EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

SOUTHERN MEATLOAF RECIPE
A quick and easy Southern classic. You'll love our meatloaf recipe with it's slightly sweet tomato based sauce topping.

Steps:
- Place ketchup in a small mixing bowl.
- Add brown sugar.
- Add yellow mustard.
- Stir well. Set aside.
- In a large mixing bowl, break the bread into small pieces.
- Crumble the saltines and add to the bowl.
- Add the milk.
- Stir well to moisten the bread and saltines. Use more milk if needed. Set aside for 5 minutes.
- Chop the onions very fine. Set aside.
- Crumble the ground beef on top of the moistened bread and saltines.
- Add the lightly beaten egg.
- Add the onions.
- Add the garlic powder.
- Add the Worcestershire Sauce.
- Add the ground mustard.
- Add the black pepper.
- Gently mix all the ingredients together until fully combined.
- Place the meat mixture in a baking loaf pan.
- Press the meat firmly into the pan.
- Turn the meat mixture out onto a sheet pan that has been lined with aluminum foil.
- Bake at 350F degrees for 40 minutes.
- Pour the sauce over the top of the meatloaf, spread with a spoon to cover the top.
- Continue to bake, 15 to 20 minutes longer until meatloaf is done.
- Internal temperature should reach 160 degrees.
- Remove pan from oven, set on wire rack to cool and rest for 10-15 minutes.
- Slice as needed.
- Enjoy!
SOUTHERN MEATLOAF RECIPE
This Southern Meatloaf Recipe is a simple classic, with onions and green peppers and not much else. This is the way Mom made meatloaf!

- Preheat oven to 350° and line a baking sheet with aluminum foil then lightly spray the foil.
- Mix meats and other ingredients (except for the sauce ingredients) gently in a large bowl. Form into a loaf shape on the baking sheet.
- Place meatloaf in oven. While meatloaf is baking, mix the glaze ingredients. Bake the meatloaf for 45 minutes, then remove from oven and spread meatloaf glaze on top and sides of the meatloaf.
- Bake for another 15 minutes and then remove from oven and let rest for 10-15 minutes.

- Preheat the oven to 350 degrees F.
- In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
- For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing
CLASSIC AMERICAN MEATLOAF

- To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
- Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. Add to the cooled vegetable mixture, then add the beef, pork, eggs, and bread crumbs. Season with salt and pepper and mix just to combine. Coat a 9x13-inch baking dish with oil and form the meat mixture into a loaf.
- To make the glaze: In a measuring cup, stir together the ketchup, Worcestershire, and mustard. Brush a little glaze on the meatloaf and bake until the internal temperature reaches 160 degrees F, about 1 hour 15 minutes, brushing three or four times with the glaze until you've used it all. Let meatloaf rest at least 15 minutes before slicing.
SOUTHERN MEATLOAF
Steps:
- Gather the ingredients. Pre-heat the oven to 350 F.
- Grease an 8 1/2 x 4 1/2-inch loaf pan or line it with foil and then lightly grease it. Alternatively, for a free-form loaf, line a rimmed baking pan with foil.
- In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .
- Pack the meat mixture into the loaf pan or shape it and place it on the baking pan.
- Bake the meatloaf for 1 hour. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).
- Spread the meatloaf with 1/2 to 3/4 cup of ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160 F on an instant-read food thermometer inserted into the center. (If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
- Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

- Preheat oven to 325 degrees. Soak breadcrumbs in milk. Mix together beef, onions, carrot, eggs, soaked breadcrumb mixture, salt, and pepper.
- Combine all chili sauce ingredients and set aside.
- Place meat mixture in 8 1/2-by-4 1/2-inch loaf pan. Make three holes, spaced evenly lengthwise, in meat mixture and fill holes with 1/3 to 1/2 cup chili sauce total.
- Bake for 40 to 45 minutes. Remove from oven and let rest 10 to 15 minutes. Pour any accumulated juices back over top of meatloaf; slice and serve.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
