This Southern Bread Pudding is luscious. Be sure to serve the bourbon sauce while it is slightly warm. Quite often, this is our family's choice of holiday desserts. This came from an old southern cookbook many years ago.

1 loaf French bread, cut into 1 inch cubes (16 oz.)
4 cups milk
3 large eggs, beaten
2 cups sugar
1 cup raisins
3 tablespoons butter
2 tablespoons pure vanilla extract
1/2 cup butter, softened
1 cup sugar
1 large egg, well beaten
2 tablespoons Bourbon

Steps:

  • Combine bread and milk in a large mixing bowl; set aside for 5 minutes.
  • Add eggs, sugar, raisins, butter and vanilla; stir well.
  • Spoon mixture into a greased 3 quart casserole.
  • Bake, uncovered, at 325°F for 1 hour or until firm.
  • Cool in pan at least 20 minutes before serving.
  • Spoon into individual serving bowls; serve with Bourbon Sauce.
  • Bourbon Sauce: Combine butter and sugar in a small saucepan; cook over medium, stirring frequently, until sugar dissolves.
  • Add egg, stirring briskly with a wire whisk until well blended.
  • Cook over medium heat 1 minute.
  • Remove from heat, cool slightly; stir in bourbon.

3 eggs, beaten
1 ½ cups white sugar
2 tablespoons light brown sugar
½ teaspoon ground cinnamon
¼ cup butter, melted
3 cups whole milk
10 slices hearty farmhouse-style bread, toasted and cut into cubes
1 cup raisins
½ cup light brown sugar
1 tablespoon all-purpose flour
1 pinch ground cinnamon
1 egg
2 tablespoons butter, melted
1 ¼ cups whole milk
1 pinch salt
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
  • In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
  • Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
  • For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. Pour sauce over warm bread pudding, or serve on the side in a bowl.

1 teaspoon ginger
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/2 cup butter, chilled
1 cup seedless raisins
1 cup golden raisins
1 cup chopped pitted prunes
1/4 cup slivered almonds
1/4 cup mixed candied fruit peel
1 cup Progresso™ Plain Bread Crumbs
3/4 cup firmly packed dark brown sugar
1/4 cup brandy
3 eggs, beaten
1/2 cup butter, softened
1 cup powdered sugar
2 tablespoons brandy

Steps:

  • Generously grease 1-quart mold or ovenproof glass bowl; line with double thickness of cheesecloth.
  • Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, ginger, salt, baking powder, cinnamon, nutmeg and allspice; mix well.
  • With pastry blender or 2 knives, cut in 1/2 cup butter until mixture resembles coarse crumbs. Add raisins, prunes, almonds and fruit peel; toss until fruit is well coated with flour mixture. Add bread crumbs and brown sugar; mix well. Stir in brandy and eggs; mix well. (Mixture will be very thick and almost crumbly.)
  • Spoon mixture into greased and lined mold, packing firmly with back of spoon as mold is filled. Cover tightly with lid or heavy-duty foil; tie foil in place, if necessary.
  • Place rack in bottom of Dutch oven or 6-quart saucepan. Add water until it reaches top of rack. Bring to a boil. Set mold on rack; carefully pour hot water around mold until about half way up mold. Return to a boil. Reduce heat to low; cover Dutch oven. Simmer 2 1/2 to 2 3/4 hours or until toothpick inserted in center comes out clean. Add boiling water as needed.
  • Meanwhile, in small bowl, combine all hard sauce ingredients; beat until smooth. Line 10-oz. custard cup or decorative mold with plastic wrap. Spoon hard sauce mixture into lined cup. Cover; refrigerate until serving time.
  • Remove pudding from Dutch oven; cool in mold for 1 1/2 hours. Turn out of mold; carefully remove cheesecloth. Place on serving plate. Unmold hard sauce onto small plate; remove plastic wrap. Top each slice of pudding with small slice of hard sauce.

  • Scald milk (heat till just below boiling) and pour over butter, stir to mix well.
  • Beat eggs.
  • Gradually stir into milk mixture. Stir in sugar, salt, and cinnamon.
  • Put bread cubes and raisins in a 1-1/2 quart baking dish; pour in milk mixture. Stir gently to moisten the bread evenly.
  • Set in a larger pan; add hot water to the outer pan to come halfway up the sides of the baking dish.

2 tablespoons unsalted butter
6 cups bread chunks ((you can use stale or fresh but stale is more old fashioned))
2 cups milk
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
4 eggs
1/2 cup raisins

Steps:

  • Preheat the oven to 400 F. Put the butter in a 9 inch cake pan or pie plate, and place the pan in the oven for a couple of minutes to melt the butter.
  • Remove the pan and swirl the butter evenly over the bottom of the pan.
  • Sprinkle 2 tablespoons of granulated sugar in the bottom of the pan. Set aside.
  • In a large mixing bowl, combine the milk, sugar, salt, nutmeg, cinnamon,vanilla, eggs. Whisk briefly until just combined.
  • Add the bread chunks to the mixing bowl. If you are using raisins, add them now as well.
  • Stir until well saturated with liquid. Use your fingers to massage the mixture and break up any large chunks.
  • Gently place the soaked bread chunks in the pan, on top of the butter/sugar mixture. Fill in any gaps in the bread and gently press down on the top to make it even. Pour any remaining liquid evenly over the top.
  • Place the pan in the oven. Bake for 15 minutes at 400 F, then turn the oven down to 300 F and bake another 15 minutes. The bread pudding is done when the temperature in the middle reaches 175 F, or when the center jiggles but does not slosh.
  • Remove from oven and cool on a rack for 30 minutes. Serve slightly warm, or let cool to room temperature, then refrigerate. Also tastes wonderful chilled.

5 cups day old bread (cut into ½" cubes (I have use raisin bread and hot crossed buns))
2 cups whole milk
3 eggs (extra large, lightly beaten)
¾ cup sugar
¼ cup butter (unsalted, melted)
1/8 teaspoon salt
1/8 teaspoon nutmeg
½ cup cream
½ cup raisins (I used ½ cup tart cherries)
1 cup bread (cut into ½" cubes)
1 tablespoon sugar
1 tablespoon butter (melted)
¼ teaspoon cinnamon
¼ cup butter (unsalted)
1 cup powdered sugar (sifted)
1 large pinch salt
1 tablespoon brandy (or more to taste. I used 2 T)
1 egg (see notes)

Steps:

  • Preheat oven to 325F. Adjust rack to the middle of the bottom half of oven.
  • Butter an 8 x 8 baking dish. Distribute bread chunks evenly in the dish and sprinkle cherries evenly throughout the bread. Add Mix all ingredients after bread. Once completely incorporated, pour mixture over the bread & cherries.
  • Cover dish and refrigerate for 20 minutes.
  • Mix ingredients for topping and sprinkle over the top of the custard, pressing down slightly.
  • Bake at 325F for 40-50 minutes or until custard is set. The top will brown and it will only jiggle slightly in the very center.
  • Cream the butter until it is very soft. Add the sugar gradually, then the salt and beat these ingredients until they have a smooth, soft consistency. I could not get my sugar to the desired consistency, so I used the back of a wooden spoon to press the butter and sugar together until they were smooth and soft. Beat in the brandy (and egg) and chill the sauce thoroughly.
  • I used 2 tablespoons of brandy, which had a definite alcohol flavor. Every recipe I read said to chill "Hard Sauce" and serve it cold, but I found it unpleasant to eat chilled, so I warmed it up and drizzled it over the pudding. Much better.

4-5 c stale bread, cut in cubes
3 c warm milk
1/4 tsp salt
3 eggs
1/2 c sugar
1 tsp rum, brandy, or vanilla flavoring

1 Tbsp lemon juice
1/4 c raisins
1/4 c chopped nuts
HARD SAUCE
4 Tbsp butter, softened
1 1/4 c confectioners' sugar
1/8 tsp salt
1 tsp rum, brandy, or vanilla flavoring
1/4 c (or more) light cream

Steps:

  • 1. In a large bowl, soak the diced bread in the warm milk and 1/4 tsp. salt for 10-15 minutes. Preheat oven to 350°. Place a large pan of hot water on the middle rack while preheating.
  • 2. Beat together the eggs, sugar, rum or brandy, nutmeg, lemon juice, raisins, and nuts. Pour this mixture over the soaked bread and stir lightly to combine. Turn the mixture into a greased 2-3 quart casserole dish. Place the dish into the pan of hot water and bake about 45 minutes. When done, remove from the hot water and allow to cool slightly before serving.
  • 3. TO MAKE HARD SAUCE: Beat the confectioners' sugar gradually into the softened butter until blended and fluffy. Beat in the salt and the rum or brandy. Add cream 2 tablespoons at a time and blend well until very smooth. Chill while pudding is baking. Serve over the warm bread pudding.

1/2 pound loaf of French bread
1 cup whole milk
1 cup half and half
2 large eggs
1 cup granulated sugar
1 tablespoon pure vanilla extract

1 (15 ounce) can of fruit (fruit cocktail, peaches, pears, etc.), drained
2 tablespoons of unsalted butter
Whiskey Sauce (click here for recipe)

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together the milk and half and half. Tear the bread into small pieces and put into a large bowl for soaking. Pour the milk mixture all over the top. Let sit for about 10 minutes. Stir.
  • In a separate bowl, whisk the eggs with the sugar and vanilla until well blended.
  • Rough chop the fruit, but don't puree it.
  • Add the raisins and fruit to the egg mixture, pour over the bread and gently mix.
  • Butter a 9 x 9 inch baking dish and coat the dish all along the sides and bottom. Spoon the bread pudding mixture into the dish, but do not pack.
  • Bake uncovered at 350 degrees F for about 1 hour, or until bubbly on the sides, golden brown on top and set in the middle. Let cool for about 5 minutes before cutting into squares.

1 quart (4 cups) heavy cream
15 eggs
1 1/2 cups white sugar
2 tablespoons cinnamon
1 tablespoons vanilla extract
1 1/2 cups firmly packed brown sugar
2 French baguettes
2 cups heavy cream
1 cup (2 sticks) butter
2 cups brown sugar

Steps:

  • Mix the cream, eggs, white sugar, cinnamon and vanilla together very well in a very large bowl.
  • Slice the baguettes lengthwise then cut into 1" pieces.
  • Soak the bread in the cream mixture in the refrigerator overnight, covered.
  • Spray a 9x13 casserole dish with pan spray or coat with butter.
  • Layer in the soaked bread but not all the cream mixture. Discard the remaining cream mixture.
  • Leave the bread about 1/2" from the top so it has room to rise when baking.
  • Cover the top with brown sugar and bake at 325 for 45 minutes, then start checking and remove when center is set.

This simple bread pudding is an easy way to use up those bits and pieces that seem to lie around the pantry. Save a fortune and make this tasty pudding. I like to serve this with custard sauce but it goes well with whipped cream, ice cream, or also great on its own.

8 slices stale bread
½ cup butter, softened
½ cup white sugar
½ cup dried currants
1 ¾ cups milk
2 eggs
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round pie dish or cake pan.
  • Butter the bread on both sides and cut into triangles. Arrange a single layer of buttered bread in the bottom of the greased pan, slightly overlapping the triangles. Sprinkle with 1/2 of the sugar and all of the currants. Arrange the remaining bread on top, then sprinkle with remaining sugar.
  • Beat milk, eggs, and nutmeg together. Pour over the bread and press down firmly to compress the pudding and help the bread absorb the milk mixture.
  • Bake in the preheated oven until golden brown and set, about 30 minutes.

Unsalted butter, for pan and ramekins
1 1/2 cups sugar
1 teaspoon ground cinnamon
Pinch of freshly ground nutmeg
3 medium whole eggs
1 cup heavy cream
1 teaspoon pure vanilla extract
5 cups day-old French bread, or other light bread, cut into 1-inch cubes
1/3 cup raisins
9 medium egg whites, room temperature
1/4 teaspoon cream of tartar
Whiskey Sauce, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan; set aside. Combine 3/4 cup sugar, the cinnamon, and nutmeg in a large bowl. Beat in whole eggs until smooth; whisk in cream and vanilla. Add bread cubes; stir, allowing bread to soak up custard. Scatter raisins in greased pan; top with egg mixture, which will prevent raisins from burning. Bake until pudding is golden and firm to the touch and a cake tester inserted in center comes out clean, 25 to 30 minutes. It should be moist, not runny or dry. Cool to room temperature.
  • Butter six 6-ounce ceramic ramekins; set aside. In the bowl of an electric mixer, whisk egg whites and cream of tartar until foamy. Gradually add remaining 3/4 cup sugar; continue whisking until shiny and thick. Test with a clean spoon. If whites stand up stiff, like shaving cream, when you pull out the spoon, meringue is ready. Do not overwhip, or whites will break down and souffle will not work.
  • In a large bowl, break half the bread pudding into pieces using your hands or a spoon. Gently fold in a quarter of the meringue, being careful not to lose the air in the whites. Divide a portion of this mixture among the ramekins. Place remaining bread pudding in bowl, break into pieces, and carefully fold in rest of meringue. Top off souffles with this lighter mixture, piling it high, about 1 1/2 inches over top edge of ramekins. With a spoon, smooth and shape tops into a dome over ramekin rims. Bake immediately until golden brown, about 20 minutes. Serve immediately. Using a spoon at the table, poke a hole in the top of each souffle, and spoon the room-temperature whiskey sauce into the souffles.
