One-pot chicken & cilantro lime rice is as simple as it sounds. Pan-seared chicken thighs cooked in a dutch oven with fresh cilantro and lime jasmine rice.

4-6 medium skin-on, bone-in chicken thighs
3 cups of water
2 cups jasmine or basmati rice, rinsed
2 tablespoons butter
4 garlic cloves, finely chopped
2 limes, juice squeezed
1/3 cup finely chopped cilantro
2-3 tablespoons vegetable or canola oil
Salt and pepper, to taste

Steps:

  • Pat chicken dry and season liberally all over with salt and pepper. Add 2-3 tablespoons of oil to a cold dutch oven. Swirl to coat the bottom of the pot. Arrange chicken, skin side down, and turn to medium heat.
  • Cook chicken, undisturbed, until the skin is golden and easily releases from the pot, about 8-10 minutes. Flip thighs and cook 3-5 minutes longer. Transfer chicken to a plate and remove pot from the heat for 2-3 minutes to cool. If there is a lot of excess juice and oil in the pot, you can discard some if you'd like. Leave a little behind for flavor.
  • Return dutch oven to the heat and turn to low. Melt butter and then add garlic, simmering for 1 minute. Add rice and stir to coat in butter. Season with salt and pepper to taste.
  • And 3 cups of water and mix. Nestle chicken back into the rice mixture skin side up. Increase heat to medium and bring liquid to a simmer. As soon as it bubbles, cover pot, reduce heat to low, and cook for 25 minutes. Remove from heat and let chicken and rice sit for 10 minutes with the lid on.
  • Remove chicken from the pot and add lime juice and cilantro. Mix well with a fork and serve with chicken.

Adapted from Diana Henry's "From the Oven to the Table: Simple Dishes That Look After Themselves," this true one-pot wonder of chicken, black beans, rice, tomatoes and chiles will make everyone at the table happy. As the chicken thighs roast, the cumin-scented rice soaks up all of the delicious juices. When the timer chimes, the rice and chicken emerge from the oven perfectly cooked. Be sure to use a 12-inch skillet here; a smaller or larger pan might result in under- or overcooked chicken or rice. Leftovers, if you have any, are great in tacos or enchiladas.

8 bone-in, skin-on chicken thighs
Flaky sea salt and black pepper
2 tablespoons extra-virgin olive oil or peanut oil
1 large yellow or white onion, chopped
2 green or red bell peppers, halved, seeded and sliced
2 1/2 cups chicken stock
2 red Fresno chiles or jalapeños, halved, seeded and chopped
1 (3-inch) cinnamon stick, broken in half
3 garlic cloves, finely grated
1 teaspoon ground cumin
1 (15-ounce) can black beans, rinsed
1/3 pound cherry tomatoes, halved
1 cup basmati rice, rinsed in a sieve until the water runs clear
3 tablespoons chopped cilantro leaves
Lime wedges, pickled chiles, sliced fresh chiles, sour cream and sliced avocado, for serving

Steps:

  • Heat the oven to 375 degrees. Season the chicken with salt and pepper on both sides. Heat the oil in a 12-inch ovenproof skillet (the pan size is very important) over medium-high. Brown the chicken on both sides to give it good color, 3 to 5 minutes per side. Transfer to a plate. Add the onion and bell peppers to the pan and sauté until just starting to soften, about 5 minutes. Season with salt and pepper.
  • In a small saucepan, bring the chicken stock to a boil. Meanwhile, add the Fresno chiles or jalapeños, cinnamon, garlic and cumin to the skillet and cook for about 2 minutes, then add the black beans and cherry tomatoes. Season generously with salt and pepper. Sprinkle the rice on top in an even layer. (It's important that the black beans are beneath the rice and chicken. The rice will burn otherwise.) Add the stock and return the chicken to the pan, skin-side up.
  • Bake, uncovered, for 40 minutes. The chicken should be lovely and golden, the stock should be absorbed and the rice should be tender. Sprinkle with the cilantro. Serve with lime wedges, pickled chiles, sliced fresh chiles, sour cream and avocado (squeeze some lime juice over the avocados in a bowl and sprinkle with salt and pepper).

½ onion, diced
4 cloves garlic, minced

Steps:

  • Season both sides of the chicken thighs with salt and pepper.
  • In a large skillet, add the olive oil and place the chicken skin side down for about 5 minutes or until skin is golden brown. Flip the chicken and cook for another 3 minutes.
  • Take the chicken out and add the onions and cook until they're translucent, about 5 minutes.
  • Add the rice, stir to coat in the oil and onions, and toast for 3 minutes.

juice from 2 limes
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
8-10 boneless, skinless chicken thighs
1/2 cup diced onion
1 red pepper, diced
1 cup long grain white rice
1 cup black beans, drained and rinsed
2 cups chicken broth
chopped cilantro, for serving (optional)
chopped green onions, for serving (optional)
lime wedges, for serving (optional)

Steps:

  • In a shallow baking dish, whisk together the olive oil, lime juice, salt, pepper, cumin, chili powder, paprika, garlic and cilantro.
  • Add the chicken and turn it to coat with the marinade on all sides.
  • Cover the dish tightly and refrigerate for at least 30 minutes and up to 4 hours.
  • Heat a large skillet (with a lid) on the stove over medium heat.
  • Place the chicken thighs, including the marinating liquid, into the hot skillet.
  • Brown them, turning once to brown both sides, 2-3 minutes per side.
  • Remove the chicken to a plate (leave any liquid in the pan).
  • Add the chopped onion and red pepper to the skillet and saute for about 1 minute to soften.
  • Add the rice and continue cooking, stirring, for one minute.
  • Add the black beans and chicken broth and stir to combine.
  • Return the chicken to the pot on top of the rice. It will be partially submerged in the liquid but not completely.
  • Bring the liquid to a boil over medium heat, then reduce the heat to a simmer and cover the skillet.
  • Cook at a simmer until the rice is tender, the chicken is cooked through, and most of the liquid has been absorbed, about 20 minutes. There will still be some liquid in the pot but this is okay!
  • Serve with chopped fresh cilantro and chopped green onions.

  • Preheat the oven to 375 degrees F. Place a 12" ovenproof skillet over medium high heat. (You MUST use a 12" skillet for the rice to cook properly.) Season the chicken thighs on both sides with salt and pepper.
  • Working in two batches, add the chicken sides skin side down to the pan. Cook for about 5-7 minutes, until the skin is lightly browned. Remember we're putting these in the oven for an hour, so they will continue to brown. Flip the thighs over and cook for 3-5 minutes more, until they are just seared. You may need to remove a bit of the fat in between batches. Set thighs aside on a plate.
  • While the chicken is browning, slice the onions and peppers thinly. Slice the tomatoes in half, finely dice the jalapeños, and use a microplane grater to grate the garlic. (Remove seeds and ribs from the jalapeños if you like to reduce the spiciness.)

  • Heat a large skillet on medium-high heat until hot for 2 minutes. Add olive oil to pan. Season chicken thighs with salt and pepper on both sides. Place chicken skin side down on pan and cook for 5-6 minutes or until golden and crispy. Flip and cook on other side for 5-6 minutes.
  • Add onions to pan and cook along with the chicken until the onions are golden and soft (2-3 minutes). Stir in garlic, salt, pepper, cumin and paprika and cook for just 30 seconds. Add water and cover until water boil, slightly reduce heat and simmer chicken for 10 minutes. Add black bean and rice. Cover the skillet with the lid and simmer for 15 minutes, covered, until the rice is cooked through.
  • Remove the chicken from the skillet. Mix in the 1 tablespoon of lime juice and fresh cilantro into the cooked rice. Taste, and add more salt and/or another small amount of lime juice.
