EASY OLD FASHIONED MEATLOAF

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

1 cup soft breadcrumbs
1 beaten egg
1/2 cup ketchup
1 clove minced garlic
2 teaspoons salt
1 dash pepper

Steps:

  • Thoroughly mix all ingredients.
  • Shape in loaf pan.
  • Cover with more ketchup if desired.
  • Bake one hour at 350 degrees.

20 Saltines (about 1/2 sleeve)
3 tbsp Onion diced
1 Egg
2 tsp minced Garlic
1/2 tsp Salt
1 tsp Black Pepper

Steps:

  • Preheat oven to 400.
  • Put ground beef in a large bowl.
  • Crush crackers into bowl.
  • Mix with hands until well combined.
  • Add onions, garlic, salt, pepper and egg.
  • Mix with hands until well combined.
  • Form into a loaf and place on skillet and put in oven for 1 hour.

1 (10.75 ounce) can condensed tomato soup, divided
1 ½ pounds ground beef
½ cup dry bread crumbs
1 egg, lightly beaten
¼ cup chopped onion
1 teaspoon salt
1 teaspoon pepper
¼ cup water
½ teaspoon prepared yellow mustard
½ cup shredded mozzarella cheese

Steps:

  • In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.
  • Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.
  • Spoon the fat from the skillet, and stir in the remaining soup, water, and mustard. Top with mozzarella cheese, and let simmer uncovered for 10 minutes, stirring sauce occasionally.

2 lbs. Ground Beef (80/20 or 85/15)
1 1/2 cups Old Fashioned Oats
1 cup Ketchup
2 eggs
1 medium onion, finely chopped
2 teaspoons salt
1 teaspoon pepper
2 tablespoons Worcestershire Sauce Topping
1/3 cup ketchup
2 tablespoons brown sugar

Steps:

  • 1. Preheat oven to 350 degrees. 2. In a large bowl whisk the eggs. Add the onion, salt, pepper, 1 cup ketchup and the Worcestershire sauce to the eggs stir until blended. Add the ground beef and the oats mix well using a wooden spoon or your hands ( I used my hands). 3. Dump mixture into a 10in. cast iron skillet, press to shape. If you don't have a cast iron skillet, you can follow the same instructions for a bread pan. Bake for one hour, remove from oven, spread on the topping and bake for 25 more minutes or until the center reaches 160 degrees.

4 slices bacon
6 scallions
1 cup firm fresh white breadcrumbs
2 tablespoons milk
2 tablespoons sour cream
1 1/2 lbs ground beef (or 1 lb ground beef, 1/4 lb. ground pork and 1/4 lb. ground veal mixed together)
1/2 cup finely chopped onion
1/4 cup finely chopped celery leaves
1/4 cup chopped flat leaf parsley
1 1/2 tablespoons chopped fresh thyme (or 1 1/2 t. dried thyme)
1 teaspoon salt
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon fresh ground pepper
2 garlic cloves, minced
2 eggs
1/2 cup bottled chili sauce
2 tablespoons light brown sugar
1 teaspoon dry mustard

Steps:

  • Preheat oven to 350°.
  • In a skillet over medium heat, cook bacon until limp and some of the fat is rendered; remove bacon from skillet and drain on a paper-towel lined plate.
  • Thinly slice the scallions, separating the white and green parts.
  • In a small bowl, soak the breadcrumbs in the milk and sour cream for 10 minutes.
  • In a large mixing bowl, use your hands to thoroughly combine the ground beef with the next 9 ingredients, the white part of the scallions, and the soaked bread crumbs and any liquid.
  • Pat down mixture into a 9x5 inch loaf pan, smoothing the top.
  • Arrange bacon strips on top.
  • Bake for 35 minutes.
  • While the meatloaf is baking: in a small bowl, combine the chili sauce, brown sugar, and mustard.
  • Spread over the partially baked meatloaf.
  • Sprinkle with the sliced scallion greens.
  • Bake an additional 25 minutes or until the meatloaf is firm, the top is browned, and a meat thermometer inserted in the center reads 155°.
  • Let the meatloaf stand in the pan for 10 minutes before slicing to serve.

2 tablespoons butter
2 cups sweet onions, finely chopped
1 tablespoon garlic
1 celery rib, finely chopped
1 1/2 teaspoons salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 cup ketchup, divided
1 tablespoon brown sugar
1 1/2 lbs ground round (or chuck)
1/2 lb ground pork sausage (such as Jimmy Dean)
1 cup bread, crumbs fine
2 eggs, lightly beaten

Steps:

  • Preheat Oven to 350 degrees F; position oven rack to middle of the oven.
  • Melt butter in heavy skillet and saute onions, garlic and celery for approximately 4-5 minutes; until onions are translucent.
  • Add salt, pepper, worcestershire sauce and 1/2 cup ketchup; cook for 1 minute, until combined.
  • Transfer to a large bowl and add meats, bread crumbs and eggs; blend with your hands; do not overmix.
  • In in 9 x 13 pan (sprayed with cooking oil) form the mixture into a 10 x 5 inch oval loaf.
  • Mix brown sugar with remaining ketchup and spread on top.
  • Bake until interntal temperature registers 155 degrees F; approximately 1 to 1 1/4 hours.
  • Remove from oven, cover with foil and allow to stand for 5 minutes before cutting and serving.

I use leftovers to make meatball subs.

3 celery ribs, finely chopped
1/4 cup carrot, grated
1/2 large onion, finely chopped
1 lb lean ground beef
1 lb lean ground chicken (can substitute lean ground turkey)
1 tablespoon Worcestershire sauce, divided
1/2 cup Italian seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons creole seasoning (Tony Chachere's Original Creole Seasoning)
1 teaspoon all purpose Greek seasoning (Cavender's All Purpose Greek Seasoning)
1 teaspoon garlic powder
2 large egg whites, lightly beaten
1 (8 ounce) can tomato sauce
2 tablespoons chili sauce, Heinz
1 tablespoon ketchup
1 tablespoon light brown sugar, packed
1 teaspoon Worcestershire sauce
1/8 teaspoon crushed red pepper flakes (optional)

Steps:

  • Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
  • Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
  • Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.
