Classic Southern Cornbread (Easy and Homemade) image

Easy, Homemade Classic Southern Style Cornbread is the best, traditional cast iron skillet cornbread recipe made from scratch. This old fashioned staple is made with cornmeal and buttermilk and is served sweet or savory (with no sugar) and with a moist interior. Feel free to add corn or use the batter for muffins!

2 cups yellow cornmeal
6 tablespoons all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 large eggs (Beaten.)
1 1/2 cups buttermilk (See notes for substitution.)
1/4 cup unsalted butter (1/2 stick) (1/2 stick, melted, measured solid.)
2 tablespoons unsalted butter (Used to grease the skillet/pan.)

Steps:

  • Preheat oven to 400 degrees.
  • Add the cornmeal, flour, baking powder, and salt to a mixing bowl. Stir to combine.
  • Next add in the eggs, 1/4 cup melted butter, and buttermilk. Stir to combine. Be sure not to over mix the batter. Over-mixing will lead to large cracks in the crust and a lot of crumble. Only mix well enough to combine the ingredients.
  • Place a 10 inch cast iron skillet on medium heat. Add 2 tablespoons of butter. Allow it to melt and then grease the entire skillet including the edges.
  • While the skillet is hot, pour the mixture into the cast iron skillet.
  • Remove the pan from the stove and place it in the oven to bake for 20-25 minutes or until a toothpick can be inserted and return clean.
  • I like to cool the cornbread completely prior to slicing and let it cool for at least 20 minutes.
  • A traditional method for removing the cornbread is to flip the cast iron skillet over and slice from there.

1 cup cornmeal
1/2 cup flour
1 teaspoon salt
1 teaspoon sugar
1/2 cup milk
1/2 cup boiling water
3 tablespoons corn oil
1 egg
1 1/2 teaspoons baking powder

Steps:

  • Grease an 8-inch round or square baking pan (or, for more authenticity, a cast iron skillet). Preheat oven to 425. Place pan in oven to preheat.
  • Combine cornmeal, flour, salt, and sugar in mixing bowl. Add corn oil and use a cutting motion with spoon so that oil will be well blended with other ingredients. Add the boiling water and mix well.
  • Add cold milk and stir. Let stand for a few minutes until batter has cooled to room temperature.
  • Mix in egg and then baking powder; beat briskly.
  • Remove preheated pan from oven and pour in batter. Bake until lightly browned (approx. 20 minutes).

1 ¼ cup yellow cornmeal (stone ground)
¾ cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoons baking soda
¼ teaspoon salt
2 eggs (slightly beaten)
1 cup buttermilk
6 tablespoons butter (melted)
2 tablespoons unsalted butter
1 cup celery (diced)
1 cup onions (diced)
½ cup green bell peppers (diced)
½ cup red bell peppers (diced)
4 chicken thighs or chicken breast (cooked & chopped (seasoned with seasoned salt & pepper before cooking))
3 slices bread (toasted and crumbled)
1 tablespoon poultry seasoning
1 tablespoon sage
1 teaspoon black pepper
3-4 cups chicken broth
2 eggs (slightly beaten)
salt (if needed)

Steps:

  • Preheat oven to 425 F. Grease an 8 x 8 dish and set it aside.
  • In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and salt.
  • Make a well in the center and add beaten eggs and buttermilk.
  • Gently stir dry and wet ingredients together just until combined.
  • Stir in the melted butter.
  • Spread batter evenly into prepared dish.
  • Bake for 20-25 minutes.
  • Let cool completely. Cover and let cornbread sit a couple of days before proceeding with the dressing. Or crumble the cornbread up and toast it in the oven to dry it out in order to use it the same day for dressing.
  • Preheat oven to 350 F. Grease a 9x13 pan. Set aside.
  • In a large bowl, crumble up the cornbread and set aside.
  • In a large skillet, melt the butter.
  • Add the celery, onions, green bell pepper, and red bell pepper.
  • Saute until tender.
  • Stir the vegetables into the cornbread.
  • Stir in the prepared chicken thighs and breadcrumbs.
  • Stir in enough chicken broth to make the mixture really wet and slightly soupy. (I usually need about 3 1/2 cups)
  • Add poultry seasoning, sage, and black pepper.
  • Taste the mixture and adjust the seasonings if needed. It should taste exactly how you prefer your dressing to taste.
  • Once satisfied with the taste, add eggs.
  • Spread mixture evenly into prepared dish.
  • Bake for 45-55 minutes.
  • Remove from oven and let cool.
  • Serve.

4 tablespoons vegetable oil or bacon grease (divided (I usually use peanut oil))
2 cups coarse stone-ground cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1-1/2 cups buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • Add 2 tablespoons vegetable oil or bacon grease to a 10-inch cast-iron skillet. Place the skillet in the oven for five to seven minutes to heat up.
  • While the skillet is heating up, combine the cornmeal, baking powder, baking soda, and salt in a large bowl.
  • Add the eggs, buttermilk, and two tablespoons of vegetable oil or melted bacon grease to a smaller bowl and whisk until well combined.
  • Add the liquid ingredients to the dry ingredients and mix until just combined. Do not over mix.
  • Using a heavy-duty oven mitt or potholder, carefully remove the hot skillet from the oven. Tilt the skillet to make sure the bottom and sides are covered with oil. Immediately pour the batter into the skillet. You should hear a nice sizzle, and you will see the batter already start to rise.
  • Place the skillet back in the oven and bake for 20-25 minutes, or until the cornbread is a deep golden brown and has pulled away from the sides a little. To ensure it is done, insert a toothpick into the center. It should come out clean. Serve immediately.

  • Preheat oven to 400°. Place butter in bottom of a 9-inch cast-iron skillet, and place skillet in oven to heat.
  • In a large bowl, whisk together cornmeal mix and salt. Add buttermilk and egg, stirring just until combined. Remove skillet from oven, and swirl to coat bottom and sides of pan with melted butter. Pour batter into hot pan.
  • Bake for 20 to 25 minutes or until cornbread is golden brown and begins to pull away from sides of pan. Serve immediately.

1 c self-rising cornmeal
2 Tbsp sugar
1 egg
3/4 c buttermilk

Steps:

  • 1. Place the bacon grease or butter in the bottom of a well-seasoned cast iron skillet. Preheat it at 425°F for 10 minutes.
  • 2. Meanwhile, mix up batter: Stir together cornmeal, sugar, egg, and buttermilk to a thin batter.
  • 3. When skillet is preheated, pour batter into skillet. It will sizzle and start to form a crust - don't be alarmed. Bake the skillet of cornbread at 425°F about 20-23 minutes, until nicely browned.
  • 4. Cut into wedges. Serve immediately with lots of butter.

1 cup cornmeal, my mother used stoneground but any is fine (not mix)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 -3 tablespoon sugar, depending on how sweet you like it
1 1/4 cups buttermilk
1 large egg
1/4 cup corn oil
3 tablespoons butter

Steps:

  • Preheat oven to 375 In a large bowl, combine flour, cornmeal, baking powder, salt, baking soda, and sugar.
  • (If baking powder or soda appear at all lumpy, sift them in).
  • Stir well to combine.
  • In a small bowl, whisk together buttermilk, egg, and oil.
  • Place the butter in a 9 or 10 inch skillet and place in the oven and heat until the butter melts and is sizzling seriously.
  • Tilt the pan to coat the sides of the skillet.
  • As the butter's melting, quickly pour the wet ingredients into the dry, and, using a wooden spoon, stir the wet and dry together with as few strokes as possible--- only as many as are needed to combine the two.
  • Don't beat it!
  • Scrape the batter into the hot, buttery skillet.
  • It should sizzle.
  • Place it in the oven immediately.
  • Bake until golden brown on top, about 25 to 30 minutes.

1/2 cup butter

2 cups chopped celery
7 cups crumbled cornbread
4 1/2 cups chicken broth

1 tablespoon poultry seasoning

  • Put chicken in a dutch oven. Cover with water. Bring to a boil and cook over medium heat. Reduce heat to a simmer and cook for 45 minutes or until the chicken is tender. Remove chicken from heat, reserving the broth. Let cool and debone the chicken. Cut chicken into bite size pieces. Discard sking and bones.

I have been making this dressing for years. I found it in one of those community recipe cookbooks. You can use your favorite regular cornbread recipe with this (but not sweet cornbread).

4 cups cornbread, crumbled
1/4 cup celery, finely diced
1 small onion, finely diced
1 1/2 tablespoons poultry seasoning
1 teaspoon parsley flakes
1 teaspoon salt
1/4 cup melted margarine
1 egg, well beaten
2 -3 cups chicken broth or 2 -3 cups turkey broth, to moisten
1 teaspoon canola oil

Steps:

  • Saute the onion and celery in the canola oil until soft, melt margarine in same pan.
  • Mix with remaining ingredients except broth in large bowl.
  • Moisten with broth to your taste (I like mine pretty wet, I usually get closer to the 3 cups).
  • Place in a casserole dish or aluminum pan.
  • Bake at 400°F for 25 to 30 minutes, or until a nice crust develops on the top.
  • **May use to stuff a 10 to 14 pound turkey. If stuffing a turkey, add very little broth. It will absorb additional moisture in the turkey. Pack loosely.
