These bars are simple enough for no-fuss dinners yet elegant enough for special celebrations. Regardless of when you serve them, I'm sure they'll be a hit at your home. —Melissa Mosness, Loveland, Colorado

1/2 cup butter, softened
1/4 cup sugar
1 cup all-purpose flour
FILLING:
3/4 cup sugar
2 large eggs
3 tablespoons lemon juice
2 tablespoons all-purpose flour
1 teaspoon grated lemon zest
1/4 teaspoon baking powder
Confectioners' sugar

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy, 5-7 minutes; gradually beat in flour until blended. , Press into an ungreased 8-in. square baking dish. Bake at 350° for 15-20 minutes or until edges are lightly browned. , For filling, in a small bowl, beat the sugar, eggs, lemon juice, flour, lemon zest and baking powder until frothy. Pour over crust. , Bake 10-15 minutes longer or until set and lightly browned. Cool on a wire rack. Sprinkle with confectioners' sugar. Cut into squares.

1 cup all-purpose flour
2/3 cup packed golden brown sugar
1 tablespoon freshly grated lemon zest
1 pinch salt
6 tablespoons chilled butter, cut into pieces
1/4 cup untoasted walnut pieces, ground coarse
3/4 cup sugar
2 large eggs
1 tablespoon freshly grated lemon zest
1/3 cup fresh lemon juice
1 teaspoon all-purpose flour
1/4 teaspoon baking soda
3 tablespoons coarsely chopped toasted walnuts
icing sugar
walnut halves

Steps:

  • For crust: Position rack in center of oven and preheat to 350°F.
  • Mix first 4 ingredients in a bowl, add butter and walnuts and cut in using fingertips until mixture forms coarse crumbs.
  • Firmly press crumbs on bottom of 9-inch square baking pan.
  • Bake crust until golden-brown, about 20 minutes.
  • Cool while preparing filling.
  • Maintain oven temperature.
  • For filling: Whisk ¾ cup sugar, eggs and peel in medium bowl until light and fluffy.
  • Whisk in lemon juice, flour and soda.
  • Pour over crust.
  • Bake until just set and edges are lightly-browned, about 12 minutes.
  • Sprinkle chopped walnuts over.
  • Cut into squares, sift icing sugar over, and top each square with a walnut half.

A little different from other recipes I've seen here, because the nuts are in the crust and there's the addition of lemon. They sound great. Wish I knew where the recipe came from! Read all the way through--notes at the end are from the original author.

2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 cups sugar
2/3 cup butter
3 eggs
1/2 lb walnuts, ground
1 lemon, juice and zest of
2 cups dates, cut fine
1 cup hot water
1 tablespoon flour
1 teaspoon vanilla
1/2 cup flour
1/4 cup sugar
1/4 cup butter

Steps:

  • Combine filling ingredients in a saucepan, bring to a boil, reduce heat and simmer a few minutes till thickened. Set aside and let cool.
  • For the base, sift together dry ingredients.
  • Cream sugar and butter. Add eggs, and dry ingredients and walnuts. Add lemon juice and zest to moisten.
  • Spread on a cookie sheet and up the sides.
  • Spread cooled filling over crust.
  • Combine filling ingredients with a fork until crumbly. Sprinkle on top and bake at 375 F for 35-40 minute.
  • Original recipe calls for the bars to be baked on a cookie sheet pan. We like them thicker, so I put them in a 9 X 13 cake pan.
  • Cool and cut unto bars.
  • To serve sprinkle liberally with 10X sugar.

These are sinfully delicious walnut cookies made with no flour! They can be made at Christmas with little poinsettia's on the top or on Halloween with R.I.P. written on top (we call them 'coffin cookies' when they are made like that). I hope you like them as much as we do! Note: Mom uses lemon, but I like orange better.

1 cup white sugar
1 pound ground walnuts
1 tablespoon orange zest
1 tablespoon fresh orange juice
3 egg whites
2 cups confectioners' sugar

Steps:

  • Preheat oven to 200 degrees F (100 degrees C).
  • Combine the white sugar, ground walnuts, orange zest, orange juice and 2 egg whites. This mixture will become very sticky and paste-like.
  • Form the paste into a long rectangle on a smooth surface sprinkled with sugar so that it won't stick. The rectangle should be about 16 x 4 inches.
  • Make the frosting by mixing the remaining egg white with the confectioners' sugar. You don't need to beat the egg white first! You may need to add a little water, or a little more powdered sugar to form a paste that you can easily spread, but that isn't runny.
  • Spread the frosting over your rectangle. Use a knife covered with sugar to cut the rectangle into small 1 x 2 inch bars and place them on an ungreased cookie sheet.
  • Bake in preheated oven for about 35 minutes or until frosting is hard but still white. Enjoy with a big glass of milk!
