ON-THE-GO BREAKFAST SANDWICHES
These breakfast sandwiches are perfect to grab and reheat for a quick on-the-go breakfast. They're fast to make and ingredients can be changed for personal customization. Try them with green chiles mixed into the eggs, a different type of cheese, bacon instead of sausage -- the possibilities are endless. Breakfast sandwiches can be frozen and reheated rather quickly.

- Take each sausage patty and flatten it between a folded sheet of wax paper (I use a tortilla press to flatten mine). Freeze until semi-firm, about 30 minutes.
- Grease a skillet with cooking spray and heat over medium-high heat. Cook each sausage patty until lightly brown on each side, 2 to 3 minutes. Transfer patties to a rack over an aluminum foil-lined pan to allow grease to drain off. Wipe grease from skillet.
- Beat eggs and adobo seasoning in a bowl until light and frothy.
- Spray an egg ring mold with cooking spray and place into skillet. Pour egg into mold. Cook until egg is set on the outside, 2 to 3 minutes. Remove mold and flip egg to cook on the opposite side until set, 2 to 4 minutes more. Repeat with remaining egg mixture to make 5 portions.
- Split sandwich rolls apart. Top one half of each with 1 cooked sausage, 1 egg portion, and an equal amount of Muenster cheese. Place other half of roll on top. Wrap each sandwich in wax paper and aluminum foil. Store in the freezer until ready to reheat and eat.

Working from home during the pandemic has forced me to get creative and work around what was my normal routine. While I enjoy that "famous" breakfast muffin from the comfort of my own home now, I came up with this on-the-go air fryer version to send off with my husband in the mornings. The fast food chain has nothing on this.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Center a mason jar lid, upside down, on a 5-inch square of aluminum foil. Fold the foil up and around the lid to act as a round mold. Spray the foil with nonstick spray and crack egg into the center. Season with salt and pepper.
- Place egg mold and frozen sausage patty next to each other in the air fryer basket; cook for 4 minutes. Flip sausage patty over, add English muffin halves, and cook 4 minutes more.
- Place one English muffin half on a sheet of parchment paper. Add cheese, sausage patty, and egg. Top with remaining English muffin half. Wrap and go.

I have to leave so early in the morning to get to school that I barely have time to sit down and eat breakfast! So instead of going out to MickeyD's to spend $3 for 2 egg sandwiches, I improvised and made them myself- and for definitely less than $3. So here it goes, my On-The-Go Breakfast Sandwich. ENJOY!

Steps:
- Whisk together the eggs and milk in the bowl.
- Add salt and pepper.
- Pour into cooking item (Bowl or Egg Maker).
- IF USING BOWL: Add 1 strip of bacon, torn into pieces. Microwave for 1 minute and 45 seconds.
- IF USING EGG MAKER: Tear the bacon into pieces and throw into Maker. Microwave for the same 1 minute and 45 seconds.
- While the egg is cooking, toast the English Muffin.
- When the eggs are done, microwave the other 2 strips of bacon for about 15 seconds.
- Put one strip of bacon onto one Muffin and the other onto the other muffin.
- Take the egg and put it onto the bottom half of the English Muffin.
- IF YOU WOULD LIKE: you could put a slice of cheese atop the egg.
- Top off with the top half of the English Muffin.
- I usually take a toothpick to hold it all together so, if you're doing that, do that.
- Enjoy and begin to ponder what you can do with those $3 you just saved.
HEALTHY, LOW-FAT BREAKFAST SANDWICH "ON-THE-GO"
I am busy, busy, busy! And I usually don't allow myself much time in the morning for breakfast, so I developed a quick, healthy, and delicious breakfast sandwich that keeps me going until lunch! I recently purchased the Ziploc version of the foodsaver, and IT WORKS GREAT!!! (I had a foodsaver, and it broke, and I wasn't spending another $150!) I make these sandwiches ahead of time (really easy), seal them in the Ziploc foodvac, and freeze them until ready to eat. Give it a try!!

Steps:
- Heat a small skillet over medium-low heat.
- Spray the pan with non-stick cooking spray.
- Beat the egg in a small bowl and add salt, pepper and/or a dash of milk (for a fluffier egg).
- Cook the egg over med-low heat in an omelette style fashion (meaning, don't scramble the egg, but let it take the shape of the pan).
- Flip and cook on the other side.
- Assemble the sandwich -- English muffin bottom, egg (folded to fit), turkey bacon, cheese, English muffin top.
- The sandwich can then be place in the toaster oven or convection oven to toast the bread and melt the cheese -- However.
- I like to make as many of these as I can, foodvac them, and freeze them. In the morning while I'm getting ready, I pop one in the convection oven at about 375 degrees and in 15 minutes I have a sandwich better than they can make at McDonalds -- To-Go!
