3-INGREDIENT SCOTTISH SHORTBREAD COOKIES
Steps:
- Preheat oven to 325°F. Line two baking sheets with parchment paper or silicone mats; set aside.
- In the large bowl of a stand mixer fitted with the paddle attachment, combine flour, softened butter, and powdered sugar. Mix on medium speed until completely combined and a soft dough forms. The mixture will look dry and crumbly at first, but let the mixer keep running for a few minutes and the dough will eventually form into a soft ball.
- Roll out dough on a lightly-floured surface (to about ¼-inch thickness, or slightly thicker).
- Use cookie cutters, biscuit cutters, or a sharp knife to cut out desired shapes. Place shapes on prepared baking sheets. Pierce with a fork.
- Bake for 20 minutes, or until just lightly browned.
- Cool on a wire rack.

SCOTTISH SHORTBREAD
Scottish settlers first came to this area over 150 years ago. My mother herself was Scottish, and-as with most of my favorite recipes-she passed this shortbread recipe on to me. I make a triple batch of it each year at Christmas, to enjoy and as gifts. -Rose Mabee, Selkirk, Manitoba

OLD-FASHIONED SHORTCAKE
This is a fabulous old-fashioned recipe given to me by a friend. It was her mother's recipe and it is the best shortcake. It sops up all the juice and the touch of nutmeg sends it over the top. My very favorite recipe for strawberry shortcake!

Steps:
- Cream together the butter and icing sugar very well until very smooth and creamy. No lumps of butter should be visible.
- Blend in the vanilla extract.
- Sift together the flour and corn starch.
- Blend slowly into the creamed mixture until a soft dough forms.
- Split dough into 2 equal round portions.
- Wrap the dough rounds in plastic wrap and chill for a couple of hours at least.
- You can freeze one of the cookie dough portions for later if you like.
- This dough will also last in the fridge for 3-4 days so that you can bake a few up at a time and enjoy them fresh from the oven if you like.
- To bake the cookies preheat the oven to 350 degrees F and line cookie sheets with parchment paper.
- Roll the dough out to a little less than 1/4 of an inch on a lightly floured surface. Use a 2 inch cookie cutter (or holiday shaped cookie cutters) to cut out the cookies.
- Place the cookies on the parchment paper a half inch apart. Add a half maraschino or glacé cherry to the center, or a baking gumdrop if you like.
- Bake for 15-20 minutes or until they just start to turn brown at the edges.
- Let cool for 10 minutes on the pan before transferring them to a wire rack to cool completely. Store in an airtight container.
- These cookies will freeze quite well for several weeks.

Steps:
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add flour and mix until just combined. The cookie dough will be very soft and crumbly. That's the way it's supposed to be!
- Now, you have 2 options: 1) Spread mixture on a cookie tray, lined with parchment paper. Poke decorative holes with a fork and bake OR 2) Make cut out shapes like I did by kneading the dough a little and then rolling it between 2 sheets of wax paper. Then, use cookie cutters (like a small rectangle cutter) to cut out shapes. Use a spatula to gently pick them up and place them on a cookie tray, lined with parchment paper and bake.
- Bake at 325 degrees for 12 to 15 minutes or until edges are firm and slightly golden brown.
- If you went through option 1, remove tray from oven and quickly use a sharp knife to cut rectangle slices. Let the cookies cool down completely then remove from tray and enjoy. If you went through option 2, remove tray from oven and allow the cookies to cool down. Then, enjoy!
