OLD-FASHIONED GREEN BEANS AND POTATOES RECIPE
This tasty green bean and potato salad can be served up warm or cold, making it the perfect side dish for your next barbecue or summer meal!

Steps:
- Quarter the potatoes if you are using the ones that are about 2 inches. If you are using larger potatoes, chop them into cubes.
- Put the cut potatoes in a medium pot and cover with water. Bring to a boil and cook for about 5 to 7 minutes until the potatoes are cooked but still firm.
- Meanwhile, trim off the ends of the green beans and chop them into 2-inch pieces. Add them to a steamer basket and place it over a pot of boiling water. Steam them for about 8 minutes.
- While the potatoes and beans are cooking, make the dressing: mix together the olive oil, vinegar, garlic, mustard, lemon zest, salt, pepper, and oregano.
- Add the cooked potatoes and green beans to a bowl and add the sliced onions.
- Top with the dressing and stir. Taste for seasonings adjust as necessary.
- Garnish with extra oregano. Eat right away or chill and serve as a cold salad.

SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES

- In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.
OLD SOUTH GREEN BEANS AND POTATOES
An old southern recipe from Mississippi for green beans and potatoes. You can delete the bacon or ham hock and they still taste good. Green beans adds a special taste to potatoes and I love it.

- In pot cover green beans with water and boil till tender with potatoes and bacon (or ham hock); drain.
- Add your favorite seasoning (I like butter, salt, and pepper).
- Remember ham hocks take a little longer than green beans, so if you use a ham hock, boil it first till tender then add the rest and cook. I personally never use ham hock due to fat content--I usually just use the bacon strips. I only listed it here as it was in the old south recipe.

- Place the green beans into a pot with enough water to cover. Add the baking soda to the water; bring the mixture to a boil, reduce heat to medium, and cook until the green beans are nearly tender, 7 to 10 minutes. Drain the water from the green beans; set aside.
- Place the potatoes into a large pot with enough salted water to cover; bring to a boil, reduce heat to medium, and continue cooking until almost tender, about 20 minutes. Remove from heat, but do not drain the water from the pot.
- Heat the butter in a large skillet over medium heat. Cook the onion and bacon bits in the melted butter until the onions are soft and translucent, 5 to 7 minutes; add to the large pot with the potatoes, along with the cream of chicken soup and milk; stir until smooth. Add the green beans. Season with salt and pepper.
- Place the large pot over low heat and cook the soup at a simmer until hot and the flavors have melded, about 30 minutes.

- Wash beans and snap them into 1 1/2" pieces, discarding ends.
- Cover with water and add salt and bacon grease.
- Cover and bring to a boil.
- Turn down to simmer and continue cooking for about an hour.
- Pour off water and add 2 T butter. Let sit with lid on for a minute for butter to melt, then toss beans a little to distribute butter.
