of the reserved pasta water to create a thin sauce. Add 1/4 cup Parmesan and stir to combine.
  • Serve to your kids as is, or with 1/4 cup warmed peas, with extra grated Parmesan on top.
  • Place the remaining cooked pasta back in the pot.
  • In the meantime, heat the oil in a large saute pan over medium-high heat. Add the broccoli florets and asparagus pieces to the pan. Add 1/4 cup water and cover to steam, about 3 minutes.
  • To the pan, add the cherry tomatoes, white wine, garlic, thyme leaves, 2 tablespoons butter and the remaining 1/2 cup chicken stock. Sprinkle with salt and pepper. Let saute for a few more minutes until the colors pop. Finally, add the peas and toss. Off the heat, add the last tablespoon of butter and another 1/3 cup Parmesan. If needed, stir in a little of the reserved pasta water to create a sauce. Toss to combine.
  • Serve the adult-friendly pasta primavera with fresh parsley and more Parmesan-and that extra white wine, for Pete's sake!

I always forget what a cinch it is to pull together a stir-fry: some hot oil, a lean protein, an array of brightly colored veggies, maybe a carb or 40, and some quick garnishes. Bam! Dinner's done. We've got two quick chicken stir-fry methods here: one crazy-speedy, stripped-down recipe for the kiddie kids, and one right behind it with more goods in it. More flavor. More sauce. More errrthang. You're gonna dig it.

4 to 5 tablespoons sesame oil
1 pound chicken breast, thinly sliced
Coarse salt and freshly ground pepper
1 cup frozen mixed veggies, thawed
1 box (14 ounces) stir-fry rice noodles
3 scallions, finely sliced
Sesame seeds, for garnish
4 cloves garlic, minced
1 tablespoon freshly minced ginger root
1 tablespoon lemongrass paste
1 red bell pepper, thinly sliced
1 bag (6 ounces) snow peas, sliced on the diagonal
3 tablespoons soy sauce
Juice of 1 lime

Steps:

  • Heat 2 tablespoons of the sesame oil in a large saute pan. Add the chicken to the pan, and sprinkle with salt and pepper; sear on one side for 3 minutes. Flip and sear until you see nice browning all over, another minute or two. Remove the chicken and set aside.
  • Add the thawed veggies to the pan to simply warm through.
  • In the meantime, bring a large pot of salted water to a boil. Add the rice noodles and boil for about 1 minute. Remove from the heat and let stand for about 5 minutes. Drain the noodles.
  • At this point you're ready to serve the kids! Using tongs, grab a small mound of noodles and plate them. Top with the warm veggies and a few slices of chicken. If your kids can dig a little scallion, by all means, garnish away! Sesame seeds are fun, too.
  • Now let's continue on for our adult mouth holes.
  • Back in the saute pan, bring another tablespoon or two of sesame oil to a medium-high heat. Add the garlic, ginger and lemongrass. Let bloom and saute for about 30 seconds, then add the red bell pepper and snow peas. Sprinkle with a small pinch of salt and pepper. Toss and saute a couple of minutes, until the veggies slightly soften and pop in color.
  • Add the chicken to the pan, along with as many noodles as you can fit. Add the soy sauce, lime juice and maybe 1 more tablespoon of sesame oil. Toss everything together to coat.
  • Serve on a huge platter (or individual plates) garnished with scallions and sesame seeds!

1 poblano pepper
7 slices stale whole wheat bread
1 garlic clove
2 tablespoons olive oil (30 milliliters)
Kosher salt and freshly ground black pepper
1/2 cup feta cheese, crumbled (about 50 grams)
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour (65 grams)
1/4 cup mayonnaise (60 milliliters)
2 eggs

Steps:

  • Using a pair of metal kitchen tongs or a fork, hold the pepper over the flame of a gas burner until well charred, turning occasionally. Alternatively, char the pepper under your broiler set to high, turning occasionally until charred. Transfer to a small bowl and cover with plastic or a plate to seal in the steam and set aside.
  • Tear the bread into small pieces and roughly chop the garlic. Add both to the bowl of a food processor fitted with a steel blade and pulse until the mixture is finely ground into breadcrumbs. Add the olive oil, season with salt and pepper and pulse to combine.
  • Heat a large skillet over medium-high heat and add the breadcrumb mixture. Toast, stirring occasionally, until golden brown and crisp, about 5 minutes. Transfer to a shallow dish and spread into a thin layer to cool completely.
  • Meanwhile, peel the charred skin off of the pepper, finely dice and add it to a small bowl along with the crumbled feta. Mix well to combine and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C) and set out two baking sheets.
  • Prepare the chicken by removing the tender from each and slicing two of the breasts into four or five long pieces that are about the same size as the tenders. Slice a pocket into the side of the two remaining chicken breasts and stuff each with the pepper and feta mixture.
  • Scatter the flour into a shallow dish. Season with salt. Beat the mayonnaise and eggs together in a separate shallow dish. Set up a breading station with the flour, egg mixture and toasted breadcrumbs. Dredge the tenders by coating in flour, dipping in the egg and finally pressing into the breadcrumbs to coat. Continue with the rest of the tenders, placing the coated pieces onto one of the baking sheets, leaving space between each. Coat the stuffed chicken breasts as you did the tenders, being careful not to let any of the stuffing fall out, and place onto the second baking sheet.
  • Place both the tenders and the stuffed chicken breasts into the oven, placing the stuffed breasts onto the lower shelf if needed for space. Bake until cooked through to 165 degrees F (75 degrees C), 20 to 25 minutes for the tenders and 25 to 30 minutes for the stuffed breasts. Allow the chicken to rest for 3 to 5 minutes.

Good news: I've got the solution for dinner. And it involves lo mein noodles and chicken and a crazy-gorgeous sauce! Your kids' version is way simple, and for grown-ups, I made a fantastic Asian dressing to swirl into the cooked chicken. You'll also add diced red bell pepper, some bean sprouts and a truckload of scallions.

Kosher salt
Two 3-ounce bundles lo mein noodles (spaghetti can be subbed!)
Sesame oil, for drizzling, optional
3 tablespoons extra-virgin olive oil, plus additional for drizzling
1 pound ground chicken
2 teaspoons Chinese 5-spice powder
3 tablespoons orange juice
Mandarin orange wedges, for garnish
3 scallions, finely chopped
3 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon fish sauce
Juice from 1 lime, plus lime wedges, for garnish
About 3/4 of a 15-ounce can bean sprouts, drained
1 red bell pepper, finely chopped

Steps:

  • Bring a large pot of salted water to a boil. Cook the lo mein noodles until al dente, about 3 minutes. Drain, and drizzle with a little bit of sesame or olive oil, to keep the noodles from sticking. Set aside.
  • Heat a large skillet over medium-high heat. Add the chicken and brown, breaking it up with a wooden spoon. Add the Chinese 5-spice powder and a small pinch of salt. Continue to cook until the seasoning coats the chicken, about 30 seconds.
  • At this point, set aside about 3/4 cup of the noodles with 1/2 cup of the chicken. Divide that between two small plates, and drizzle a tablespoon of orange juice over both plates. Garnish with a few mandarin orange wedges and a tiny bit of scallions, if your kids dig it! Serve it to your littles.
  • Now, for you. In a small bowl, whisk together the soy sauce, brown sugar, fish sauce, lime juice, olive oil, and the remaining 2 tablespoons orange juice. Pour the mix over the remaining ground chicken in your skillet, and bring the heat back up (if you've turned it down, to tend to the kids). Add the bean sprouts and bell pepper and cook, stirring, 3 more minutes, so the flavors have time to marry. Add the remaining noodles to the pan and toss to combine.
  • Serve with fresh lime wedges and the remaining scallions! Good grief, almighty. Eat!

8 -10 chicken thighs, and skin on chicken or drumstick bone in skin on chicken
2 cups of your favorite barbecue sauce
2 tablespoons extra virgin olive oil or 2 tablespoons canola oil

  • Preheat oven to 400.
  • Coat the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
  • Remove chicken from oven and turn the temperature of the oven up to 425.
  • Coat the top of the chicken with barbecue sauce using a basting brush. Use a spatula to flip the chicken over, being careful not to tear the skin. Baste the other side of the chicken, and place back in the oven for 7 minutes.

8 skinless chicken thighs
2 1/2 cups corn flakes
1/4 cup panko breadcrumbs
1 cup fat-free buttermilk (or low-fat)
1/2 teaspoon italian seasoning
1/2 teaspoon cayenne
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place thighs in a seal tight zip lock bag and pour in buttermilk. Coat, lay flat, and refrigerate 30 minutes-8 hours (your preference and time availability).
  • Preheat oven to 350.
  • In the food processor, combine cornflakes, italian seasoning, salt, and cayenne. Pulse until consistency of panko crumbs.
  • Transfer ingredients to a shallow dish and combine with panko. Mix.
  • Remove chicken one at a time and coat both sides in crumb mixture. Place thigh on baking rack.
  • Repeat with other chicken. When finished discard buttermilk and any left over crumb misture.
  • Bake 30-35 minutes or until crisp, juicy, and cooked through. Juices should run clear.

CRISPY BAKED CHICKEN LEG QUARTERS (VERY EASY, ONE DISH)

This is one that I adapted from Recipe #199636 after I scored 4 huge chicken leg quarters on sale. ($0.39 a pound!). I added a few things and adjusted the cooking time and temp to to what worked for me. The skin got SO crispy and the chicken was moist and retained the flavors. It also fell off the bone. 4 skin-on chicken leg quarters, with bone
1/2 cup soy sauce, divided
1 teaspoon garlic powder, divided
1 teaspoon seasoning salt, divided

Steps:

  • Preheat oven to 375.
  • Line a large glass baking dish with foil. You can also add a baking rack to the pan to keep the chicken out of the grease and to help air circulate and make it crispier.
  • Remove excess fat from chicken quarters.
  • Separate the skin from the chicken, taking care that the skin stays attached at most points on the chicken. (You just want a flap. Do not remove the skin).
  • Brush the chicken (under the skin) with soy sauce.
  • Sprinkle some garlic powder, seasoned salt and dill weed on the chicken under the skin (I estimated the 1 tsp measures. Use as much or as little as you're comfortable with) and rub into the chicken.
  • Arrange the leg quarters in the pan, skin side up, taking care not to crowd. They need space to cook properly.
  • Brush both sides of the leg quarters with soy sauce.
  • Sprinkle the skin with garlic powder, seasoned salt and dill weed (to taste).
  • Place on middle rack in over and bake uncovered for an hour.
  • After an hour, increase oven temp to 400 and bake 15 minutes.
  • Chicken is done when internal temp reaches 165 (insert meat thermometer at thickest part of thigh, taking care not to touch the bone).
  • Let stand for 5 minutes before serving.
