One-Dish Beef Stroganoff image

Combine Ground Beef and simple ingredients in one skillet for a crowd pleasing Beef Stroganoff recipe that doesn't require extra work.

1 pound Ground Beef (93% lean or leaner)
1/2 pound sliced button or cremini mushrooms
3 teaspoons minced garlic
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
2 cups uncooked whole grain wide noodle-style pasta
1 can (14-1/2 ounces) reduced-sodium beef broth
1 cup frozen peas
1/4 cup regular dairy sour cream plus additional for topping
1 tablespoon regular or coarse-grain Dijon-style mustard

Steps:

  • Heat large nonstick skillet over medium heat until hot. Add Ground Beef, mushrooms, garlic and thyme; cook 8 to 10 minutes, breaking Ground Beef into 3/4-inch crumbles and stirring occasionally. Pour off drippings, as necessary.
  • Stir noodles and broth into beef mixture. Bring to a boil. Cover and cook 9 to 10 minutes or until noodles are tender, stirring twice. Stir in peas; continue cooking, uncovered, 3 to 5 minutes or until peas are heated through, stirring occasionally.
  • Remove from heat; stir in 1/4 cup sour cream and mustard. Season with salt and pepper, as desired. Garnish with additional sour cream, if desired.

1 tbsp 15 mL canola oil
1 1/8 lb 510 g (500g) lean ground beef
2 cups 500 mL assorted sliced mushrooms (button, cremini, shiitake, etc.)
1 large onion, thinly sliced
1 stalk celery, thinly sliced
2 cups 500 mL CAMPBELL'S® Ready to Use 30% Less Sodium Beef Broth
1 1/2 cups 375 mL fusilli corkscrew pasta
1 can CAMPBELL'S® Condensed Cream of Cremini & Shiitake Mushroom
1 cup 250 mL water
1/2 cup 125 mL frozen peas
1/2 cup 125 mL sour cream
1 tbsp 15 mL Worcestershire sauce
1/4 tsp 1 mL fresh ground black pepper
Chopped fresh chives

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat; cook beef 6-8 minutes, stirring often, or until well browned. Add mushrooms, onion, and celery; cook 2-3 minutes or until starting to soften.
  • Stir in broth, noodles, soup, and water. Bring to boil. Reduce heat, cook at gentle boil for 15-18 minutes, stirring often, or until pasta is cooked. If sauce reduces too quickly, add ¼ cup (60 mL) water as needed until pasta is tender. Add peas, cook 2-3 minutes to heat through.
  • Stir in sour cream, Worcestershire sauce, and pepper. Serve garnished with fresh chives, if desired.

This is an easy one-dish beef stroganoff recipe. To make this more traditional, you can add half of the can of soup & 6 oz. of cooking sherry in place of the whole can of soup. I'm sure that there are way better classic recipes out there, but this one is just too easy & tasty to go through all the other work... :-)

3/4 lb boneless beef top sirloin steak, 3/4-inch thick (or sirloin tips sliced into thin strips)
1 (14 ounce) can French onion soup (Progresso Brand I use)
2 cups mushrooms (Fresh & sliced)
4 cups egg noodles (uncooked)
1/2 cup sour cream
4 ounces cream cheese
chopped fresh parsley

Steps:

  • SLICE beef into very thin strips.
  • COOK beef in nonstick skillet 5 min., stirring often to brown. Add mushrooms to brown.
  • Stir in soup & heat to a boil. Stir in noodles. Cover and cook over low heat 10 minute or until noodles are done.
  • STIR in sour cream & cream cheese and heat through. Top with fresh parsley & serve.

1 large onion, halved and sliced
1 cup sliced mushrooms
2 cup CAMPBELL'S® Ready To Use 30% Less Sodium Beef Broth
1 cup water
1 can (284 ml) CAMPBELL'S® Condensed Low Fat Cream of Mushroom Soup
2 ½ cup uncooked fusilli or medium spiral egg noodles
¾ cup frozen peas
1 Tbsp Worcestershire sauce
¼ tsp ground black pepper
¾ cup light sour cream or plain yogurt

Steps:

  • Cook beef in non-stick skillet at medium-high heat until browned, stirring often. Remove beef; reduce heat to medium. Add onion and mushrooms and cook for 3 minutes. Stir into beef.
  • Combine broth, water and soup in skillet. Heat to a boil, add fusilli. Cook at gentle boil until fusilli is just tender (al dente), stirring often.
  • Stir in peas, Worcestershire sauce and pepper. Simmer for 3 minutes.
  • Return beef mixture to skillet, stir in sour cream and heat through.
