One Pot BBQ Chicken and Bacon Pasta image

This One Pot BBQ Chicken Pasta is smoky and savory, with tender chicken breast, crispy bacon, and your favorite BBQ sauce -- an easy one pan dinner idea the family will love!

2 slices bacon (chopped)
1/2 medium onion (finely chopped)
2 boneless skinless chicken breasts (chopped)
1 tsp minced garlic
1/2 tsp salt
1/8-1/4 tsp red pepper flakes
2 cups chicken broth
398 ml canned diced tomatoes ((14oz))
1/2 cup milk
1/3 cup barbecue sauce
3 cups rotini (or other short pasta, whole wheat or white)
1 1/2 cups shredded cheese (marble or mozza cheese)

Steps:

  • In a large pan, cook bacon and onion until onion is lightly browned and bacon is near crispy.
  • Add the chicken (we don't drain the fat as it's going to prevent our chicken from sticking!), and cook until just browned on the outside, 2-3 minutes, stirring occasionally.
  • Add the garlic, salt and red pepper flakes and cook 1 minute.
  • Add the chicken broth and scrape the bottom of the pan with a wooden spoon to remove any stuck on bits.
  • Add the tomatoes, milk and barbecue sauce and stir until combined. Stir in the pasta and bring to a simmer over medium-high heat.
  • Reduce heat to medium-low, and cook on a low simmer, stirring often, until pasta is al dente (you may wish to cover the pan near the end of the cook time if the pasta is no longer submerged in the liquid).
  • Stir in cheese and serve.

My family would eat this every week. It's a great go-to easy one-pot meal that is complete and satisfying. And cleanup is a breeze!

4 slices bacon
¾ pound chicken breasts, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 medium shallot, finely chopped
1 clove garlic, minced
2 cups water
1 cup whole milk
4 cups elbow macaroni
1 tablespoon ranch dressing mix
3 cups broccoli florets
1 (8 ounce) package shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
  • Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
  • Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.
  • Return chicken to the Dutch oven and add broccoli. Cook until pasta is tender and chicken is cooked through, 3 to 4 minutes. Stir in Cheddar cheese and sour cream to combine. Crumble cooked bacon over the top and serve hot.

1 lb bacon, cut into 1/2-inch thick pieces
1 lb chicken, cubed
1/2 cup chopped onion
3 garlic cloves, minced
1/4 cup flour
1 tablespoon dried minced onion
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon pepper
4 cups chicken broth
1 cup water
3 cups whole milk
1 lb bow tie pasta
1 (10 ounce) package frozen chopped spinach, thawed and drained
3/4 cup grated parmesan cheese, divided

Steps:

  • In a large stockpot, saute bacon over medium-high heat until crisp. Remove with a slotted spoon to a medium bowl.
  • Reduce heat to medium. Add chicken to the bacon fat and cook until center is no longer pink. Remove with a slotted spoon to the same bowl as the bacon.
  • Saute onion in bacon fat for 1 minute. Add garlic and saute for an additional minute.
  • Sprinkle in the flour, dried minced onion, salt, onion powder, garlic powder, parsley, basil, oregano and pepper. Cook and stir for 1 minute.
  • Stir in chicken broth, water and milk. Increase heat to medium-high. Bring to a boil. Add pasta. Cook for 9-11 minutes or until al dente, stirring every 1-2 minutes to prevent the pasta from sticking to the bottom.
  • Remove from heat and stir in spinach, breaking it up to spread throughout the pasta and sauce. Stir in 1/2 cup Parmesan cheese until it's incorporated. Stir in the bacon and chicken.
  • Sprinkle remaining 1/4 cup Parmesan cheese on top. Serve warm.

Toss chicken and bacon with ribbons of tagliatelle in a deliciously creamy sauce to make this easy pasta dish. Serve with a green salad for an easy supper

2 tbsp olive oil
1 tbsp butter
1 onion, finely chopped
1 large garlic clove, finely grated
200ml double cream
100g mascarpone
75g parmesan, finely grated
1 chicken stock cube
2 cooked chicken breasts (about 210g), shredded
8 rashers cooked streaky bacon (about 25g), roughly chopped
300g tagliatelle
¼ small bunch of parsley, finely chopped
green salad, to serve

Steps:

  • Heat the oil and butter in a medium saucepan over a low heat and fry the onion for 10 mins, or until softened and translucent. Add the garlic and cook for 2 mins more. Add the cream, mascarpone, parmesan and stock cube. Give it a stir and add the cooked chicken and bacon to heat through.
  • Meanwhile, cook the pasta following pack instructions. Reserve 100ml of the pasta water. Toss the pasta in the creamy sauce and enough of the reserved water to loosen. Season with black pepper. Top with the parsley and serve with a green salad.
