CLASSIC WHITE LOAF

500g strong white flour, plus extra for dusting
7g sachet fast-action dried yeast
1 tsp salt
up to 350ml lukewarm water
a little sunflower oil, for greasing

Steps:

  • Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough - add a splash more water if necessary. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7. Knock back the dough by tipping it back onto a floured surface and pushing the air out. Mould the dough into a rugby ball shape that will fit a 900g loaf tin and place in the tin. Cover with a clean tea towel and leave to prove for 30 mins. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base. Leave the bread on a wire rack to cool completely. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month.

1 1/4 cups water
2 tablespoons butter
2 teaspoons sugar
3/4 teaspoon salt
1 (1/4 ounce) package yeast
1 tablespoon flour
3 1/4 cups flour

Steps:

  • Mix the butter, sugar, and salt into the warm water.
  • Stir in 1 tablespoon flour and the yeast (Can use 1 Tablespoon yeast in place of the packet).
  • Wait 5 minutes; if yeast does not bubble buy new yeast.
  • Put flour in a large bowl; stir in yeast mix.
  • Stir thoroughly; turn onto a floured board and knead.
  • Knead in as much of the flour as possible to make a satiny dough; if dough is sticky add more flour a tablespoon at a time.
  • Put dough in a greased bowl and turn to coat.
  • Cover with a clean damp towel and let rise til double.
  • Punch down; shape into loaf and put in greased loaf pan.
  • Let rise.
  • Bake at 375 for 50 minutes or until bottom sounds hollow when thumped.
  • Can also be shaped into 12 dinner rolls or 8 hamburger buns.
  • Bake for less time if using these shapes.

Steps:

  • Gather the ingredients.
  • In a large bowl, mix the warm water and yeast together until the yeast is dissolved. Add the milk, sugar, salt, and shortening. Stir. Add the oats and mix well. Add in enough bread flour to make a dough that follows the spoon around the bowl.
  • Turn the dough out onto a lightly floured surface and knead for 10 minutes, adding more bread flour as needed until the dough is firm and smooth to the touch.
  • Place the dough in a medium greased bowl. Turn dough over in bowl so that the top is also lightly greased. Cover with a clean cloth and let rise in a warm, draft-free place for 1 hour.
  • Punch down the dough . Turn the dough out onto a lightly floured board and knead for 5 minutes or until the bubbles are out of the bread.
  • Shape into loaf and place in a greased 8x5-inch bread pan. Cover and let rise in a warm, draft-free place for 45 minutes or until doubled in size.
  • Preheat oven to 375 F. Brush egg white on the loaf.
  • Bake bread in preheated oven for 40 minutes or until the bread sounds hollow when the top is tapped. Remove bread from pan and let cool on a rack.

Steps:

  • Preheat oven to 375.
  • Separate the egg whites from the yolks. Add Cream of Tartar to the whites and beat until soft peaks are achieved.
  • In a food processor combine the egg yolks, 1/3 of the beaten egg whites, melted butter, almond flour, baking powder and salt (Adding ~6 drops of liquid stevia to the batter can help reduce the mild egg taste). Mix until combined. This will be a lumpy thick dough until the whites are added.
  • Add the remaining 2/3 of the egg whites and gently process until fully incorporated. Be careful not to overmix as this is what gives the bread it's volume!
  • Pour mixture into a buttered 8x4 loaf pan. Bake for 30 minutes. Check with a toothpick to ensure the bread is cooked through. Enjoy! 1 loaf makes 20 slices.

1½ cups warm water
10 g (2tsp) instant yeast
1 tsp sugar
3-4 cups flour ((any white flour can be used: Cake, all purpose or bread) )
1 tsp salt
1/3 cup butter / oil ((room temperature butter) )

Steps:

  • Whisk water, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour and salt.
  • With the mixer running, add the water and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Covere again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Place in the oven and allow to bake for 30-45 minutes until golden brown and risen. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove, brush with a little butter and allow to cool before slicing.

1/2 cup scalded milk, cooled

  • Add yeast to lukewarm water and dissolve.
  • Add remaining ingredients.
  • Turn out on lightly floured board and knead until smooth and elastic.
  • Round up and place in a greased bowl.
  • Grease surface of dough.
  • Cover and let rise until double in bulk.
  • Punch down dough and turn out on floured board.
  • Round up dough and let rest 10 minutes.
  • Mold dough into a loaf.
  • Let rise in a greased pan until double in bulk.
  • Bake in 425°F oven about 40 minutes.
  • Turn out of pan and brush top with melted butter.

3 tablespoons unsalted butter
2 tablespoons sugar
One 1/4-ounce package active dry yeast
5 cups unbleached all-purpose flour
1 tablespoon plus 1 teaspoon fine salt

Steps:

  • In a small saucepan, combine the milk, butter, and the sugar. Place over medium-high heat and cook, stirring, until the butter has melted. Remove from the heat and cool to about 110 degrees F. Sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt and set aside.
  • Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the flour mixture to a well-floured work surface and knead until a soft elastic dough is formed, about 10 minutes.
  • Transfer the dough to a lightly oiled bowl, cover with a kitchen towel, and place in a warm spot in the kitchen, until puffed and doubled in size, about 2 hours.
  • Transfer the dough to the work surface and, using your hands, gently flatten into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping side to seal and make a seam. Place seam side-down in a buttered 9x5 loaf pan, cover with a kitchen towel, and return to the warm spot until the dough has just risen about 1 1/2 inches over the top of the pan, about 2 to 2 1/2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
  • Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles, on the bottom and top, or an instant read thermometer inserted in the center registers about 190 degrees F., about 15 minutes.
  • Transfer the bread loaf to a cooling rack and cool completely before slicing.
