ONE-BITE PECAN PIES
Bake these One-Bite Pecan Pies to wow company, no miniature pie pans required! These teeny One-Bite Pecan Pies call for pecans and taste like the real thing. You won't believe how easy they are to make.

Steps:
- Beat cream cheese and butter in medium bowl with mixer until blended. Add flour; mix well. Refrigerate 1 hour or until chilled.
- Heat oven to 350°F. Divide dough into 24 balls. Place 1 ball in each of 24 miniature muffin pan cups; press onto bottoms and up sides of cups.
- Mix egg, sugar and vanilla in separate medium bowl until blended; stir in nuts. Spoon into pastry shells, filling each shell 3/4 full.
- Bake 25 min. or until crusts are lightly browned. Cool 5 min. Remove from pans to wire racks; cool completely.
- Melt chocolate as directed on package; drizzle over pies. Let stand until firm.

Steps:
- Preheat oven to 350°F. Lightly spray a mini muffin pan with cooking spray and set aside.
- In a large skillet, melt 2 tablespoons butter. Add the chopped pecans and toast for about 10 minutes until golden brown, stirring frequently.
- Meanwhile, make the crusts. In the bowl of an electric mixer, beat the butter and brown sugar until creamy. Add the flour and salt and beat until well combined. Take a few tablespoons of dough and press into and up the sides of each mini muffin cup.
- To make the filling, in a large bowl, stir together the brown sugar, light corn syrup, melted butter, and vanilla. Stir in the toasted pecans until well coated. Spoon about a tablespoon of filling into each crust, filling it about 3/4 full. Try not to overfill the crusts, as the filling will bubble over when they are baking. Don't worry...you'll be adding more filling after they bake!
- Bake the bites for about 15 minutes or until the crusts just start to brown. Remove from the oven and let set for about 5 minutes before scooping another tablespoon of filling onto each bite. Let bites cool in pan completely before removing.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Arrange a single layer of pecans on the prepared baking sheet. Top with rolled oats. Bake in the preheated oven until toasted, about 10 minutes. Allow to cool completely.
- Pulse pecans, oats, dates, cinnamon, salt, vanilla extract, and maple syrup in a food processor until nuts are ground to desired consistency.
- Shape mixture into twelve 2-inch tightly-packed balls. Refrigerate before serving.

- Beat cream cheese and butter with electric mixer on medium speed until well blended.
- Add flour, mix well.
- Cover and refrigerate at least 1 hour or until chilled.
- Preheat oven to 375.
- Divide dough into 24 balls. Place 1 ball in each of 24 miniature muffin pan cups.
- Press onto bottoms and up sides of cups to form shells.
- Beat egg lightly in small bowl.
- Add brown sugar and vanilla and mix well.
- Stir in pecans. Spoon evenly into pastry shells, filling each shell 3/4 full.
- Bake 25 to 30 minute or until lightly browned.
- Let stand 5 minute remove tarts from pans and cool completely on wire racks.
- Drizzle with melted chocolate. Let stand until set.

MINI BOURBON PECAN PIES
These are mini pecan pies, made with a cream cheese crust. The title "Pecanda's " is from my daughter, who when she was young couldn't say pecan pies, and said pecanda, and it stuck. These are very good and guaranteed to be a hit at any party, since people tend to feel less guilty about eating 3 mini pies than they would just getting a slice of a normal sized pie.

- For pastry, in a bowl combine 1 c flour baking powder and salt. In a mixing bowl combine the 1/2 c butter cream cheese and 2 tsp sugar. Mix until well blended, stir in the flour mixture, press firmly into a ball with hands. Divide in half. Set aside 1 half. On a lightly floured surface roll out dough to a 1/8 inch thickness. Lightly spray 2 twelve cup mufin pans with nonstick spray. Cut out 12 2 1/4 inch rounds, I suggest using a cookie cutter or biscuit cutter. Press the rounds evenly into the bottoms and sides of the muffin pan cups. Repeat with remaining dough. Then refridgerate about 10 to 15 minute.
- Meanwhile , in a medium bowl beat the eggs slightly. Stir in the granulated sugar, corn syrup, bourbon, melted butter, and vanilla until blended. Spoon a heaping teaspoonfull of chopped pecans into each pastry lined cup. Top with the corn syrup mixture. Be careful not to put too much, if the cornsyrup mixture goes above the pastry it can stick and be difficult to remove after baking. Bake at 350 degrees for 20- 25 min, until lightly browned and a toothpick comes out clean. Cool , and sprinkle with powdered sugar before serving.

- Roll pie crust into about a 12 inch circle. For a premade pie crust, this just takes a few gentle rolls in each direction to stretch it slightly. Cut 18 rounds out of the pie crust using a 2-1/2" to 3" round cookie cutter. (I used a biscuit cutter which is about 2-3/4" in diameter. You can also use a glass if you don't have one). I got about 14 out of the first circle and re-rolled the scraps to get the remaining 4 rounds.
- Press rounds into a greased mini muffin tin and smooth out the sides so the edges aren't all folded over themselves. Edges should go up to the top of the mini muffin tins. Prick the bottoms with a fork so air bubbles don't get trapped underneath the dough. Chill in the refrigerator while mixing the filling.
- Mix together corn syrup, egg, brown sugar, vanilla, butter, and salt until well-blended. Add pecans and stir to combine.

- After the pie dough chills, adjust oven rack to the lower third position and preheat to 350°F (177°C).
- Roll out the chilled pie crust onto a lightly floured surface. Remember, when rolling out the pie dough, always use gentle force with your rolling pin. Start from the center and work your way out in all directions, rotating the dough with your hands as you go. Roll it out into a circle 12 inches in diameter. Carefully place the dough in a 9×2 inch pie dish. Tuck it in with your fingers, making sure it’s smooth. For a beautiful edge, as shown in the video above, fold the overhanging dough back over the edge and use your hands to mold the edge into a nice thick rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Again, you can see me do this in the video above. Brush the edges with egg wash. (To help guarantee a beautiful edge, I always chill the shaped dough in the pie dish for 10 minutes in the refrigerator or freezer before filling.)
- Very roughly chop the pecans– some whole, some lightly chopped is fine. Spread pecans evenly inside pie crust. Whisk the eggs, corn syrup, brown sugar, vanilla, melted butter, salt, and cinnamon together in a large bowl until combined. Pour over pecans.
