A classic Yellow Cake recipe is something everyone should have in their arsenal. This old fashioned cake is made with a rich blend of butter, eggs, and buttermilk for a tender and butter cake that's perfect for birthdays and everyday celebrations!

2 ¾ cups cake flour
½ teaspoon baking soda
1 ½ teaspoons baking powder
1 teaspoon kosher salt
1 ½ cups granulated sugar
⅓ cup vegetable oil
⅔ cup unsalted butter (room temperature)
1 tablespoon vanilla extract
2 large eggs (room temperature)
2 large egg yolks (room temperature)
1 ½ cups buttermilk (room temperature)

Steps:

  • Preheat your oven to 325°F and spray two 8-inch round cake pans with cooking spray and line the bottoms with parchment paper and set aside.
  • In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl with a hand mixer or stand mixer fitted with a whisk attachment, cream together the sugar, oil, butter, and vanilla.
  • Add the eggs and egg yolks one at a time beating after each addition just until combined.
  • Using a rubber spatula, fold in the dry ingredients in 3 parts alternating with the buttermilk in 2 parts. Begin and end with the dry ingredients. Gently fold until only very small lumps remain. DO NOT use an electric mixer for this step.
  • Evenly divide the batter between the two prepared cake pans and bake for 30 to 35 minutes. A toothpick should come clean from the center when done.
  • Transfer the cake pans to a wire rack and allow the cakes to cool in the pan for 10 minutes before removing and allowing to cool completely (about 1 hour) before frosting. Once cooled, frost and assemble the cake as desired.

1/3 cup shortening
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
PENUCHE FROSTING:
2 tablespoons butter, cubed
1/4 cup packed brown sugar
3 tablespoons 2% milk
1/2 cup confectioners' sugar

Steps:

  • In a small bowl, cream shortening and sugar. Add egg; beat well. Stir in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk. Beat on medium speed for two minutes. Pour into a 9x5-in. loaf pan coated with cooking spray. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , Meanwhile, in a small saucepan, melt butter. Stir in brown sugar. Bring to a boil. Reduce heat; cook and stir for two minutes. Stir in milk. Bring to a boil, stirring constantly. Cool to lukewarm. Gradually stir in confectioners' sugar. Place pan in a bowl of ice water; stir until mixture reaches desired spreading consistency. Spread frosting over top of cake.

2 sticks (1 cup) unsalted butter, softened, plus more for greasing the pan
4 cups cake flour, plus more for flouring the pan
4 teaspoons baking powder
1 1/2 teaspoons kosher salt
2 cups granulated sugar
6 large eggs, at room temperature
1 tablespoon vanilla
1 1/2 cups whole milk
5 1/2 cups powdered sugar
3/4 cup cocoa powder
3 sticks (1 1/2 cups) unsalted butter, softened
1/2 cup heavy cream, plus more if needed for thinning
1 tablespoon vanilla
1/2 teaspoon kosher salt

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease and flour two 9-inch cake pans.
  • Sift together the flour, baking powder and salt in a large bowl and set aside.
  • In an electric mixer, mix the butter and granulated sugar on high speed until fluffy. Scrape the sides of the bowl and mix for a few more seconds. Add the eggs one at a time, mixing well after each addition. Add the vanilla and mix to combine. Alternate adding the dry ingredients and milk in 3 batches, mixing for a few seconds after each addition. Scrape the sides of the bowl, then mix 1 final time.
  • Divide the batter between the prepared cake pans and bake until done (a wooden skewer inserted in the cake should come out completely clean), 28 to 30 minutes. Allow to cool for 10 minutes, then turn out to cool completely.
  • For the buttercream frosting: Sift the powdered sugar and cocoa together in a large bowl and set aside.
  • In an electric mixer with the paddle attachment, cream the butter until smooth, about 2 minutes. Turn off the mixer and add half of the sugar/cocoa mixture. Turn to low speed and mix to combine. Add the rest of the mixture and mix again. Add the cream, vanilla and salt, scrape the sides and beat until fluffy, 2 to 3 minutes. Thin out with a tablespoon of cream at a time if needed.
  • Ice the cake with a generous layer in the center and spread all around the sides. WARNING: MUST BE SERVED WITH A GLASS OF COLD MILK!

1 cup granulated sugar
1 whole egg
3 egg yolks
1 1/2 cups sifted cake flour

3 ounces unsweetened chocolate
1 (14 ounce) can sweetened condensed milk
1/2 cup unsalted butter, cut into 8 pieces

Steps:

  • To make cake, preheat oven to 350°F
  • In a large bowl, beat shortening until light.
  • Slowly beat in sugar.
  • Add egg and egg yolks, one at a time, beating well after each addition.
  • Sift flour with baking powder and salt.
  • Add to batter in 3 parts, alternating with 3 parts milk.
  • Stir in vanilla.
  • Beat egg whites until stiff.
  • Fold into batter.
  • Pour batter into two buttered and floured 8-inch round cake pans.
  • Bake for about 25 minutes, until a toothpick inserted in center comes out clean.
  • Cool on a wire rack before icing.
  • To make icing, in top of a double boiler over simmering water, melt chocolate and stir in condensed milk. Beat until smooth.
  • Stir in butter, one piece at a time, stirring after each addition. Stir in egg yolk and vanilla. Beat until smooth and thick. (If the icing becomes too thick, thin with a little hot water.).

I found this is an older Southern Living cookbook- "Heritage Cakes" . This is a basic yellow cake that yields 2 layers. The recipe is as found: my only changes have been direction clarifications. For Chocolate Cake: Add 3 ( 1 oz.) squares of unsweetened choclate, melted in a double boiler, to the creamed mixture.

  • 1. Cream butter then gradually add sugar, beating well .
  • 2. Add eggs, beating well after each addition: this mix should be fluffy yellow.
  • 3. In another bowl, combine the flour and baking powder: The add mix to the creamed mixture ( above) alternating with milk, beginning and ending with the flour mix. Mix well.
  • 4. Stir in vanilla.
  • 5. Pour batter into 2 greased/floured 9" pans. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center come out clean.
  • 6. Cool in pan for 10 minutes then remove layers from pans and cool completely.

  • Pour batter Into prepared pans and if necessary spread evenly. Bake at 25-30 minutes or until golden brown and toothpick inserted comes out clean.
  • Cool in pan 10 minutes. Then turn onto wire rack to cool completely.
