2 teaspoons extra-virgin olive oil
1/2 pound sweet Italian sausage, casings removed, broken into 3/4-inch pieces
2 bone-in chicken breast halves (with wings attached if desired; 1 1/2 pounds total), skin removed, halved
Coarse salt and ground pepper
1 yellow onion, diced medium
1 pound waxy potatoes, halved or quartered if large
3 stalks celery, cut into 1 1/2-inch pieces, plus leaves for garnish
2 tablespoons red-wine vinegar
1 tablespoon fresh oregano leaves

Steps:

  • In a large Dutch oven or heavy pot, heat oil over medium-high. Add sausage and cook, stirring occasionally, until brown all over, about 4 minutes. With a slotted spoon, transfer sausage to a dish. Season chicken on both sides with salt and pepper and add to pan, meaty side down. Cook until golden brown on both sides, 10 minutes, flipping once. Transfer chicken to dish with sausage.
  • Add onion, potatoes, and celery to pot and season with salt and pepper. Cook, stirring often, until onion is soft, 3 to 5 minutes. Return sausage and chicken, meaty side up, to pot and add 1 cup water. Bring to a boil, then cover and reduce heat to low. Simmer until potatoes are tender and chicken is cooked through, about 20 minutes.
  • Remove lid and increase heat to high; boil until liquid is reduced to 1/2 cup, 5 minutes. Transfer chicken to a platter. Add vinegar and oregano to vegetables and sausage and stir to combine. With slotted spoon, transfer vegetables and sausage to platter with chicken and top with celery leaves. Transfer sauce to a gravy boat and serve alongside chicken.

300g smooth potatoes (such as Desiree), cut into 2cm pieces
1 tablespoon olive oil
2 large chicken thigh fillets, boneless and skins removed, quartered (or use two chicken breasts if preferred, sliced into large pieces)
60g chorizo, cut into 1cm thick discs
1 onion, thinly sliced
1 red pepper, thinly sliced
2 garlic cloves, chopped
2 tsps cajun seasoning
1 tin chopped tomatoes
200ml chicken stock
Black pepper and salt, to season

Steps:

  • Cook the potatoes in salted water and drain.
  • Heat the oil in a small frying pan and brown the seasoned chicken pieces on a medium heat until golden and crispy, about 3 minutes each side. Remove from the pan and add the chorizo sausage. Cook for several minutes until crispy, and that delicious smoky paprika flavour has been released.
  • Lower the heat and add the onions to the pan, cooking until soft, about 10 mins. Add the pepper, garlic and spices and cook for another 5 minutes. Then, add the potatoes, tomatoes, chicken and stock and bring to the boil. Reduce to a simmer and cook for 20 mins, checking that the chicken is cooked through. You can also place the mixture in a Dutch oven or casserole dish and simmer it slowly in the oven.
  • Season to taste before serving with crusty bread and perhaps some sour cream - the ideal weeknight dinner recipe!

4 bone-in skin-on chicken thighs (about 1 1/2 lb total)

1 1/4 lb medium Yukon gold potatoes (3 or 4), cut into 1/4-inch slices
2 cups refrigerated sauerkraut, drained, rinsed (from 16-oz bag)
1 cup Progresso™ chicken broth (from 32-oz carton)
Sour cream, as desired

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Place chicken in Dutch oven; cook 9 to 11 minutes, turning once, until deep golden brown on both sides. Remove chicken from Dutch oven.
  • Add kielbasa to Dutch oven; cook 2 to 3 minutes, stirring frequently, until lightly browned. Remove kielbasa. Add onion; cook 5 to 8 minutes, stirring frequently, until onion starts to brown. Add potatoes, sauerkraut, kielbasa, broth, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper to Dutch oven; stir. Place chicken on top of potato and sauerkraut mixture. Heat to boiling. Reduce heat to low; cover and simmer 25 to 30 minutes or until juice of chicken is clear when thickest part is cut to bone (at least 165°F) and potatoes are tender. Serve with sour cream.

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

1 tablespoon (15 ml) olive oil
10-12 chicken thighs, skin on, bone-in
salt and pepper to taste
Herbs de Provence, to taste
12 ounces (340g) small "Dutch Baby" potatoes, sliced in half
2 tablespoon (15g) of flour
1 cup (240ml) chicken broth
¼ cup (60ml) white wine (or ¼ cup more broth)
2 teaspoon (10ml) Dijon Mustard
1 teaspoon (5ml) Worcestershire Sauce
2 garlic cloves, minced
5 sprigs fresh thyme

Steps:

  • Preheat oven to 325F (162C). Measure out all your ingredients so you are ready to go. This recipe happens fast and it will help if everything is pre-measured.
  • Season chicken (skin side) with salt, peppers, and Herbs de Provence.
  • Heat olive oil in a large braiser. Sear chicken, skin side down until golden brown, flip, and cook for 2-3 minutes more. Transfer to a plate and set aside. It will finish cooking in the oven.
  • Sauté potatoes in chicken fat until caramelized and golden brown. Transfer potatoes to a bowl and set aside.
  • Whisk together the broth mixture in a Pyrex pitcher and set aside
  • Add flour to remaining chicken fat and whisk until paste forms. If you have no more chicken fat you can add 2 tbsp. (30g) of butter to create more fat. Cook paste for 1 minute.
  • Add broth mixture and whisk to combine. Add the fresh thyme. Season to taste with salt and pepper.
  • Place potatoes in sauce, add chicken on top. Cover and bake for 40 minutes.
  • Remove from the oven, remove lid and spoon sauce on top, bring to the table and serve!

3 pounds chicken pieces (a combination of thighs, drumsticks and bone-in breasts)
1/2 cup Brazilian sofrito
8 ounces bacon, cubed
1/4 cup unsalted butter
1/2 cup white wine
20 ounces pearl onions, peeled
2 pounds baby potatoes
1 pound sausage (I use calabresa sausage, but you can use whatever kind you like), cut into 2-inch pieces
Salt and pepper, to taste
1/4 cup chopped parsley

Steps:

  • In a large bowl, combine the chicken with the sofrito. Cover and refrigerate for 12-24 hours.
  • Preheat oven to 400 degrees F.
  • In a large skillet, over medium heat, cook the bacon until golden brown, about 8 minutes. Add the butter and cook until melted. Then, add the white wine and cook, scraping the browned bits from the bottom, until the wine is reduced by half. Reserve this mixture.
  • Remove the chicken from the marinade and arrange, skin side up, in a deep baking dish.
  • Add the baby potatoes to the chicken marinade, mixing well so they get coated. Transfer the potatoes and marinade to the baking dish, with the chicken.
  • Arrange the sausages and onions around the chicken.
  • Pour the wine mixture with the bacon over the chicken, sausage and potatoes.
  • Cover with foil and roast in the preheated oven for 1 hour. Then, remove the foil, turn the sausages so they cook evenly, and continue roasting for 30 minutes, basting at least once with the juices, or until golden brown. You can also broil for a couple of minutes if you want a deeper golden brown color.
  • Garnish with chopped parsley and serve!

1.5 lb about 3 large potatoes, russet or new
1 medium onion (peeled and quartered, layers separated)
2 red bell peppers (seeds removed and cut into 1 inch pieces)
2 tsp extra virgin olive oil
kosher salt and fresh cracked pepper to taste
1 tsp chopped rosemary (fresh or dry)
1/2 tsp garlic powder
olive oil spray (I use my Misto)
1 lb Italian chicken sausage

Steps:

  • Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.
  • Preheat oven to 375°F.
  • Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
  • In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.
  • Use a spoon to toss so nothing sticks or burns.
  • Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through.
  • Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.

  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, until browned, about 2 minutes. Remove to a plate with a slotted spoon.
  • Add the potatoes to the skillet and cook until lightly browned, 3 to 4 minutes. Add the onions and fennel and stir to combine; season with 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions and fennel just begin to soften, 4 to 5 minutes.
