9 tablespoons white sugar
2 eggs
1 tablespoon vanilla extract
1 ½ cups biscuit baking mix
¼ cup yellow cornmeal
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
  • In a separate bowl, stir together baking mix and cornmeal. Blend this mixture into the butter/egg mixture, alternately with the milk; stir just until combined. Spoon batter into prepared muffin cups.

2 eggs, beaten
1 cup sour cream
1/2 cup butter, melted
1 cup creamed corn
1 tablespoon granulated sugar
1 cup all-purpose flour
1/2 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons salt
4 ounces cheddar cheese, grated
1 tablespoon chopped green chili pepper

Steps:

  • Preheat oven to 400 degrees.
  • Generously grease muffin tins.
  • In a bowl, mix the beaten eggs, sour cream, melted butter, creamed corn, and sugar.
  • In a seperate bowl, mix the flour, cornmeal, baking powder, soda, and salt.
  • Stir the dry ingredients into the egg and cream mixture, mixing until just combined.

1 (15 ounce) can solid-pack pumpkin
1 1/2 cups whole wheat flour
1 cup yellow cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves

Steps:

  • Heat oven to 350F.
  • Lightly coat muffin tins with vegetable cooking spray.
  • In a large bowl, beat the butter and brown sugar until light and fluffy.

  • 1.Preheat the oven to 375 degrees F. Line a 12-cup muffin pan with paper liners or 6-inch squares of parchment paper and mist with cooking spray. (Use parchment paper if you want a more domed muffin; the batter will cling to the paper as it rises.)
  • 2. Whisk the flour, cornmeal, 3/4 cup sugar, the baking powder and salt in a medium bowl. In another bowl, whisk the buttermilk, apricot nectar, grapeseed oil, vanilla extract and orange zest until combined.
  • 3. Beat the egg whites and remaining 3/4 cup sugar in a large bowl with a mixer on medium-high speed until stiff peaks form, about 8 minutes. 1 cup all-purpose flour
2 tablespoons brown sugar, plus more for tops
4 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup yellow cornmeal
1 large egg, room temperature
1/2 cup milk, room temperature
1/2 cup plain yogurt, room temperature
4 tablespoons (1/2 stick) unsalted butter, melted, plus more for tops
Vegetable cooking spray, for muffin tins

Steps:

  • Preheat oven to 400 degrees. Spread 1/2 cup pecans evenly on a baking sheet. Bake until golden brown and fragrant, 5 to 10 minutes. Cool briefly, then coarsely chop and set aside. Place muffin tins in oven to heat for 10 minutes.
  • In a medium bowl, sift together flour, brown sugar, baking powder, and salt. Stir in cornmeal and reserved chopped pecans. In a second bowl, combine egg, milk, yogurt, and butter.
