ONE-POT WHITE CHICKEN CHILI
This is a quick and easy way to make a great standard, white chicken chili. Kids and adults love it topped with chips, sour cream, and cheese. Top with chopped raw onion if you like.

Steps:
- Heat olive oil in a large pot over medium heat. Add chicken, garlic, chives, oregano, thyme, basil, salt, pepper, and bay leaf; cook and stir until juices run clear, 5 to 8 minutes. Stir in 3 cans great Northern beans, water, chopped tomatoes, and salsa. Reduce heat to low and simmer, stirring occasionally, until flavors combine, about 1 hour.
- Stir remaining 2 cans great Northern beans and sour cream into the pot. Increase heat to medium-low and simmer until thick, about 25 minutes. Ladle into bowls.

This is such a GOOD recipe! I will warn you that, by itself, it isn't a very pretty dish but the optional add-ins are what make it look REALLY appealing!

Steps:
- Soak beans overnight or at least 4 hours prior to cooking.
- Combine beans, chicken broth, garlic and half of the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft, 3 hours or more.
- Add more chicken broth if necessary. In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add the cooked chicken and continue to simmer 1 hour.
- Serve topped with the cheese, tomatoes, guacamole, tortilla chips, etc -- .

Steps:
- In large saucepan, saute chicken, onion and garlic powder in oil til chicken is no longer pink.
- Add beans, chilies and seasonings and chicken broth.
- Bring to a boil.
- Reduce heat and simmer (uncovered) for 30 minutes.
- Remove from heat, stir in sour cream and whipping cream.
- Serve immediately.

- Season chicken cubes generously with salt and pepper. In a large pot, heat 2 tablespoons oil over medium-high heat and brown chicken on both sides in batches, do not crowd the pot. Remove browned chicken onto a plate; set aside.
- Add remaining 2 tablespoons of oil to the pot, reduce heat to medium and saute onions, garlic, and jalapeno until onions are translucent. Add cumin, coriander, and oregano continuing to saute, stirring constantly so spices don't burn, until spices become fragrant about 1-2 minutes.
- Add chicken broth, dissolved Better Than Bouillon, salsa verde, diced tomatoes, corn, green chilis, 1 teaspoon salt, 1/3 teaspoon black pepper, masa, and both types of beans. Add browned chicken and any juices that have accumulated on the plate into the pot. Bring to a boil, then reduce heat immediately and simmer for 40-45 minutes.

- In a soup pot or stock pot (one with a lid), over medium high heat, add the oil, chicken chunks, onion, salt, and garlic powder. Cook and stir until the meat is no longer pink and it looks cooked.*No need to pull out a thermometer here as the chicken will continue to cook as it simmers for 30 minutes. Just make sure the chicken is white and that it looks cooked.
- Add the chicken broth, drained & rinsed beans, green chilies, cumin, oregano, and pepper to the pot. Bring to a boil. Once boiling, reduce heat to medium low, cover with a lid and let it simmer for 30 minutes.*I blend up the chicken broth + green chilies in the blender before adding it into the soup pot. We don't like green chili chunks. This is totally optional depending on preference.
- When done simmering, add the sour cream and heavy cream. Stir to mix it all together and to let the sour cream melt into the chili. Heat for a few minutes before serving.
