INSTANT POT TUNA CASSEROLE

Instant Pot Tuna Casserole image

Instant Pot Tuna Casserole is the easiest way to make tuna casserole without soup. Dump ingredients in, press a button, and enjoy tuna noodle casserole comfort in under 30 minutes.

Provided by Traci The Kitchen Girl

Categories     Dinner Recipes     entree     Main Course

Time 25m

Number Of Ingredients 13

1/2 (12 ounce package) Uncooked Egg Noodles ((about 3 cups))
1 (5 ounce can) Tuna (drained)
1 cup Frozen Peas (or canned or fresh)
1 medium Carrot (diced (about 1 cup))
4 ounces Mushrooms (sliced (about 1 cup))
2 cups Chicken Broth
2 tablespoons Dried Onion Flakes (or 1/4 cup diced raw onion)
1/4 teaspoon Sea Salt
1/8 teaspoon Black Pepper
2 tablespoons Milk (any variety)
4 ounces Cheddar Cheese (shredded (about 1 cup))
1/2 cup Parmesan Cheese (shaved, shredded, or fresh grated)
(optional) Lemon (zested and juiced for garnish)

Steps:

  • Add EGG NOODLES to the Instant Pot. Then cover the noodles with TUNA, PEAS, CARROTS, MUSHROOMS, ONION, SALT, and PEPPER. Pour in CHICKEN BROTH.
  • Do not stir the ingredients. Instead, press down to submerge the noodles in the broth. (I like to use a potato masher for this).
  • Secure the Instant Pot lid, close the valve seal, and cook on manual HIGH pressure for 1 minute (yes, that's only one minute), followed by a 10-minute natural pressure release (NPR). DO NOT SKIP the NPR...the noodles are still cooking.
  • Carefully turn the pressure valve to release any remaining steam and open the lid.
  • NOTE: You will see a little excess liquid at first, but it helps incorporate the cheese in the next step AND the noodles will soak it up the longer it sits.
  • Stir in MILK, CHEDDAR CHEESE, and PARMESAN CHEESE. I used a minimal amount of cheese, so feel free to add more.
  • Serve warm with (optional) grated LEMON ZEST and a squeeze of LEMON JUICE.

  • ADD EVERYTHING TO A SKILLET: In a large 10-inch nonstick skillet (3 quart; 2.8-liter), pour in 2 cups of uncooked pasta; the drained tuna; milk, water, butter, and seasonings (dry mustard powder, paprika, garlic powder). Add salt and pepper to taste; I add 1 teaspoon fine sea salt and 1/4 teaspoon pepper.
  • BOIL: Bring to a boil over high heat, stir, and then cover with the lid. Reduce the heat to low or just a few notches above low.
  • SIMMER: Allow to simmer until the pasta is completely cooked through and the liquid has evaporated (about 10-15 minutes depending on your stovetop heat; check at 10 minutes). During the cooking time, stir the ingredients every 5-7 minutes to keep the pasta from sticking to the bottom. While pasta is simmering, grate the cheese.

  • In a 4- or 5-quart pot, heat the oil over medium heat and sauté the shallot (or onion) and garlic for 2-3 minutes.
  • Stir in the milk, water, broth, shells, salt and pepper. Bring to a simmer, and cook, uncovered, stirring often (at a simmer, not a rigorous boil) until the pasta is al dente, according to package directions (the pasta will continue to cook a bit over the next few minutes so don't overcook it in this step). Each brand of pasta will will differ slightly; depending on the brand, you may need to add a bit more liquid toward the end of cooking time but do so gradually so it isn't too soupy. There should be a bit of liquid left even after the shells are just tender. They'll continue to soften up and the liquid will be absorbed as other ingredients are stirred in and as it rests.
  • Stir in the milk or heavy cream, mustard, and lemon juice. Add the tuna and mix gently until combined. Stir in additional salt and pepper to taste, if needed. Let the pasta rest for 5-10 minutes - it will thicken up and get nice and creamy.
  • Sprinkle with parsley and serve with extra lemon wedges - it is delicious with lemon juice drizzled over the top of individual servings.

  • Bring a large pot of salted water to a boil over high heat. Add the egg noodles and cook per package directions. A minute or so before the noodles are done, add the frozen peas to the boiling water. Once the noodles are cooked to your liking, drain the noodles and peas and set aside.
  • While the noodles are cooking, set another large pot, pan, or skillet over medium heat. Add the butter and swirl until melted. Stir in the flour and continuously whisk for 2 minutes. Continue to whisk vigorously as you slowly and gradually pour in the milk. Stir until smooth and bring to a simmer, whisking regularly to prevent the bottom from burning. Cook for a minute or two until the sauce has thickened. Remove from the heat, stir in the salt, garlic powder, and pepper. Gradually blend in the cheddar until melted, and then stir in the drained tuna and the parsley, if using.
  • Stir the drained noodles and peas into the sauce and mix until everything is well coated. If desired, combine the cracker crumbs and the Parmesan in a small bowl and evenly sprinkle the mixture over the entire skillet. Serve immediately.
