BASIC OMELETTE RECIPE
Master the omelette with our simple recipe then add the filling of your choice - grated cheese, ham, fresh herbs, mushrooms and smoked salmon are favourites.

Steps:
- Season the beaten eggs well with salt and pepper. Heat the oil and butter in a non-stick frying pan over a medium-low heat until the butter has melted and is foaming.
- Pour the eggs into the pan, tilt the pan ever so slightly from one side to another to allow the eggs to swirl and cover the surface of the pan completely. Let the mixture cook for about 20 seconds then scrape a line through the middle with a spatula.
- Tilt the pan again to allow it to fill back up with the runny egg. Repeat once or twice more until the egg has just set.
- At this point you can fill the omelette with whatever you like - some grated cheese, sliced ham, fresh herbs, sautéed mushrooms or smoked salmon all work well. Scatter the filling over the top of the omelette and fold gently in half with the spatula. Slide onto a plate to serve.

BASIC OMELETTE
This is a very simple omelette for one. If you are going to add any fillings, make sure to prepare them ahead of time. Feta cheese and dill is a favourite of mine.

- Crack the eggs into a small bowl and whisk.
- Add some salt and pepper, if you like, but do not add any water, milk, or any other liquids.
- Heat the oil or butter in a 9-inch non-stick frying pan and pour in the eggs.
- In the first 30-seconds of cooking, use a spatula to create 6-10 small cuts through the omelette.
- This allows the uncooked egg on the top to flow down to the bottom of the pan.
- When the top is nearly set, sprinkle any fillings over half of the omelette and turn off the heat.
- Don't worry if some of the egg in the very centre isn't quite set, because the ambient heat will soon cook it.
- Use your spatula to flip one half of the omelette over the other and serve immediately.

- Preheat oven to 325 degrees.
- Brush the 1 tbsp melted butter into a square baking dish (8x8 or 9x9).
- Beat the eggs, sour cream, milk and mustard together until well blended.
- Stir in the scallions, swiss cheese, salt and paprika.
- Pour into the buttered baking dish.
- Bake at 325 for about 30-35 minutes or until eggs are set but still moist.
EASY OVEN OMELET
This is an easy omelet to make. I like making them during the week as they reheat nicely. I cut this in fourths and everyone can have a nice breakfast by placing it in the microwave to heat up. You can change this up. Use whatever veggies you have, bacon instead of ham or a different kind of cheese. The options are endless.

PERFECT OMELETTE FOR ONE
I first saw this recipe on a TV cooking show and it looked so easy and good, decided to make it. So easy and quick and tastes so good.

Steps:
- In a small mixing bowl, break both eggs, add cold water, salt and pepper and using a fork or a whisk, mix until well blended.
- Preheat an 8 or 10 inch frying pan on medium-high heat. It is preferable to use a non-stick frying pan or skillet.
- Add butter and let it melt.
- Rotate pan and let the butter coat the edges.
- Pour the egg mixture into the center of the pan and immediately start to rotate the pan in a circular motion, keeping the pan on the element at all times.
- During rotating, take a spatula and loosen the egg on the sides of the pan if nececessary and continue to rotate the pan until the eggs are cooked. You may need to loosen the sides a couple of times during cooking; takes about 2 minutes. The omelette should be loose and rotate in the pan. Do not overcook the omelette as it will get rubbery.
- Once the omelette is cooked, take the spatula and turn 1/3 of the omelette over towards the center of the pan. Slide the omelette onto a platter so that it folds again.
- You may wish to use your choice of filling. Just before you fold the last 1/3 over, add some filling and then fold the omelette over.
- Do not let the omelette brown. It should be thin and soft.
- Enjoy.
SIMPLE MUSHROOM OMELETTE
Omelettes are international, here is a lovely recipe from India, with onions, mushrooms and mustard powder. Don't let the mustard powder scare you, its very good in this dish. Hope you will enjoy this simple recipe.

- Beat the eggs thoroughly along with the salt, pepper, mustard powder and the chopped onions.
- Heat a little of the butter in a pan and add the washed and sliced button mushrooms.
- Toss in the butter for 2 minutes, remove the mushrooms and keep aside until needed.
- Melt the remaining butter in a non stick pan over a medium flame and add the beaten eggs to it.
- Spread evenly around the pan and sprinkle the mushrooms on top.
- When one side is cooked slowly fold the omelette into half with a wooden spoon.
- Remove from the flame and serve hot.
EASY OMELETTE FOR 2 OR 3, PAULA DEEN STYLE
This recipe comes from Paula Deen's " Paula's Home Cooking Show" These omelettes look so good and so simple to make that I had to keep her recipe, so I thought I'd save it here and share too. She used re-sealable plastic freezer baggies to prepare the omelettes.

- Bring a large pot of water to a boil.
- In a large bowl, whisk together 2 eggs at a time for each individual,salt and black pepper and any of your favorite add ins, (individually) and divided into each individual plastic freezer baggies.
- Seal each baggie tight.
- Smash with hands to combine the egg mixture.
- Drop each sealed baggie into the boiling water.
- Simmer the bags for 8 to 10 minutes or until done to your desire.
- Remove baggies from boiling water with tongs and drain on a paper towel lined plate or strainer.
- Cool slightly before handing.
- Open baggie and pour the cooked omelette onto each individual plate.
- Enjoy with along or with your favorite morning side dish, such as hashbrowns and grits.
