- 1. Preheat oven to 400 degrees. Wrap garlic bulb in aluminum foil, sealing well. Bake for 45 minutes until garlic is soft. Remove garlic from oven when done. Let cool in wrapping. When cool unwrap, peel the cloves, and squeeze out cooked pulp. Set aside.
- 2. When garlic is done wash and quarter potates, leaving skin on. Boil in as small an amount of water as possible for about 20 minutes or until cooked. Drain. Add all ingredients to hot potatoes and mash by hand with a potato masher, leaving lumps to your liking. Serve immediately.

Applebee's has THE best mashed potatoes. I found this knock-off recipe on e-cookbooks.net. We had it last year for Christmas and it was just heavenly.

Steps:
- Place a single layer of garlic cloves on a sheet of heavy-duty aluminum foil and wrap tightly.
- Roast in 400F degree preheated oven for approximately 45 minutes or until soft.
- Unwrap and let cool until touchable.
- Peel cloves and mash with potatoes when they are ready.
- Wash and rinse potatoes under cold water.
- It is not necessary to peel potatoes, unless you desire.
- In large sauce pan (or pot), bring red potatoes to a slow boil for approximately 20 minutes.
- Remove from heat and drain in colander.
- In pan or bowl, combine potatoes, peeled and roasted garlic cloves, and all other ingredients and mash with a potato masher.
- Keep warm.

- Preheat the oven to 425 degrees Fahrenheit with a rack in the middle of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the potatoes from sticking.
- Slice the potatoes into 2-inch chunks (slice small potatoes in half, larger potatoes into quarters, and so on). Place them on the prepared baking sheet.
- Drizzle the olive oil over the potatoes, then sprinkle on the garlic powder, salt, and rosemary, if using. Toss with your hands until the potatoes are evenly coated in the mixture (it might seem like you don’t have enough oil, but you do—keep going!). Arrange the potatoes in an even layer across the pan with their flat edges against the pan.
- Roast the potatoes for 40 to 45 minutes, stirring halfway, until the potatoes are deeply golden (check the undersides) and easily pierced through by a fork. Stir in the parsley, if using, and season to taste with additional salt and some black pepper (careful, the potatoes are hot). Serve promptly.
