EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

Steps:
- Preheat oven to 400.
- Put ground beef in a large bowl.
- Crush crackers into bowl.
- Mix with hands until well combined.
- Add onions, garlic, salt, pepper and egg.
- Mix with hands until well combined.
- Form into a loaf and place on skillet and put in oven for 1 hour.

Steps:
- In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.
- Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.
- Spoon the fat from the skillet, and stir in the remaining soup, water, and mustard. Top with mozzarella cheese, and let simmer uncovered for 10 minutes, stirring sauce occasionally.

OLD FASHIONED SKILLET MEATLOAF
Steps:
- 1. Preheat oven to 350 degrees. 2. In a large bowl whisk the eggs. Add the onion, salt, pepper, 1 cup ketchup and the Worcestershire sauce to the eggs stir until blended. Add the ground beef and the oats mix well using a wooden spoon or your hands ( I used my hands). 3. Dump mixture into a 10in. cast iron skillet, press to shape. If you don't have a cast iron skillet, you can follow the same instructions for a bread pan. Bake for one hour, remove from oven, spread on the topping and bake for 25 more minutes or until the center reaches 160 degrees.

- Preheat oven to 350°.
- In a skillet over medium heat, cook bacon until limp and some of the fat is rendered; remove bacon from skillet and drain on a paper-towel lined plate.
- Thinly slice the scallions, separating the white and green parts.
- In a small bowl, soak the breadcrumbs in the milk and sour cream for 10 minutes.
- In a large mixing bowl, use your hands to thoroughly combine the ground beef with the next 9 ingredients, the white part of the scallions, and the soaked bread crumbs and any liquid.
- Pat down mixture into a 9x5 inch loaf pan, smoothing the top.
- Arrange bacon strips on top.
- Bake for 35 minutes.
- While the meatloaf is baking: in a small bowl, combine the chili sauce, brown sugar, and mustard.
- Spread over the partially baked meatloaf.
- Sprinkle with the sliced scallion greens.
- Bake an additional 25 minutes or until the meatloaf is firm, the top is browned, and a meat thermometer inserted in the center reads 155°.
- Let the meatloaf stand in the pan for 10 minutes before slicing to serve.

Steps:
- Preheat Oven to 350 degrees F; position oven rack to middle of the oven.
- Melt butter in heavy skillet and saute onions, garlic and celery for approximately 4-5 minutes; until onions are translucent.
- Add salt, pepper, worcestershire sauce and 1/2 cup ketchup; cook for 1 minute, until combined.
- Transfer to a large bowl and add meats, bread crumbs and eggs; blend with your hands; do not overmix.
- In in 9 x 13 pan (sprayed with cooking oil) form the mixture into a 10 x 5 inch oval loaf.
- Mix brown sugar with remaining ketchup and spread on top.
- Bake until interntal temperature registers 155 degrees F; approximately 1 to 1 1/4 hours.
- Remove from oven, cover with foil and allow to stand for 5 minutes before cutting and serving.

Sometimes it is necessary for the mouse to outsmart the cat. My husband will not get near meatloaf due to childhood culinary trauma. I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf. I use leftovers to make meatball subs.

- Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
- Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
- Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.

- Pre-heat oven to 375 degrees.
- In a small skillet add the 1 Tbs. Of extra virgin olive oil and turn burner on medium. Add the finely chopped onions and the 3 finely chopped garlic cloves, and saute for 3-4 minutes. Place pan aside.
- In a bowl mix all other ingredients Except the chili sauce, mustard and brown sugar. Add the sauted onions and garlic to meat mixture and mix.
- Place the mixture into an ungreased 4"X8" or 9"X5" loaf pan.
- In a small bowl mix the chili sauce, brown sugar and mustard. Spread the mixture over the top of the meatloaf.
- place meatloaf in the oven.
- Cook for 1 hour.
- Let meatloaf sit for 7 minutes to set.
