Lasagna has never been easier! This quick riff on the classic pasta bake starts in your Dutch oven -- and stays there -- for a meaty, cheesy delight you'll want to make again and again.

1 container (15 oz) whole-milk ricotta cheese
2 cups shredded mozzarella cheese (8 oz)
1 jar (26 oz) Muir Glen™ organic tomato basil pasta sauce
2 tablespoons butter
1 lb bulk mild Italian sausage
1 cup diced red onion
1 teaspoon salt
1/2 teaspoon ground black pepper
4 oz no-boil lasagna noodles, broken in 3 pieces (from 8-oz package)
1/2 cup shredded Parmesan cheese
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Heat oven to 425°F. In medium bowl, mix ricotta and mozzarella cheeses; set aside.
  • Place pasta sauce in large bowl; set aside. In 5-quart ovenproof Dutch oven, melt butter over medium-high heat. Cook sausage, onion, salt and pepper in butter 6 to 8 minutes, stirring frequently, until sausage is cooked through and onion softens; drain. Stir sausage mixture into sauce in bowl.
  • Spread 2 cups sauce mixture in bottom of same Dutch oven. Top with one-third of the lasagna noodles. Top with half of the ricotta mixture. Pour 1 cup of the reserved sauce mixture over ricotta mixture. Top with another one-third of the lasagna noodles. Top with remaining ricotta mixture. Top with remaining lasagna noodles, then top with remaining sauce mixture. Top with Parmesan cheese.
  • Cover; bake 15 minutes. Remove cover; bake 10 to 15 minutes longer or until pasta is tender and mixture is browned on edges. Top with basil.

28 ounces diced tomatoes (undrained)

Steps:

  • In a large pot over medium high heat, brown the Italian sausage with the chopped onion until the meat is no longer pink. Stir in the Dijon mustard, garlic powder, oregano, thyme, basil, onion powder, salt, and pepper.
  • Once the sausage is browned and seasoned, add in the diced tomatoes, tomato paste, lasagna noodles, and beef broth.
  • Bring mixture to a boil. Cover, turn down heat, and cook until lasagna noodles softened, about 12-15 minutes.
  • While the noodles cook, take the mozzarella cheese and ricotta cheese and mix them together in a separate bowl.

1 yellow onion, diced
4-5 garlic cloves, minced
1/4 - 1/2 teaspoon red pepper flakes
1 24 oz. jar Prego Traditional Italian Sauce
8-10 cups low sodium chicken broth, divided
1 14 oz. can can crushed tomatoes
2 tablespoons tomato paste
2 teaspoons balsamic vinegar
1 1/2 teaspoons granulated sugar
1 tablespoon dried basil
1 tsp EACH dried parsley, dried oregano, salt
1/2 teaspoon pepper
1 whole bay leaf
10 uncooked lasagna noodles (broken into approx. 1-2 inch pieces*)
1/2 cup heavy cream,optional**
shredded mozzarella cheese
freshly finely grated Parmesan cheese

Steps:

  • Heat large Dutch oven/large soup pot over medium high heat. Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and saute for 30 seconds. Drain off any excess fat.
  • Add Prego Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).

16 ounces/1 pound lasagna noodles (broken into smaller pieces)
24 ounces spaghetti sauce
24 ounces water (just fill the sauce jar with water)
20 ounce bag of frozen Italian meatballs (about 40 small meatballs)
16 ounces ricotta cheese
16 ounces/4 cups shredded mozzarella cheese (divided in half)

Steps:

  • Add everything except 2 cups of shredded mozzarella to a large broiler safe pot or dutch oven. We used a 6.5 quart enameled cast iron dutch oven.
  • Stir everything together, it will be watery, don't worry. Sprinkle remaining cheese over top.
  • Cover and cook at 375 degrees for 45 minutes. If your meatballs are frozen, you may need to add an additional ten minutes of cook time. Remove cover and turn on broiler until cheese browns and crisps a little. Watch closely so it doesn't burn!
  • Remove from oven and stir. It will seem a little watery at first, but let it rest 3 - 5 minutes and it will be perfect. My kids devoured the entire pot for lunch!

2 ounces Parmesan cheese, finely grated (about 1¼ cups)
⅛ teaspoon ground nutmeg
1 ¼ teaspoons kosher salt, divided
1 tablespoon olive oil
1 pound ground chuck
1 medium-size yellow onion, chopped (about 1 cup)
3 medium garlic cloves, finely chopped (about 1 Tbsp.)
2 (15-oz.) cans diced tomatoes
6 cups chicken stock
1 ½ tablespoons granulated sugar
8 ounces uncooked lasagna noodles, broken into 1½- to 2-inch pieces
1 tablespoon red wine vinegar
4 ounces low-moisture mozzarella cheese, shredded (about 1 cup)
¼ cup small basil leaves

Steps:

  • Stir together ricotta, Parmesan, nutmeg, and ¼ teaspoon of the salt in a medium bowl. Cover and refrigerate until ready to serve.
  • Heat oil in a large Dutch oven over medium-high. Add ground chuck. Cook, stirring and breaking up into pieces, until browned and just cooked through, about 3 minutes. Using a slotted spoon, transfer beef to a small bowl lined with paper towels; set aside.
  • Do not wipe Dutch oven clean. Add onion to Dutch oven. Cook over medium-high, stirring occasionally, until softened and starting to caramelize, about 4 minutes. Add garlic. Cook, stirring constantly, until fragrant, about 1 minute. Stir in diced tomatoes and stock; bring to a boil over high. Stir in sugar and remaining 1 teaspoon salt. Add lasagna pieces. Cook, stirring occasionally, until noodles are just cooked through and almost al dente, about 8 minutes. Stir in browned beef. Remove from heat, and stir in vinegar. Divide soup evenly among 4 bowls; top with mozzarella and dollops of reserved ricotta mixture. Top bowls with basil leaves before serving.

  • In a large pot over medium high heat add in olive oil, Italian sausage and onion.

  • Add in tomato sauce, fire roasted tomatoes and beef broth.

  • Reduce heat to medium low and simmer, covered, for 20 minutes.
  • Bring a separate pan of water to a boil and season water with salt. Cook the lasagna noodles until your desired tenderness. When noodles are done cooking drain and set them aside.
  • After 20 minutes remove the cover from the soup pot.
  • Add pasta to soup and serve. Garnish with mozzarella cheese, ricotta cheese and fresh basil
  • Store leftovers in refrigerator
