1 cup creamy peanut butter
1 pound powdered sugar

Steps:

  • Line an 8x8 inch pan with parchment paper. Use enough so that the paper hangs over the side. This makes it much easier to remove the fudge from the pan.
  • In a microwave-safe bowl, combine butter and peanut butter. Microwave for 1 minute and stir. Microwave for another minute and stir until mixture is completely smooth and incorporated.
  • Add in the powdered sugar and stir until smooth. You'll know it's done when you see a thick, paste-like batter.
  • Spread the batter onto the lined baking pan. Place a sheet of parchment paper on top of the fudge and start pressing with your palms to spread evenly across the pan.
  • Refrigerate for at least 2 hours. Remove the fudge from the pan and cut into small, 1-inch squares using a sharp knife.

1 (14-ounce) can sweetened condensed milk
¼ teaspoon kosher salt
2 teaspoons pure vanilla extract
½ cup toasted chopped nuts ((optional))

Steps:

  • Line an 8-inch square pan with foil or wax or parchment paper and grease the inside with softened butter.
  • Combine the chocolate chips, condensed milk and salt in a medium saucepan. Stir over medium heat until the chocolate has melted and the mixture is smooth. Remove from the heat and stir the vanilla and the nuts, if using, into the chocolate mixture. Pour it into the prepared pan and smooth the top.
  • Let the fudge sit in a very cool dry place until the fudge has set, or if your room is warm, chill but only after it comes to room temperature, about 1 hour more.
  • Cut into 1-inch squares and serve. Store in an airtight container for up to a week, or in the fridge if it's not all that cool in your kitchen. Let come to room temp just before serving. Makes 64 pieces.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

2 ounces unsweetened chocolate (chopped fine)
½ teaspoon baking soda
⅛ teaspoon table salt
14 ounces sweetened condensed milk
1 Tablespoon pure vanilla extract
1 cup toasted walnuts (coarsely chopped )

Steps:

  • Line an 8-inch square baking dish with HEAVY DUTY foil, allowing excess to overhang (see picture). Spray foil with nonstick cooking spray; set aside.
  • In a medium heat-proof bowl add chocolates, baking soda, and salt. Toss until baking soda is evenly distributed. Pour in sweetened condensed milk and vanilla; stir. Place bowl over a 4-quart saucepan with 2 cups of simmering water. Stir constantly until chocolate is almost completely melted and a few small pieces remain about 2-4 minutes.

1 box confectioners' sugar
1/2 c cocoa powder
1/4 c milk
1 tsp vanilla extract
1/2 c pecans

Steps:

  • 1. Mix confectioner's sugar and cocoa powder in a medium sized microwave safe bowl, cut butter into pieces and place on top of mixture. Pour milk over mixture. DO NOT STIR. Place bowl in microwave and cook on high for 1 (one) minute; remove and stir mixture; stir in the vanilla and pecans; put back in microwave, cook on high for 1 (one) minute; remove from microwave, stir mixture until all the butter is melted, pour into small pan to set. Does NOT need to be refrigerated.

  • Butter an 8-inch square baking pan then line with a piece of parchment paper with the 2 sides overhanging for easy removal.
  • Put butter and peanut butter in a large bowl and microwave until both are melted and liquid, about 3 minutes. Whisk until thoroughly combined.
