WAFFLES FROM SCRATCH
On Saturdays, my mom and I always went shopping, but before we left, she made my favorite lunch, homemade waffles from scratch. They were about 8 inches around and prepared in a grill set on top of the stove. Those waffles were so delicious! -Florence Dean, Towson, Maryland

- In a large bowl, combine the flour, baking powder and salt. In a small bowl, whisk egg yolks, milk and butter. Stir into dry ingredients just until moistened. , In a small bowl, beat egg whites on medium speed until soft peaks form. Fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Top with confectioners' sugar and fruit or serve with syrup.

- Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, salt and sugar. In another bowl, beat together milk and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm

- Preheat waffle iron. Put a rack in middle of oven and preheat oven to 200°F.
- Whisk together flour, baking powder, baking soda, and salt in a large bowl. Add buttermilk, butter, and eggs and stir until smooth (batter will be thick).
- Brush waffle iron lightly with vegetable oil, if necessary, and spoon batter into waffle iron, using 1/2 cup batter for each 4-inch-square Belgian waffle or 1/4 cup batter for each 4-inch-square standard waffle and spreading batter evenly. Cook according to manufacturer's instructions. Transfer waffle to a baking sheet and keep warm, uncovered, in oven. Make more waffles with remaining batter in same manner.
- Serve with butter and maple syrup.
THE BEST EVER WAFFLES
Every Sunday morning, my mom and I used to get up early and make these wonderful waffles. This recipe has been in the family for years, and I will definitly be passing it down to my children.

- In a large mixing bowl, whisk together all dry ingredients.
- Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.

- NOTE-1: If you do not have buttermilk, then you can sour regular milk by adding 1 tbsp of white vinegar OR lemon juice per CUP of regular milk, and let it sit for a minute or two before using.
- NOTE-2: If you wish to boost the flavor even more, instead of the soft shortening (Spry), you can substitute bacon fat!
- While mixing batter, plug in waffle iron to heat up.
- In a large mixing bowl, beat the eggs until lightly frothy.
- In a separate bowl, sift together soda, flour baking powder, and salt.
- Add half the milk to the eggs, then half the dry ingredients, then ALL the shortening.
- Then add the remaining milk and dry ingredients and mix until batter looks somewhat lumpy. Don't worry the shortening is lumpy, that will add to the tenderness of the waffles.
- You may have to spray your waffle iron with some spray oil first to help prevent sticking, but you will only need to do that for the first batch. Start making your waffles when your iron is hot. ENJOY!
