BLT Salad with Avocado image

BLT Salad with Avocado is my low-carb solution to the classic sandwich! Made with center cut bacon, lettuce, tomatoes and avocado in a light dressing.

12 slices lean center cut bacon (cooked and chopped)
4 Roma tomatoes (chopped)
1/4 cup light mayonnaise (I use Hellman's)
1/8 tsp kosher salt
fresh black pepper (to taste)
6 cups chopped Romaine lettuce
4 oz 1 medium hass avocado, diced

Steps:

  • In a medium bowl, combine the diced tomatoes with the mayonnaise, and season with a little salt and fresh cracked pepper. Set aside for about 10 minutes to let the tomatoes release their juices as this will be the "dressing" to your salad.
  • To serve, divide the chopped lettuce and tomatoes onto 4 plates, then top each with diced avocado, chopped bacon and tomato mixture.

We love BLT and avocadoes. This recipe is from razzle dazzle recipes. Time doesn't include time for dressing to blend flavors.

1 large avocado, ripe, peeled and mashed
1/2 cup sour cream
1/4 cup milk
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic salt
2 drops hot pepper sauce (optional)
3 cups torn lettuce or 3 cups shredded lettuce
3 medium tomatoes, cut into wedges
1/2 lb bacon, cooked until brown, and crumbled

Steps:

  • In small bowl, combine all dressing ingredients; beat at low speed until smooth.
  • Cover and refrigerate for several hours to blend flavors.
  • Combine salad ingredients in large bowl.
  • Serve with dressing.

I love Tomatoes and I love Avacado's. This salad is delicious and best when Tomatoes are in Season. I am always looking for recipes to use my bumper crop of Tomatoes in the Summer and this one is so easy to pull together. You could add some Grilled Chicken for a main course.

1 large ripe avocado, peeled, mashed
1/2 cup sour cream
1/4 cup milk
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic salt
fresh cracked black pepper
2 drops hot pepper sauce (optional)
4 cups of shredded lettuce
3 medium tomatoes, cut into wedges
1/2 lb bacon, crisp cooked, crumbled
3/4 cup crouton, if desired

Steps:

  • In Food Processor, combine all dressing ingredients; beat at low speed just until smooth.
  • Cover and refrigerate for several hours to blend flavors.
  • At serving time, arrange salad ingredients on 6 individual plates or toss in large salad bowl.
  • Serve with dressing.

B.L.T. Salad with Avocado Ranch Dressing image

Add some flare to your BLT by serving it alongside an avocado ranch dressing. Yum!

½ lb(s) sliced bacon, cooked until crisp
2 heads iceberg lettuce
4 ripe Heirloom tomatoes, cut into ½-inch slices
2 Tbsp snipped fresh chives
1 large avocado, peeled
1 cup mayonnaise
½ cup sour cream
⅓ cup chopped scallions
2 Tbsp lemon juice
Salt and freshly ground black pepper

Steps:

  • In a food processor combine the avocado, mayonnaise, sour cream and lemon juice and mix together until smooth. Add the chopped scallions and season well with salt and pepper.
  • To compose the salad, cut the iceberg lettuce into 1 inch discs. (You should get 2 portions per head of lettuce.) Place the first slice of lettuce on a plate. Spoon 1 tablespoon of the avocado ranch dressing on top of the lettuce. Then arrange the tomato slices on top and season with salt and pepper.
  • Place 2 pieces of crisp bacon on top of tomatoes. Finally, top with another slice of iceberg lettuce. Drizzle more Avocado Ranch dressing on top of salad and sprinkle with chives.
