1 pound of chicken breasts (about 2 large, cut into one inch chunks)
2 tablespoons minced garlic
1/2 cup diced onion
1 tablespoon olive oil
1 cup low sodium chicken broth
1/2 cup water
8-10 ounces uncooked spaghetti (about 1/2 of a box)
1 teaspoon Italian seasoning
2 bay leaves
1 24-ounce jar spaghetti sauce
salt and pepper (to taste)
1 cup fresh shredded Parmesan cheese (or more, to taste)
fresh minced parsley (for garnish)

Steps:

  • Heat a small amount of olive oil in a 5 quart pot or skillet over medium-high heat and add onion. Stir and cook for a few minutes, until onion becomes translucent. Add garlic and cook for about 30 seconds.
  • Add chicken and season with salt and pepper. Cook chicken until browned on all sides, but not completely done.
  • Add spaghetti sauce, chicken broth, water and seasonings and bring to a boil.
  • Add pasta and a couple pinches of salt; stir. Bring to a boil, cover, and reduce heat to low.
  • Simmer for about 17-20 minutes, stirring at least once. Add more water or chicken broth if it seems dry.
  • Remove from heat and stir in shredded Parmesan, reserving about 2 tablespoons for the garnish, if desired.
  • Divide into bowls, sprinkle with fresh grated Parmesan cheese and minced parsley and serve.

1/4 cups olive oil (or butter)
1 medium onion (diced)
1 bell pepper (diced)
4 cloves garlic (minced)
2 boneless skinless chicken breasts (sliced)
14 oz canned tomatoes (roasted diced preferred (1 can))
2 cups chicken broth (no sodium preferred)
1.5 cups milk
1 lb spaghetti (or pasta of choice)
2 cups Parmigiano Reggiano cheese (shredded, or mozzarella/white cheddar)

Steps:

  • Heat the oven to 375°F. In a large dutch oven or other oven proof dish, melt the butter or heat the oil over medium heat. Add the onion and cook until soft, 3-4 minutes. Add the red pepper and garlic and cook until fragrant, about 1 minute.
  • Add the chicken to the pan and cook flipping, until lightly golden brown, about 3-4 minutes. They will continue to cook in the sauce.
  • Stir in the diced tomatoes, chicken broth, milk, and spaghetti (break it to fit into the pan if needed) to the pan and bring to a boil.
  • Reduce the heat and simmer, stirring occasionally so the pasta doesn't stick to the bottom of the pan, until the pasta is cooked through and tender, about 8-10 minutes. If too thick, slowly add 1/4 cup chicken stock until desired consistency is reached. Season with salt and pepper.
  • Stir in half of the shredded cheese, then top with the remaining cheese and bake in the oven until bubbly and melted, about 20 minutes. Let cool slightly and enjoy! Optionally, you can enjoy the spaghetti as is and not bake it.

2 cups celery (chopped)
1 cup green bell pepper (chopped)

2 cups chicken stock

Steps:

  • Boil chicken, onion, celery and green pepper for one hour. Remove chicken and strain broth. When cool, remove chicken from bones.
  • Cook spaghetti in broth. Strain and reserve 2 cups broth.
  • Mix with spaghetti, olives, soups, Rotel tomatoes, olives and season to taste. Add 1/2 of cheese.
  • Pour into lightly greased 3quart dish and sprinkle remaining cheese on top.
  • Bake at 350 for 30 minutes.

2 1/2 pounds/1 kilogram bone-in, skin-on chicken thighs (4 to 6 thighs), deboned
Kosher salt and black pepper
1 large yellow onion (about 8 ounces/220 grams), cut into 1/2-inch/1-centimeter dice
3 tablespoons tomato paste
3 garlic cloves, finely chopped
2 tablespoons fresh thyme leaves
2 cups/480 milliliters boiling water
8 ounces/230 grams spaghetti, broken into thirds
1/3 lightly packed cup finely grated Parmesan (about 3/4 ounce/20 grams)
3 tablespoons/20 grams fresh bread crumbs
1/2 cup/10 grams finely chopped fresh parsley

Steps:

  • Heat oven to 425 degrees Fahrenheit/220 degrees Celsius.

  • While the pasta is in the oven, in a small bowl, mix together the Parmesan, bread crumbs, parsley, lemon zest and remaining 1 tablespoon thyme.
  • After the pasta has baked for 30 minutes, remove it from the oven and reset the temperature to a high broil (grill) setting. Sprinkle the Parmesan bread crumbs over the pasta and chicken, drizzle with the remaining oil and return to the center rack to broil (grill) for 3 to 4 minutes, until nicely browned and crisp. Leave to settle for about 5 minutes before serving warm, directly from the pan.
