CLASSIC WHITE LOAF
Once you've mastered this basic loaf, the bread-making world's your oyster

Steps:
- Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough - add a splash more water if necessary. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
- Heat oven to 220C/fan 200C/gas 7. Knock back the dough by tipping it back onto a floured surface and pushing the air out. Mould the dough into a rugby ball shape that will fit a 900g loaf tin and place in the tin. Cover with a clean tea towel and leave to prove for 30 mins. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base. Leave the bread on a wire rack to cool completely. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month.

Steps:
- Preheat oven to 375.
- Separate the egg whites from the yolks. Add Cream of Tartar to the whites and beat until soft peaks are achieved.
- In a food processor combine the egg yolks, 1/3 of the beaten egg whites, melted butter, almond flour, baking powder and salt (Adding ~6 drops of liquid stevia to the batter can help reduce the mild egg taste). Mix until combined. This will be a lumpy thick dough until the whites are added.
- Add the remaining 2/3 of the egg whites and gently process until fully incorporated. Be careful not to overmix as this is what gives the bread it's volume!
- Pour mixture into a buttered 8x4 loaf pan. Bake for 30 minutes. Check with a toothpick to ensure the bread is cooked through. Enjoy! 1 loaf makes 20 slices.

Steps:
- In a small saucepan, combine the milk, butter, and the sugar. Place over medium-high heat and cook, stirring, until the butter has melted. Remove from the heat and cool to about 110 degrees F. Sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
- Meanwhile, in large bowl, whisk together the flour and salt and set aside.
- Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the flour mixture to a well-floured work surface and knead until a soft elastic dough is formed, about 10 minutes.
- Transfer the dough to a lightly oiled bowl, cover with a kitchen towel, and place in a warm spot in the kitchen, until puffed and doubled in size, about 2 hours.
- Transfer the dough to the work surface and, using your hands, gently flatten into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping side to seal and make a seam. Place seam side-down in a buttered 9x5 loaf pan, cover with a kitchen towel, and return to the warm spot until the dough has just risen about 1 1/2 inches over the top of the pan, about 2 to 2 1/2 hours.
- Place a rack in the center of the oven and preheat to 400 degrees F. Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
- Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles, on the bottom and top, or an instant read thermometer inserted in the center registers about 190 degrees F., about 15 minutes.
- Transfer the bread loaf to a cooling rack and cool completely before slicing.

HOW TO BAKE A CLASSIC WHITE LOAF OF BREAD - EASY
From food.onehowto.com
- Bring together all the ingredients in a large bowl: first add the softened butter and mix with salt and sugar, then add the sieved flour as well as yeast, water and milk and continue mixing until you get a homogeneous paste. When that's done, cover the bowl with transparent film or paper and leave to stand for about 10 minutes so the yeast ferments and the dough grows.
- Then remove the dough from bowl and place it over the marble or any other smooth surface where you can work. You need to knead the dough with your hands so that it is softened, nor should it stick on the table or to your hands (which is why it is not mandatory to flour the work surface).
- After kneading the dough for about 10 minutes, wrap it with a cloth or put it back in the bowl covered with plastic wrap and leave to rest for an hour and a half so that it rises.
- After this time you will have to knead the dough again so that excess gas is removed from the inside your classic white loaf. Releasing the gas helps to avoid too many bubbles in the bread crumbs.

- Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess., Stir together all of the ingredients (except the cornmeal) in a large bowl, starting with 4 1/2 cups of the flour. Use a sturdy spoon, or your stand mixer equipped with the beater paddle. Mix until everything comes together in a rough, shaggy mass of dough.
- If you’re kneading the dough by hand, turn it out onto a lightly floured surface, using some of the additional 1/2 cup of flour called for. Fold the far edge of the dough back over on itself towards you, then press it away from you with the heels of your hands. Rotate the dough 90°. Repeat this fold-press-rotate process with a rhythmic, rocking motion for about 6 minutes. When fully kneaded, the dough will be bouncy and smooth.
- If you’re using your stand mixer, switch to the dough hook and knead the dough at medium speed for about 7 minutes, until it’s smooth, elastic, and feels a bit bouncy. If the dough doesn’t form a ball that clears the sides of the bowl, sprinkle in just enough of the additional flour to make this happen., Place the dough in a bowl that’s been lightly greased with vegetable oil or cooking spray; the bowl you started with is fine. Cover the bowl with plastic wrap or another airtight cover, and let the dough rise at room temperature until it's doubled in size, about 1 to 2 hours. If your kitchen is particularly cold (below 65°F), place the bowl of dough in your turned-off oven with the oven light on.

- KNEAD THAT BABY. 8-10 minutes either by hand or stand mixer. The dough is ready when it’s smooth, slightly tacky and forms a ball without sagging. If your dough is too dry or two sticky during the kneading process, add small amounts of water or flour to adjust.

- Grease and flour a loaf pan. You can line this with parchment instead if you wish, do whatever works for you. Form the loaf and place it in the pan. You can form the loaf either by eyeballing an oval shape that’ll fit in your baking pan, or by rolling out a rectangle that is the same width as the longest dimension of the loaf pan and rolling it into a cylinder.
- Using either a serrated knife or a very sharp razor, make a long shallow slash down the center of the loaf. You can do this in a different shape or pattern if you wish!
- Place in the oven and immediately turn the temperature down to 375F and bake for 40-45 minutes. It’s done when it’s golden brown and sounds hollow when tapped.

- Combine flour, instant yeast, sugar, and salt in the bowl of the stand mixer that has been fitted with a dough hook. Mix on low speed for 30 seconds.
- Combine flour, instant yeast, sugar and salt in the bowl of a food processor that has been fitted with a blade or dough blade. Pulse 10 times. With the food processer running, pour the water and olive oil into the feed chute. Continue processing until the dough forms a cohesive ball. Spin the dough ball 20 times and shut off the food processor. Remove the dough, form a smooth dough ball and place in a lightly oiled mixing bowl. Cover with a clean tea towel and let rise in a warm place for 15 minutes.
- Combine flour, instant yeast, sugar and salt with a whisk or fork in a large mixing bowl. Pour the warm water and olive oil into the flour mixture and use a sturdy spoon to combine into a shaggy dough. Use your hands to knead for 8 minutes*. After kneading for 8 minutes, cover the bowl with a clean tea towel and let rise in a warm place for 15 minutes.
- Turn dough out onto a clean surface and divide in half. Form each half into a ball and place 5-6 inches apart on a baking sheet that has been lined with parchment paper or a silpat, or has been lightly greased. Alternatively, you can lightly grease two loaf pans. If using the loaf pans, please form each half into an oval roughly the size of the loaf pan before easing them into the pans.Use a sharp knife to slash the top of the loaf about ¼ of an inch deep. This allows the steam to escape the baking loaf.
