SIMPLE TOFU QUICHE



Simple Tofu Quiche image

The simplest tofu quiche on the block with just 10 basic ingredients and no fancy methods required. A hash brown crust keeps this dish gluten-free as well as vegan! Perfect for lunch, brunch, and even brinner.

~3 medium-large potatoes ((grated // 3 potatoes yield ~3 cups grated))
2 Tbsp melted vegan butter ((or sub olive oil with varied results))
1/4 tsp each sea salt and black pepper
2 cups thinly sliced leeks ((thoroughly cleaned and dried // 2 small or 1 large leek yield ~2 cups // or sub 1 medium diced onion))
3/4 cup cherry tomatoes ((halved))
1 cup chopped broccoli
3 cloves garlic ((chopped))
1/4 tsp each sea salt and black pepper
12.3 ounces extra-firm silken tofu ((patted dry))
2 Tbsp nutritional yeast
3 Tbsp hummus
1/4 tsp each sea salt and black pepper

Steps:

  • CRUST: Preheat oven to 450 degrees F (232 C) and lightly spritz a 9.5-inch pie pan (as original recipe is written // adjust if altering batch size) with non-stick spray.
  • Grate potatoes and measure out 3 cups (amount as original recipe is written // adjust if altering batch size). Then transfer to a clean towel and firmly squeeze out excess moisture. Add to pie dish and drizzle with melted vegan butter and sprinkle with salt and pepper. Toss to coat, then use fingers to press into the pan and up the sides to form an even layer.
  • Bake for 25-30 minutes or until golden brown all over. Set aside. When you take out the crust, lower oven heat to 400 degrees F (209 C).
  • VEGETABLES: Prep veggies and garlic and add to a baking sheet. Drizzle with 2 Tbsp olive oil, sprinkle with salt and pepper, and toss to coat. Place in the oven and bake until soft and golden brown (a total of 20-30 minutes). Set aside and lower oven heat to 375 degrees F (190 C).
  • FILLING: To prepare tofu filling, add drained tofu to a food processor with nutritional yeast, hummus, salt and pepper. Run the food processor on high until the filling is silky smooth. Set aside.
  • Remove veggies from oven, add to a mixing bowl, and top with the tofu mixture. Toss to coat, then add to the crust and spread into an even layer.
  • Bake quiche at 375 degrees F (190 C) for a total of 30-40 minutes or until the top appears golden brown and firm. If the crust begins to get too brown, loosely tent the edges with foil.
  • Let cool briefly, and then serve with fresh herbs or green onion.
  • Store leftovers loosely covered in the fridge for up to two days. Reheat in the microwave or in a 350-degree F (176 C) oven.

This Easy Vegan Quiche is perfect for breakfast or brunch! The creamy tofu filling is loaded with burst tomatoes, caramelised onions, sautéed mushrooms, and spinach and baked in a buttery, flaky crust!

1 lb block firm tofu (lightly pressed*)
2 tablespoons oil (any oil)
½ large red onion (sliced, then chopped in half (or diced))
¾ cup mushrooms (chopped (272g) )
2 cups fresh spinach (chopped or whole)
4 cloves garlic (minced)
Salt and pepper to taste (for the veggies)
1 cup halved cherry tomatoes
1 cup vegan milk (any one works, ensure it is unsweetened)
3 tablespoons nutritional yeast
3/4 teaspoon sea salt
¼ teaspoon black pepper
1/4 teaspoon turmeric (for colour)
2 teaspoons dried chives (or 1 1/2 tablespoons freshly chopped chives)
½ teaspoon baking powder
1 tablespoon vegan parmesan (optional)
¼ teaspoon black salt (kala namak - totally optional**)

Steps:

  • Preheat oven to 375°F/190°C. Begin to press your tofu and set aside until you are ready for it. Lightly dust your 9 inch pie dish.
  • Pre-bake pie crust for 10 minutes. Set aside.
  • In a pan over medium high heat, heat 1 tablespoon of the coconut oil. Add in the onions and stir to combine. Lower heat to medium and stir the onions for 15 minutes (you could even go up to 30 minutes depending on the time you have if you want to further caramelise them, stirring often).
  • Add in the extra tablespoon of coconut oil and the tomatoes, garlic and mushrooms, bring heat back up to medium high and sauté for 15 minutes, until tomatoes are slightly broken down. Season with salt and pepper to taste. Add in the spinach and sauté for another two minutes until it is wilted. Remove from heat and set aside.
  • In a high powered blender, add the tofu, almond milk, nutritional yeast, sea salt and black pepper, turmeric, and baking powder and vegan parmesan. If you have any kala namak, add it now. Blend on high until everything is completely smooth and there are no lumps, about 2 to 3 minutes. I blended mine twice to ensure this.
  • Add the filling to the pre-baked pie crust. Pour the tofu mixture over the lightly, and lightly stir them both together to combine.
  • Bake for 35 to 40 minutes until the top is golden brown and the quiche is cooked through.
  • Allow to cool for about 10 minutes, then cut into and serve. Enjoy!

This is a vegan quiche filled with a savory mix of blended tofu and mushrooms. It has a deep, rich umami flavor. No eggs are necessary to bind it; the tofu stiffens up when it bakes. You can use the crust of your choice. The yeasted crust is not vegan, as it contains an egg.

1 9- or 10-inch 1 yeasted whole wheat olive oil pastry or gluten-free whole-grain Mediterranean pie crust
1/2 ounce (about 1/2 cup) dried mushrooms (preferably porcinis)
1 tablespoon plus 2 teaspoons extra virgin olive oil
1/2 medium or 1 small onion, finely chopped
Salt to taste
2 to 3 garlic cloves (to taste), minced
3/4 pound mushrooms, trimmed and diced
1 teaspoon fresh thyme leaves, coarsely chopped, or 1/2 teaspoon dried thyme
Freshly ground pepper to taste
2 tablespoons dry white wine or rosé
14 ounces firm or silken tofu
1 tablespoon low-sodium soy sauce
1 tablespoon miso paste
1 teaspoon yeast extract, such as Marmite
1 1/2 tablespoons tahini
1/8 teaspoon cayenne

Steps:

  • Mix up the pie dough and when ready roll or press out to line a 9- or 10-inch tart pan. Set in the refrigerator to rest. Meanwhile place the dried mushrooms in a pyrex measuring cup and pour in 1 cup boiling water. Let sit for 20 minutes or longer. Set a strainer over a bowl, line it with cheesecloth or paper towels, and drain the mushrooms. Squeeze over the strainer to extract as much flavorful liquid as possible, rinse away any lingering sand, and chop medium-fine. Set aside. Measure out 1/3 cup of the mushroom broth.
  • Heat one tablespoon of the olive oil over medium heat in a large, heavy skillet and add the onion. Cook, stirring often, until the onion begins to soften, and add a generous pinch of salt. Continue to cook, stirring often, until the onions are tender and lightly colored, about 8 minutes. Add the garlic and cook, stirring, until it begins to smell fragrant, 30 seconds to a minute. Stir in the fresh and dried mushrooms and turn the heat up to medium-high. Cook, stirring or shaking the pan, until the mushrooms have begun to sweat and soften, about 5 minutes. Add the thyme and season to taste with salt and pepper. Continue to cook, stirring often, until the mushrooms are tender. If desired add the wine and stir to deglaze the pan. When the liquid has evaporated remove from the heat.
  • Preheat the oven to 350 degrees. Place the tofu, soy sauce, miso, yeast extract, tahini and cayenne in a food processor fitted with the steel blade and blend the ingredients until smooth. Stop the machine and scrape down the sides of the bowl, then process again. With the machine running add 1/3 cup of the mushroom broth and process until smooth. Scrape into a large bowl, add the cooked mushrooms and onions, and stir together.
  • Brush the crust with the remaining olive oil and place in the oven for 10 minutes. Remove from the oven and fill with the tofu mixture. Bake 35 to 40 minutes, until the top is a rich golden brown and the filling has set. Remove from the heat and allow to sit for at least 10 minutes before serving.

¾ cup all purpose flour, plus more for dusting
¾ cup whole wheat flour
½ teaspoon kosher salt
8 tablespoons vegan butter, cubed and chilled
¼ cup cold water, plus more a needed
1 tablespoon olive oil
2 cups mushroom, thinly sliced
1 cup leek
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
1 cup cherry tomato
4 cups fresh spinach
1 package silken tofu
2 tablespoons nutritional yeast
½ teaspoon black salt, optional
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground turmeric
⅛ teaspoon cayenne pepper
dried chickpea, for baking

Steps:

  • Make the crust: In a large bowl, mix together the all-purpose flour, whole-wheat flour, and salt. Add the butter and, using your hands, work it into the flour until only pea-sized pieces remain. Continue working with your hands until the dough has a shaggy texture.
  • Add the water, starting with 3 tablespoons, and mix until the dough is moist enough to hold together. Add more water as needed, 1 tablespoon at a time. Form the dough into a disc and wrap in plastic wrap. Refrigerate for 30-60 minutes.
  • Preheat the oven to 350˚F (180˚C).
  • Make the filling: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the mushrooms. Sauté for 3-5 minutes, until the mushrooms are beginning to brown lightly. Reduce the heat to medium and add the leeks, ½ teaspoon kosher salt, and ½ teaspoon pepper. Cook for another 3-5 minutes, until the leeks have softened slightly. Add the tomatoes and cook for 1 minute, until slightly softened. Add the spinach and sauté for 1-2 minutes, until just wilted. Remove the pan from the heat.
  • Lightly dust a clean surface with flour. Roll out the dough, turning it frequently so it doesn't stick, to a 12-inch (30 cm) round, about ⅛-inch (3 mm) thick.
  • Gently transfer the crust to a 9-inch (22 cm) pie dish. Trim any excess dough around the edges. Fold the edges of dough back underneath itself, then crimp using an index finger knuckle on one hand and the thumb and index finger on the other hand.
  • Crumple a piece of parchment paper, then spread it out in the center of the crust. Add the dried beans to the center and spread toward the sides of the crust--this will add weight to keep the crust from puffing up and hold up the walls while baking.
  • Bake the crust for 15 minutes. Carefully remove the weights by lifting out the parchment paper, then bake for 5 minutes more, until the dough no longer looks raw.
  • Carefully pour the silken tofu into a fine-mesh strainer set over a bowl. Let sit for 10 minutes to allow the excess water to drain.
  • Add the tofu, nutritional yeast, remaining ½ teaspoon salt, remaining ½ teaspoon pepper, black salt, garlic powder, paprika, turmeric, and cayenne to a blender. Puree until smooth.
  • Spread half the sautéed vegetables evenly over the bottom of the crust. Pour the tofu puree over the vegetables, then add the remaining vegetables on top..
  • Bake for 40-45 minutes, until the center no longer jiggles and the crust is just beginning to brown.
  • Let the quiche cool for at least 30 minutes before slicing to allow the filling to set.
  • Enjoy!

  • Preheat oven to 350 degrees F. Oil a 9-inch pie plate or 10-inch quiche pan (not the type with a removable bottom as the quiche mixture would leak).
  • Preheat a saute pan over medium heat. Add 1 Tbsp olive oil to the pan. Cook the onion until translucent, 3 to 5 minutes. Add the mushrooms, asparagus, and a pinch of salt. Stirring occasionally, cook until the asparagus is barely fork tender, about 5 minutes. Add the garlic, thyme, and onion powder to the pan. Stir and cook for 1 minute. Remove from heat.
  • Crumble the tofu into the bowl of a food processor. Add the tamari and nutritional yeast. Process until fully combined, stopping to scrape down the sides of the bowl as needed. With the processor running, drizzle in just enough water so that the mixture becomes smooth, similar in texture to thick hummus (super-firm will require more water, normal extra-firm will need less). Drizzle in 1 Tbsp olive oil. Taste for salt keeping in mind that the cheese will add saltiness, and add up to 1/2 teaspoon of salt. Add the shredded or chopped cheese, and pulse 5 or 6 times to incorporate it into the tofu mixture.
  • Spoon the quiche mixture into the sauté pan with the vegetables, and stir to combine. Transfer the mixture to the prepared pie plate, and smooth the top with a silicone spatula. Bake 28 to 32 minutes or until firm and a knife inserted in the center comes out hot. Let stand 15 minutes before slicing.
