This recipe produces a really moist fruit cake it was given to me by my mom, and it's really easy. My mom uses it for Christmas cake by icing it. I use it for birthdays, Christmas, or just for a treat.

12 ounces candied mixed fruit
5 ounces glace cherries, roughly chopped
2 ounces candied mixed citrus peel
2 ounces chopped walnuts
¾ cup butter
1 teaspoon ground allspice
½ teaspoon baking soda
1 cup milk
12 ounces sifted self-rising flour
2 eggs
1 ½ cups white sugar

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Line one 8 inch deep sided cake tin with parchment paper.
  • Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool to body temperature.
  • Stir in the flour and the eggs. Pour batter into the prepared pan. Wrap outside of pan with brown paper or newspaper.
  • Bake at 325 degrees F (160 degrees C) for 40 minutes then reduce temperature to 300 degrees F (150 degrees C) and continue to baking cake for 1-1/2 hours. Remove cake from oven and allow it to cool in tin for 5 minutes then turn it out onto a cooling rack, remove greaseproof paper and leave until cool. Cake can be stored for up to 6 months wrapped in foil and in an air tight tin.

1 cup water
4 cups candied mixed fruit
1 cup white sugar
¾ cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
  • Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
  • Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

150g Soft Brown Sugar
110g Butter
250ml Milk
300g Self Raising Flour
2 Eggs

Steps:

  • Grease and line a 2lb bread tin.
  • In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
  • Allow mix to cool properly (can take upwards of an hour).
  • Once cool, add flour and eggs to the mix and stir thoroughly.
  • Transfer mix to the tin and place in the centre of a pre-heated oven (Gas 5 / 190 C) for 1hr

A very tasty boiled fruit cake its not heavy--simple to make and inexpensive. this has become a firm favorite with the family This was given to me well over 40 years ago, by an Australian farmers wife. She used to do all her baking in an old wood stove!

200 g sugar
225 ml water
30 g margarine
375 g mixed fruit
1 teaspoon bicarbonate of soda
275 g self raising flour
1 teaspoon mixed spice
1 egg
1 pinch salt

Steps:

  • Place the sugar, water,margarine, bicarbonate of soda and dried fruit in a medium saucepan and slowly bring to the boil. As soon as it starts to boil, remove and leave to completely cool.
  • Add the well beaten egg, mixed spice, pinch of salt, and the flour; mix well.
  • Line a 9-inch cake tin. Cook at approximately 170°C for about an hour to an hour and a quarter.
  • To stop it drying out while cooling, it's advisable to drape a clean tea towel over the cake after about half an hour.
  • NB - if you are in a hurry for the fruit to cool - place saucepan in some cold water in the sink, iit will cool in under half the time.

500 g sultanas
250 g butter, chopped
3 eggs
2 teaspoons almond essence or 2 teaspoons vanilla essence
1 cup sugar
1 1/2 cups plain flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 150°C and grease a 20cm square or round cake tin.
  • Pick over the sultanas to remove any stem- nothing worse than a crunch in your cake.
  • Place sultanas in a saucepan and cover them with cold water. Bring to the boil and then drain off the water. Return sultanas to saucepan.
  • Stir in the chopped butter and set aside the sultanas to cool.
  • Beat together the eggs, essence and sugar. Then add in the sultanas.
  • Add your flour and baking powder to another mixing bowl and aerate with a kitchen whisk (or you can sift them together).
  • Stir the flour into the sultana mix.
  • Pour into prepared cake tin and bake for 1 1/2 hours.

This recipe comes from my great grandma, maybe not exactly as she would have made it. Apparently my great granddad liked it fried in butter for breakfast. Up until now it has been a verbal recipe so my mother and I have put it down in "writing for prosterity. It's not a fancy fruit cake but something for everyday. I like this with a blue cheese.

375 g mixed dried fruit
50 g glace cherries
1 tablespoon mixed peel (optional)
125 g butter
1 teaspoon bicarbonate of soda
3/4 cup water
1/4 cup brandy
1 cup brown sugar
2 eggs
1 cup plain flour
1 cup self-rising flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/2 teaspoon cardamom
1/4 teaspoon mace
1 pinch salt

Steps:

  • Place dried fruit, mixed peel, cherries, water, brandy, sugar and butter in pan.
  • Heat gently, bring the boil and simmer for 5 minutes.
  • Take of heat and add the bicarb soda, stirring through, mixture will foam up a bit. Leave until cold.
  • Sift flours and spices.
  • Mix the eggs through the fruit mixture, then combine with dry ingredient.
  • Pour into a lined 18cm square cake pan or 18cm round cake pan.
  • Wet your hand and flatten top of cake.
  • Bake at 150C for 1 hour.
  • Cool in pan covered with a tea towel.

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8x8-inch baking pans.
  • Bring water and raisins to a boil in a saucepan; cook until raisins are plump, about 2 minutes. Drain and cool raisins; reserve raisin water.
  • Mix 3 cups flour, cinnamon, baking powder, baking soda, and salt together in a bowl. Place pecans and 2 tablespoons flour in a resealable plastic bag; close and shake bag until pecans are coated. Pour pecans into a colander and shake off excess flour.
  • Whisk sugar, oil, eggs, and cooled raisin water together in a bowl; fold in candied fruit. Stir flour mixture, 1/2 cup at a time, into sugar mixture until fully incorporated; fold in raisins and pecans. Fill the prepared pans a little over half full.

125g unsalted butter, cubed, plus extra for the tin
175g light brown soft sugar,
200g raisins
200g sultanas
100g currants
50g mixed peel
225g self-raising flour
1½ tsp mixed spice
½ tsp bicarbonate of soda
2 eggs, beaten

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter and line a 900g loaf tin with baking parchment. Melt the sugar, butter and 225ml water in a large saucepan. Once melted, add the raisins, sultanas, currants and mixed peel. Bring to a gentle boil, and stirring occasionally, cook until reduced and softened, around 10-15 mins. Remove from the heat and leave to cool to room temperature.
  • Tip the flour, mixed spice, bicarbonate of soda and a pinch of salt into a large bowl. Add the cooled fruit mixture and stir, then add the eggs and mix to combine. Bake for 45-55 mins until dark brown and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 mins, then transfer to a wire rack to cool completely. Cut into slices to serve.

I am posting this for myself, as I only make this once a year - the recipe has often moved since I made it last (or I forgot where I put it). This recipe has been in our family for over 100 years (5 generations), it takes 2 days make and is rich and moist. As this fruit cake contains no alcohol it does not need time to "cure".

500 g sultanas
250 g raisins
250 g currants
250 g chopped dates
250 g chopped walnuts
250 whole glace cherries (I always add more as this is my favourite part of the cake)
1/2 cup brown sugar
1/2 cup white sugar
250 g butter
1 cup water
1 teaspoon bicarbonate of soda
1/2 cup fresh orange juice
4 eggs, beaten
1 1/2 cups self raising flour
1 1/2 cups plain flour
1 teaspoon mixed spice
blanched almond, to top (optional)

Steps:

  • Day one.
  • Mix the first 11 ingredients into a large heavy based pot, place over a medium heat. Stir and bring to the boil (don't leave it alone in case it burns at the base).
  • Reduce the heat to low and simmer for 10 minutes, you can leave it alone for this part.
  • Turn the heat off and add the orange juice, stir until well combined and leave overnight to soak. Place a lid over the top to stop moisture evaporating through the night.
  • Day 2.
  • In the cold pot with the pre-soaked fruit mixture add the remaining ingredients and stir well, be warned - you will need some serious elbow grease as the mixture will be very thick!
  • In either 2 large and deep loaf tins or a deep 20x20cm grease and line the sides and base 4 times with brown paper (I use brown paper bags that I have sliced open). Have the paper create a rim that goes up and above the tin. For a square tin you will need around 8 paper bags.
  • Place the cake mix into the prepared tin/s. Bang the cake tin on the floor about 10 times to get all the air bubbles out.
  • Using a wet hand, smooth the cake to make it flat. At this stage you can choose to decorate the top with blanched almonds or not.
  • Place into a cold oven, turn the oven up to 250 degrees F/150 degrees C for 3 1/2 - 4 hours for 1 large cake or 2 1/2 - 3 hours for 2 loaves. Rotate the cakes at least once during cooking - even it you have a fan forced oven. Cake is cooked when a skewer comes out clean.
  • Cool in the tin, cake is best eaten the day after baking.
  • Store in an airtight container for upto 5-7 days depending on your humidity.

BOILED FRUIT MIXTURE
4 oz Brown Sugar
8 oz margarine or butter
1lb mixed fruit
2 tsp mixed spice
1/2 Pint Milk
4 oz Glace Cherries
2 eggs beaten
2 oz chopped walnuts
12 oz Self Raising Flour
1 tsp bicarbonate of soda

Steps:

  • Place all the ingredients for the fruit mix in a large saucepan bring to the boil and allow to cool for about 30 minutes
  • Preheat oven to 160C / Gas 3
  • Add the cherries and nuts stir through
  • then add eggs and mix well, add the flour and fold through the mix.
  • Place the mixture in a greased and floured 8' - deep cake tin. Tie some greaseproof paper around the outside of the tin so that the paper comes over the edges of the tin or optionally place over the top about half way through baking. Bake for 2 hours but check after 1.5 hours , check to see if cooked throughly with a skewer. If not bake a little further until the skewer comes out clean from the cake. Allow to cool and either decorate with marzipan and royal icing, or dried apricots and cherries and glaze with melted apricot jam or plain is very nice too.
