Steps:
- Combine ginger and sugar with 4 cups water, or enough to cover, in a medium saucepan. Place over medium-high heat until mixture comes to a boil. Reduce to a simmer; stir until sugar dissolves completely. Continue to simmer about 20 minutes. Remove from heat; let cool to room temperature, at least 2 hours. Strain out the ginger, and discard.
- Combine the ginger syrup, lime juice, and seltzer in a pitcher. Pour into ice-filled glasses, and serve immediately.

- For ginger syrup:
- Bring one 3" piece ginger, peeled, thinly sliced, 1/2 cup raw or granulated sugar, and 1/2 cup water to a boil in a small saucepan; reduce heat and simmer 5 minutes. Let cool. Strain syrup through a fine-mesh sieve into a small jar or bowl; discard ginger.
- DO AHEAD: Syrup can be made 1 week ahead. Cover and chill.
- For cocktails:
- Pour 1/4 ounces ginger syrup in each coupe glass. Dividing evenly, top off with two 750-milliliter bottles chilled Prosecco (about 5 ounces per glass) and garnish each with a thin clementine or orange slice.

- In a small saucepan stir together 1 cup water, the sugar, ginger, and lime zest over medium until the sugar dissolves. Let stand, covered, 30 minutes. Pour through a fine-mesh sieve into a bowl.
- Use a melon baller to remove fruit from half the melon. Add to syrup; stir to coat. Chill, covered, 1 hour.
- Meanwhile, remove rind from remaining melon half; cut melon into small chunks. Puree in a blender until smooth. Transfer to a 2-quart pitcher. Cover; chill 2 hours or until ready to serve.
- To serve, add melon balls with syrup and lime juice to puree in pitcher. Add sparkling water. Serve with lime slices. Makes 8 cups.

- To sugar the rims of the champagne glasses, take two small plates and squeeze some lime juice on one, and place the granulated sugar on the other.
- Dip the rim of each glass in the lime juice first. Then, immediately dip it into the sugar, so it sticks. Allow to dry for one minute.
- Add 2 TBS of ELEMENT [SHRUB] Cranberry Hibiscus Shrub into to each glass. Then, top each glass off (almost to the top) with ginger ale.
- Garnish each drink with a few fresh cranberries and half a slice of lime dipped in the remaining sugar. Make a small cut in the middle of each half slice to help it stay on the glass. Squeeze the lime into the drink before enjoying, and have a happy holiday!

- Peel ginger. Slice two thin slices and reserve for serving. Finely grate the remaining ginger. Peel pineapple and dice most of it finely, cutting out some larger decorative pieces to reserve for serving. Heat up a frying pan over medium-high heat and fry diced pineapple until golden.
