This hot water cornbread is shaped into cakes and fried in hot fat in a skillet. This old-fashioned cornbread is similar to hoecakes or corn pone.

1 tablespoon shortening
1 cup cornmeal
1 scant teaspoon salt
1 cup boiling water
3 tablespoons vegetable shortening (or oil; for frying)

Steps:

  • Gather the ingredients.
  • In a heavy iron skillet , melt 1 tablespoon of shortening.
  • Place the cornmeal and salt in a bowl.
  • Pour boiling water over the cornmeal and salt.
  • Add the melted shortening and stir well.
  • When the mixture is cool enough to handle, after about 5 minutes, divide it into four portions.
  • Shape each portion into a cornbread cake about 3/4-inch thick.
  • Heat about 3 tablespoons of vegetable shortening or oil in the skillet over medium heat.
  • Place corn cakes in the hot oil and fry until browned, turning to brown both sides every 2 minutes, about 8 to 12 minutes total.

This recipe was given to me by a friend in 1960. The recipe was her mother's. I have made it every Thanksgiving since. It always gets rave reviews.

6 cups cornbread (broken)
4 cups biscuits (broken)
2 cups onions (chopped)
2 green onions (chopped, including green)
1 cup celery (chopped)
4 eggs (well beaten)
2 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon sage (or to taste, I like a lot more)
8 cups stock (from giblets, or milk or water)

Steps:

  • Note:.
  • If using cornbread mix such as Jiffy, make sure there is no sugar in the mix. It will ruin your dressing. I make my own cornbread.
  • I buy canned bisquits and bake them.
  • The amount of stock is approximately You may need to add more. The uncooked dressing should be very moist, (almost runny).
  • In a very large bowl soak cornbread and biscuits in stock.
  • Cook in l l/3 cup hot fat, chopped onion, green onion and celery.
  • Add vegetables to cornbread mixture.
  • Add eggs and seasonings to cornbread mixture.
  • Mix well.
  • Bake in a shallow uncovered pan in 325 deg. oven for 1 hour.

2 cups self-rising cornmeal
1/4 teaspoon salt
1 1/2 - 2 cups boiling water
Oil for frying
2 tablespoons bacon fat, optional

Steps:

  • Heat oil and bacon fat in a deep fryer or in a pot or heavy skillet over medium-high heat. (It needs to be deep enough to cover the spoons of batter.) Whisk the cornmeal and salt together. Using a spoon to mix, stir in just enough boiling water for the batter to stick together. It should be about the consistency of mashed potatoes. (I used about 1 1/4 cups.) When oil is hot, spoon walnut-sized tablespoons of batter into your hands and smooth out a bit. (It helps to wet hands first.) Drop into hot oil, a few at a time. Fry until golden brown. Drain on paper towels. Makes about 20.
