My family loves to enjoy this thick and hearty bowl of tummy warmin' love. The original recipe comes from the 1970 "Hard Times Cook Book" beef and vegetable soup but has been officially "Mama'fyed" so much that it has become an entirely different dish. I hope your family enjoys this as much as mine does. It is wonderful served with some warm and crusty bread or biscuits or even a pan of warm cornbread. See the options at the bottom of the recipe too for MORE VEGGIES that are great additions. As always, feel free to make this recipe fit your family and their likes and dislikes. It always makes my day when someone tells me that their family/kids will now eat a new food that they would previously not touch after trying one of my recipes. 3 lbs lean stewing beef, cubed
1 large yellow onion, diced
2 cups celery, diced including leaves
3 -4 garlic cloves, minced
1 (28 ounce) can diced tomatoes with juice
6 cups beef stock (equivalent amount water and bouillon may be used)
1/2 cup fresh parsley, minced
4 bay leaves
2 lbs potatoes, diced, peeled if desired
1 cup carrot, diced
salt
pepper
1 pinch sugar

Steps:

  • Brown meat in a large preheated and lightly oiled stock pot or dutch oven over med high heat until meat has browned on all sides.
  • Add onion and celery and continue to brown for a few minutes, stirring often.
  • Add garlic and cook for 1 more minute stirring constantly.
  • Add parsley, bay leaves, undrained tomatoes and stock to pan and carefully scrape up any browned bits from the bottom.
  • Bring all to a boil then reduce to simmer and cook for 2 hours or until meat just begins to get tender.
  • Add potatoes and carrots and cook about 30 more minutes or until vegetables and meat are all tender.
  • Taste and season with salt and pepper if needed. A pinch of sugar will be a surprising touch that will mellow any acidity from the tomatoes and really bring out all the flavors well. JUST a pinch--any more will make it sweet and strange. For the first time try adding just a few granules in in a bowl of the stew and see if you like it.
  • THICKER STEW: Add a slurry of cornstarch and cold water to hot stew and cook to desired consistency.
  • MORE VEGGIES: Try adding some fresh or frozen corn kernels, diced zucchini, shredded cabbage, fresh or frozen peas or any other veggies you like when you add the carrots and potatoes.
  • NOTE: Do not let anyone eat the bay leaves! They can be removed before serving!

1 lb catfish fillet
3 slices bacon, chopped
1 cup chopped onion
1/2 cup chopped green bell pepper
1 (28 ounce) can tomatoes
2 cups peeled and diced potatoes

1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme

Steps:

  • Wash the catfish fillets and cut them into 1-inch pieces; set aside.
  • Fry the bacon for 2 to 3 minutes in a large heavy saucepan; add the onion and bell pepper and cook until tender.
  • Add the remaining ingredients and bring to a simmer.
  • Cook, covered, for 30 minutes.
  • Add the fish and cook for another 20 minutes.
  • Correct the seasonings if necessary and serve hot with cornbread.

2 tablespoon cooking oil
4 cup water
1 large onion, sliced
2 cloves garlic, minced
2 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon sugar
0.5 teaspoon salt
0.5 teaspoon paprika
0.25 teaspoon pepper
1 bay leaf
0.125 teaspoon ground allspice
6 medium carrots, bias-sliced into 3/4-inch chunks
1 pound small white onions, peeled and halved
4 medium potatoes, cut into 1-inch chunks
0.5 cup cold water
0.25 cup all-purpose flour
Snipped fresh parsley (optional)

Steps:

  • In a large pot cook all the meat at once in hot oil over medium-high heat for 15 to 20 minutes or until brown, stirring occasionally. Drain off excess fat. Add the 4 cups water, sliced onion, garlic, Worcestershire sauce, lemon juice, sugar, salt, paprika, pepper, bay leaf, and allspice. Bring just to boiling; reduce heat. Simmer, covered, for 2 hours, stirring occasionally.
  • Stir in carrots, halved onions, and potatoes. Return to boiling; reduce heat. Simmer, covered, about 30 minutes more or until meat and vegetables are tender. Discard bay leaf.
  • In a screw-top jar shake together the 1/2 cup cold water and flour until combined. Stir into stew. Cook and stir until thickened and bubbly; cook 1 minute more. Season stew to taste with salt and pepper. Sprinkle each serving with snipped parsley, if desired. Makes 6 servings.

This quick-cooking fish stew, with its raft of eggs and no-stir preparation method, is specific to eastern North Carolina. Church fund-raisers and family gatherings center on the stew, where traditionally men would layer chunks of fish with bones and skin, thinly sliced potatoes, onions and spices in a caldron and stand around the fire watching it cook. About five minutes before it was done, someone would crack an egg for each guest into the tomato-rich broth. Eggs were a cheap filler and a way to stretch the stew to provide enough protein for a crowd, along with fish like striped bass or flounder from North Carolina's Atlantic shore. Vivian Howard, who left New York to open Chef & the Farmer, a restaurant in Kinston, N.C., offers this version for home cooks. The key is not stirring it at all, and watching the heat so the bottom doesn't scorch. Serve it with a couple of slices of squishy white bread (Sunbeam is traditional), which act as delicious sponges for the broth.

1 pound sliced smoked bacon
1 6-ounce can tomato paste
3 pounds white or red potatoes, peeled and sliced into 1/4-inch rounds
2 pounds yellow onions, peeled, halved and cut into 1/4-inch slices
6 garlic cloves, thinly sliced
3 pounds fish steaks (about 6 steaks) around 1-inch thick, with bones and skin intact (striped bass, salmon, red drum, rockfish or sheepshead are good options)
2 1/2 tablespoons kosher salt, plus more to taste
1 1/2 teaspoons chile flakes
3 bay leaves
12 eggs
1 loaf white bread (optional)

Steps:

  • Cut the bacon slices into 1-inch squares. Brown them in the bottom of a 10-to-12-quart stockpot over medium heat. Once bacon is crisp, remove it and reserve, leaving the bacon fat in the pot. Whisk the tomato paste into the fat, making sure you scrape up all the brown bits left from browning the bacon.
  • Turn the heat off and begin layering the ingredients in the stockpot. Start with a layer of potatoes, followed by a layer of onions and garlic, followed by a layer of fish. Top the fish with roughly a third of the salt, a third of the chile flakes and 1 bay leaf. Repeat this layering process two more times.
  • Fill the pot with enough cool water to just barely reach the top of the fish. (If there's a little fish peeking out over the top, that's O.K. - better than if it's swimming in water.) Cover the pot with a tightfitting lid and slowly bring to a boil over medium-high heat. (Throughout the cooking, resist the urge to stir.) Once it starts to boil, reduce heat and let it cook, covered, at a high simmer for about 15 minutes. Check the potatoes for doneness. They should be barely tender, not falling apart.
  • Use a large spoon to remove the fat from the surface of the soup, and discard. Taste the broth and add more salt if needed. Then, with the stew at a good simmer, add the eggs one by one in a single layer over the top. (Crack each egg into a small cup before dropping it in.) Cook the eggs for 5 minutes until they are lightly set.
  • As soon as the eggs are lightly set, use a large ladle to portion out the stew. A proper serving is at least half a fish steak, some potatoes, some onions and an egg swimming in broth. Shower each bowl with bacon, and serve immediately with a piece or two of bread, if desired.

1 tsp fennel seeds
2 carrots, diced
2 celery sticks, diced
2 garlic cloves, finely chopped
2 leeks, thinly sliced
400g can chopped tomatoes
500ml hot fish stock, heated to a simmer
2 skinless pollock fillets (about 200g), thawed if frozen, and cut into chunks
85g raw shelled king prawns

Steps:

  • Heat the oil in a large pan, add the fennel seeds, carrots, celery and garlic, and cook for 5 mins until starting to soften. Tip in the leeks, tomatoes and stock, season and bring to the boil, then cover and simmer for 15-20 mins until the vegetables are tender and the sauce has thickened and reduced slightly.
  • Add the fish, scatter over the prawns and cook for 2 mins more until lightly cooked. Ladle into bowls and serve with a spoon.

1 or 2 can(s) regular pink salmon deboned and skin removed but save the broth
1 medium onion chopped small
1 or 2 stick butter or margerine ( i prefer butter)
1 or 2 qt regular milk (canned evaporated milk can be substituted if you like it better)
salt and pepper to taste

Steps:

  • 1. In a small stew pot or dutch oven, melt your butter over medium low heat.
  • 2. While your butter is melting, quarter the medium onion and chop it in a mini chopper so that it is chopped fine but not mushy.
  • 3. Add the chopped onion to the butter and saute on med. heat until clear and soft.
  • 4. Stir in the deboned and skinned salmon, mix well.
  • 5. Slowly pour the milk in and the reserved broth if you want more of the salmon flavor, & reduce your heat to low so as not to scald it. Stir every few minutes until it is steaming and the stew is heated well.
  • 6. Add salt and pepper to taste and serve while steaming hot.

1 tablespoon plus 1 teaspoon Rustic Rub
1/3 cup vegetable oil
1/3 cup flour
1 cup chopped celery
1 cup chopped onions
1/2 cup chopped bell peppers
2 mild green chilies or banana peppers, sliced lengthwise in half and seeded
2 bay leaves
1 tablespoon minced garlic
2 cups chopped peeled and seeded tomatoes or 2 cups chopped canned tomatoes
1 cup water
1 3/4 cup chicken broth
3/4 teaspoon salt
1/4 teaspoon cayenne
1/4 cup chopped green onions
2 tablespoons chopped parsley

Steps:

  • Cut the fish fillets into 3-inch pieces. Season with 1 tablespoon of the rub. Set aside in the refrigerator. Make a roux by combining the oil and flour in a large cast-iron or enameled cast-iron Dutch oven over medium heat. Stir slowly with a wire whisk or wooden spoon for about 15 to 20 minutes, or until the roux becomes dark brown, the color of chocolate. Add the celery, onions, bell peppers, and chilies. Cook, stirring often, for 6 to 7 minutes. Add the bay leaves and garlic and cook for about 2 minutes. Add the tomatoes, water, and the remaining 1 teaspoon rub. Reduce the heat to medium-low and cook, uncovered, for about 1 hour, or until a thin oil film appears on the surface. Stir occasionally to prevent the mixture from sticking. Increase the heat to medium, add the broth, salt, and cayenne and cook for about 15 minutes. Lay the fish in the mixture and cook for 10 to 15 minutes, or until the fish flakes easily with a fork. During the last 5 minutes of cooking time, add the green onions and parsley. Remove the bay leaves. Serve hot.

1 lb smokey bacon, low salt
5 lb peeled and diced potatoes, red or white, is fine
1 pkg large eggs, a dozen preferable
2 large yellow onions, chopped
2 5 pound pkg fresh or frozen fish fillets, if you have fresh,by all means use them
hot sauce to taste
salt and pepper to taste
2 large cans tomato paste

Steps:

  • 1. In a large stock pot, cook bacon until done, remove to plate, keep warm.
  • 2. Add onions, cook until soft about 5 minutes.
  • 3. Crumble up your bacon,and return to the pot, add potatoes, fish fillets, and enough water to cover.
  • 4. Cook over medium heat until potatoes and fish are almost done.
  • 5. Add the 2 cans of tomato paste and stir well. Be careful not to stir the stew too much or else the fish will break apart. Lower the heat to a simmer.
  • 6. Add hot sauce to taste or to your liking. Add salt and black pepper to taste.
  • 7. Crack the eggs whole one at a time into the stew,let them poach. Be careful as you stir them. Let the eggs cook until they are firm. Taste your broth and adjust your seasonings if needed.
  • 8. Turn off the heat. Let sit for about 15 minutes. Serve and enjoy!

3 tbsp garlic butter
1 onion , chopped
2 x 400g cans plum tomatoes , finely chopped
1 tbsp balsamic vinegar
pinch of chilli flakes
1 fish or vegetable stock cube
2 roasted red peppers , from a jar, sliced
300g potato , cut into chunks
2 tbsp finely chopped parsley
400g bag mixed seafood , defrosted if frozen
250g white fish or salmon , chopped into chunks
8 thin slices of baguette
green beans , to serve (optional)

Steps:

  • Heat 1 tbsp of the garlic butter in a saucepan and gently cook the onion for about 5 mins until soft. Tip in the chopped plum tomatoes and any juice from the can, the balsamic vinegar and chilli flakes. Crumble over the stock cube, add the peppers and potatoes. Season, then simmer for about 15 mins until the potatoes are just tender.
  • Meanwhile, heat a grill to medium, mix the rest of the garlic butter with 1 tsp of parsley and some seasoning. Toast the bread lightly on both sides, then spread one side of each slice with the butter and return to the grill until melted and golden. Keep warm.
  • Add the mixed seafood and fish to the sauce and heat through for about 5 mins until the seafood is hot and the fish is firm and cooked through. Scatter with remaining parsley and spoon into bowls. Top each with 2 slices of bread and serve with green beans, if you like.
