ONE RECIPE, TWO MEALS: CRISPY BAKED CHICKEN

One Recipe, Two Meals: Crispy Baked Chicken image

Since the coating is the exact same for all the chicken, it's a definite timesaver on a weeknight. Holla. You'll serve the nuggets with some ketchup and steamed broccoli for the kids. And then you'll just drape your chicken over some super-quick lemony linguine for you. And all is right in the world.

Provided by Bev Weidner

Categories     main-dish

Time 1h10m

Yield 4 servings (2 kids, 2 adults)

Number Of Ingredients 13

1 cup all-purpose flour
2 cups panko
1 tablespoon Italian seasoning
1/3 cup plus 1/4 cup freshly grated Parmesan, plus extra for serving
Salt
2 eggs
2 pounds chicken breast, 1 pound cut into 1-inch cubes and the other pound cut in half lengthwise and pounded out thinly
1 cup broccoli, boiled or steamed
Ketchup, for serving
1/2 pound linguine
2 tablespoons butter
Chopped fresh parsley, for garnish
1 lemon, cut in half

Steps:

  • Preheat the oven to 375 degrees F. Place the flour in a shallow dish. In another shallow dish, combine the panko, Italian seasoning, 1/3 cup Parmesan and a pinch of salt. In one more shallow dish, beat the eggs.
  • Set a shallow cooling rack in a baking sheet. Take each cube of chicken and lightly dredge it in the flour. Dip it in the egg wash, then roll it in the panko. Continue until all of the chicken cubes are coated in panko. Arrange on the cooling rack set in the baking sheet and bake, flipping halfway through, until golden brown on all sides, 15 to 20 minutes.
  • Serve these baked nuggets with a side of steamed broccoli and a little bit of ketchup for dipping! Your kids will freak out.
  • Now for your mature palate: Proceed with the pounded chicken, in the same fashion as the nuggets. First the flour, then the egg, then a good coating of the panko. Arrange the chicken on the rack on the baking sheet and bake until golden brown on both sides, 15 to 20 minutes.
  • Meanwhile, cook the linguine in a pot of salted water until it is al dente and drain, reserving about 1/4 cup of pasta water. Transfer the pasta back to the pot. Add the butter, parsley, juice from half the lemon, the reserved pasta water and the remaining 1/4 cup Parmesan and give it all a good toss.
  • To dress it up a tad more, slice the remaining half lemon, then sear a few lemon slices in a small saute pan-so fancy.
  • Serve the baked chicken over the pasta and serve with extra Parmesan!

ONE RECIPE, TWO MEALS: CHICKEN STIR-FRY

One Recipe, Two Meals: Chicken Stir-Fry image

I always forget what a cinch it is to pull together a stir-fry: some hot oil, a lean protein, an array of brightly colored veggies, maybe a carb or 40, and some quick garnishes. Bam! Dinner's done. We've got two quick chicken stir-fry methods here: one crazy-speedy, stripped-down recipe for the kiddie kids, and one right behind it with more goods in it. More flavor. More sauce. More errrthang. You're gonna dig it.

Provided by Bev Weidner

Categories     main-dish

Time 40m

Yield 4 servings (2 kids, 2 adults)

Number Of Ingredients 14

4 to 5 tablespoons sesame oil
1 pound chicken breast, thinly sliced
Coarse salt and freshly ground pepper
1 cup frozen mixed veggies, thawed
1 box (14 ounces) stir-fry rice noodles
3 scallions, finely sliced
Sesame seeds, for garnish
4 cloves garlic, minced
1 tablespoon freshly minced ginger root
1 tablespoon lemongrass paste
1 red bell pepper, thinly sliced
1 bag (6 ounces) snow peas, sliced on the diagonal
3 tablespoons soy sauce
Juice of 1 lime

Steps:

  • Heat 2 tablespoons of the sesame oil in a large saute pan. Add the chicken to the pan, and sprinkle with salt and pepper; sear on one side for 3 minutes. Flip and sear until you see nice browning all over, another minute or two. Remove the chicken and set aside.
  • Add the thawed veggies to the pan to simply warm through.
  • In the meantime, bring a large pot of salted water to a boil. Add the rice noodles and boil for about 1 minute. Remove from the heat and let stand for about 5 minutes. Drain the noodles.
  • At this point you're ready to serve the kids! Using tongs, grab a small mound of noodles and plate them. Top with the warm veggies and a few slices of chicken. If your kids can dig a little scallion, by all means, garnish away! Sesame seeds are fun, too.
  • Now let's continue on for our adult mouth holes.
  • Back in the saute pan, bring another tablespoon or two of sesame oil to a medium-high heat. Add the garlic, ginger and lemongrass. Let bloom and saute for about 30 seconds, then add the red bell pepper and snow peas. Sprinkle with a small pinch of salt and pepper. Toss and saute a couple of minutes, until the veggies slightly soften and pop in color.
  • Add the chicken to the pan, along with as many noodles as you can fit. Add the soy sauce, lime juice and maybe 1 more tablespoon of sesame oil. Toss everything together to coat.
  • Serve on a huge platter (or individual plates) garnished with scallions and sesame seeds!

ONE RECIPE, TWO MEALS: SPICE-RUBBED CHICKEN

One Recipe, Two Meals: Spice-Rubbed Chicken image

For the kiddos, we're spicing chicken cubes with some Italian seasoning mixed with garlic powder and a pinch of salt. Then you'll add cumin, smoked paprika and cayenne for the adults. This meal hits the summer nail on the summer head.

Provided by Bev Weidner

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

2 tablespoons dried Italian seasoning
1 teaspoon garlic powder
Coarse salt
2 pounds boneless skinless chicken breasts, cut into bite-size cubes
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
Pinch of cayenne pepper
2 tablespoons extra-virgin olive oil
Salad and buttery corn on the cob, for serving
Hot sauce, for the adults' corn cobs

Steps:

  • In a small bowl, combine 1 tablespoon of the dried Italian seasoning with 1/2 teaspoon of the garlic powder. Add a pinch of salt. Rub the seasoning mixture all over half of the cubed chicken. This batch will be for yo' kids.
  • In another small bowl, combine the remaining 1 tablespoon dried Italian seasoning with the remaining 1/2 teaspoon garlic powder; add the cumin, smoked paprika and a pinch of cayenne and salt. Rub this seasoning mixture all over the other half of the cubed chicken. This batch will be for you.
  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the kids' chicken to the pan and saute until browned and cooked through, about 5 minutes. Remove from the pan and set aside.
  • Add the remaining 1 tablespoon oil and the remaining, spicier chicken. Saute until browned and cooked through, about 5 minutes.
  • Meanwhile, prep a simple green salad for the adult eaters, and boil a few ears of corn in a large pot of salted water. Melt some butter and roll the corn in it. This is a healthy, positive thing in life.
  • Give some corn to your littles along with their seasoned chicken. And give yourself some corn (with some salad and the spicier chicken), only toss a little bit of hot sauce on the corn! This is also a healthy and positive thing in life. Serve, eat and be happy.

ONE RECIPE, TWO MEALS: CREAMY CHICKEN PASTA

One Recipe, Two Meals: Creamy Chicken Pasta image

It's almost winter. Cream sauces are mandatory. We're adding veggies and pasta and chicken and vodka, so it's all good. It's buttery, creamy and cheesy for the kids, and for you adults, it's adorned with a tiny kiss of vodka, right at the end.

Provided by Bev Weidner

Categories     main-dish

Time 1h5m

Yield 2 adult and 2 kid servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
12 ounces mafalda pasta, or any small curly pasta
2 tablespoons extra-virgin olive oil
2 chicken breast cutlets
2 medium carrots, thinly sliced
1/3 cup thinly sliced red onion
1 bunch asparagus, cut into 2-inch pieces (ends trimmed and discarded)
3 cloves garlic, minced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/4 cup grated Parmesan
1 shot vodka
Fresh parsley leaves, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta until it reaches al dente, according to the package directions.
  • Heat 1 tablespoon of the oil in a large skillet over medium heat. Sprinkle the chicken on both sides with salt and pepper. Sear the chicken, covered, for 5 minutes. Flip and sear another 5 minutes, covered. Remove the chicken from the pan and set aside to rest. After a few minutes, give the chicken a good chop.
  • Back in the skillet, add the remaining tablespoon oil. Add the carrots and cook, stirring, until they start to soften, about 4 minutes. Add the onions and asparagus and cook, stirring, until the asparagus is crisp-tender, another few minutes. Add the garlic and cook, stirring, until it becomes fragrant, about 30 seconds. Season the veggies with a pinch of salt and pepper and reduce the heat the low.
  • In the meantime, melt the butter in a small saucepan. Once the foaming subsides, add the flour and whisk until the color changes from cream to a golden brown, just a few minutes. Slowly add the milk, continuing to whisk over medium heat, until it becomes a bit thicker and creamier. Now, add the Parmesan and a good pinch of salt. Keep whisking until the cheese is melted and the sauce is good and creamy. Taste it and add more salt if needed.
  • Ladle out about 2/3 cup cream sauce and add it to 1 cup cooked pasta, tossing to coat. Divide between 2 kids' plates and top with chopped chicken and extra Parmesan. Done! (Feel free to sprinkle the veggies on the kids' plates, if they'll remotely let you.)
  • Now, back to the cream sauce: stir in the vodka and let it simmer for a couple of minutes.
  • For your adult plates, serve the creamy pasta with chicken and a good helping of cooked veggies. Garnish with extra Parmesan and fresh parsley.
  • Eat!

EASY CHICKEN BURRITOS

Easy chicken burritos image

Make your own chicken burritos in 25 minutes, ideal for a packed lunch or easy dinner. Fill them with rice, beans, cheese, avocado and soured cream

Provided by Anna Glover

Categories     Dinner, Main course

Time 25m

Yield (makes 6 burritos)

Number Of Ingredients 13

1 tbsp vegetable oil
1 onion , diced
1 tbsp chipotle paste
250g cooked chicken , chopped into small chunks
2 x 250g pack ready-cooked rice
400g can red kidney beans
1 lime , juiced
small bunch coriander , chopped
1 ripe avocado , chopped
6 large wraps
6 tbsp tomato salsa
100g grated cheddar
6 tbsp soured cream (optional)

Steps:

  • Heat the oil in a frying pan and gently fry the onion until soft, about 10 minutes. Stir in the chipotle paste and the chicken to warm through.
  • Heat the rice following pack instructions and warm through the kidney beans in their liquid in a small pan. Drain the beans and fold in the cooked rice, with half the lime juice and half the coriander.
  • Mix the remaining coriander and lime juice with the avocado, mashing it well with some seasoning.
  • Heat the wraps individually in a dry frying pan to warm through, or warm in the microwave for 5-10 seconds.
  • Divide the rice and beans between the warmed wraps, piling the mixture into the middle of each one. Lay the chicken on top, then add a spoon each of the avocado, salsa, cheddar and soured cream, if using. Don't overfill the wraps or they will be difficult to close.
  • With each wrap, fold over two ends to cover the filling, then carefully roll over and tuck the ends under to make a thick sausage shape with the folds on the base. Keep the prepared ones warm in a low oven as you work. Cut in half, on a diagonal, to serve.

SIMPLE CHICKEN BURRITO

Simple Chicken Burrito image

A simple chicken, rice, and bean burrito. Very quick and consistent recipe. Extremely hard to screw up, so it's a good one for even the worst of cooks!

Provided by Countessme

Categories     Chicken Breast

Time 35m

Yield 1 burrito, 5 serving(s)

Number Of Ingredients 7

4 boneless skinless chicken breasts
1 1/2 cups refried black beans
2 cups rice
3 cups cheddar cheese, shredded
2 cups mild salsa
2 teaspoons canola oil
5 large flour tortillas

Steps:

  • You can dice the chicken after it's cooked, but I prefer to do it before hand. cut each breast into 1/2 inch strips (estimated) and then each strip into small cubes. Cook them on a skillet in the oil.
  • While the chicken cooks, warm up the beans in a small sauce pan, stir them constantly so they don't stick.
  • Once the chicken is cooked thoroughly, pull it and the beans off of the stove. This should take about 15 minutes on Medium if the chicken is in cubes already, but it varies from stove to stove.
  • If the tortillas you're using are homemade, skip this step, if they're store bought taco type shells, put them in the microwave for 15 seconds.
  • Make the burritos the same way you would make a taco, using the beans, rice, chicken, salsa, and any other toppings of your choosing.

CHICKEN BURRITO

Chicken burrito image

Use up leftover chicken in these easy toasted wraps, filled with spiced Mexican-style rice and beans. Swap for ham, beef or pork if you prefer

Provided by Cassie Best

Categories     Dinner, Lunch, Supper

Time 1h

Yield Serves 4 (1.5 burritos per person)

Number Of Ingredients 11

1 tbsp vegetable oil
1 red or white onion, or 4 spring onions, chopped
400g mixed vegetables of your choice (we used carrots, red pepper and sweetcorn)
200g leftover chicken, chopped into small chunks
2 x 250g packs ready-cooked lime & coriander rice
400g can red kidney beans in chilli sauce
6 large wraps
1 avocado, chopped
100g grated cheddar
1 egg, beaten
soured cream, to serve (optional)

Steps:

  • Heat the oil in a large pan. Add the onion and cook for 5 mins until soft, then add your chosen veggies and continue cooking for another 5-10 mins or until tender. Add the leftover meat, the rice and beans, along with the sauce from the can. Stir everything together and cook for 5 mins until piping hot.
  • Heat another frying pan, or a griddle pan, until hot, and heat oven to 140C/120C fan/gas 2. Now assemble the burritos. Warm a wrap for 10 secs on the hot pan (keep the pan hot, you'll need to use it again).
  • Pile roughly a sixth of the rice mixture onto the centre of the wrap. Top with a little avocado and some cheese, then brush beaten egg around the edge. Fold the ends over the filling, then fold in the sides, like an envelope.
  • Flatten a little to a parcel, then place, seam-side down, in the hot pan. Cook for 2 mins until the underside has sealed shut and is toasted a golden brown, flip over and cook for a few mins more.
  • Keep the burrito warm in the oven while you continue assembling and cooking the remaining burritos. Serve with soured cream, if you like.
