Angel biscuits are a cross between a regular biscuit and a dinner roll. They're super light and fluffy!

Yield About 10 angel biscuits

Number Of Ingredients 10

1/4 cup warm water (100 degrees F to 110 degrees F)
1 tablespoon honey
1 1/4-ounce package active dry yeast
2 2/3 cups all-purpose flour, plus more for dusting
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon kosher salt
1 stick cold unsalted butter, cut into small pieces, plus melted butter for brushing
3/4 cup buttermilk
Flaky sea salt, for topping

Steps:

  • Stir the warm water and honey in a small bowl until dissolved, then stir in the yeast; set aside until creamy or foamy, about 5 minutes. Meanwhile, whisk the flour, baking powder, baking soda and kosher salt in a large bowl.
  • Add the cut-up butter to the flour mixture and work it in with your fingertips until the butter is in pea-size pieces. Make a well in the center and add the yeast mixture and buttermilk. Stir with a wooden spoon or rubber spatula until the flour is completely moistened and the dough looks like a shaggy ball. Cover the bowl with plastic wrap and let rise at room temperature until the dough is doubled in size, 1 to 1 1/2 hours.
  • Lightly brush the bottom and sides of a 9-inch pie plate or 9- to 10-inch cast-iron skillet with melted butter. Turn out the dough onto a lightly floured surface and briefly knead three or four times until smooth. Pat until 1 inch thick; fold in half like a book and pat to 1 inch thick again. Rotate the dough 90 degrees and repeat folding and patting two more times. Cut out rounds using a 2 1/4-inch biscuit cutter (dip the cutter in flour if the dough is sticky). Gently knead the scraps together once to cut out more biscuits. You should have about 10. Place them close together in the pan. Cover and refrigerate until the biscuits rise and are cold and firm, at least 3 hours or overnight.
  • Preheat the oven to 425˚ F. Brush the tops of the biscuits generously with melted butter. Bake until browned on top and firm in the spots where the biscuits meet, 20 to 25 minutes. Brush again with more melted butter and sprinkle with flaky salt. Let cool in the pan for at least 20 minutes, then slide out.

I came up with this recipe when I wanted to make a softer biscuit. I took 3 different recipes and combined them and added my own twist. They FLEW off the table...Enjoy!!!!

1/2 cup(s) yellow cornmeal
3 tablespoon(s) butter, melted
1 package(s) yeast
3 teaspoon(s) baking powder
2 teaspoon(s) sugar
3/4 teaspoon(s) salt
1 1/2 cup(s) heavy cream or whipping cream
2-3 tablespoon(s) butter, melted for brushing

Steps:

  • Line a baking sheet with parchment paper or spray with cooking spray
  • Add yeast and sugar together and mix in 1/4 cup water..let bubble up for 5 min.
  • In a large bowl whisk together flour, cornmeal, baking powder, salt.
  • In another bowl melt butter and mix with cream.
  • Mix together your wet and dry ingredients and then add yeast mixture. turn out and knead for a few min, adding flour as needed to make a soft dough. Cover and let rise for about an hour, till doubled.
  • Once risen roll to about 1/2 inch and cut out biscuits and place on baking sheet. Cover and let rise again till double.
  • Pre-heat oven to 425 and bake for 12-15 min or until lightly brown. Remove from oven and brush tops with butter. Makes about 10 biscuits...gobble up and ENJOY!!!

  • Whisk 1 1/3 cups flour, 1/3 cup cornmeal, 2 teaspoons baking powder, 1/2 teaspoon kosher salt and a pinch of cayenne. Work in 6 tablespoons diced cold butter with your fingers until crumbly. Stir in 2/3 cup half-and-half and 1 tablespoon honey; let sit 5 minutes. Pat into a 1/2-inch-thick square on a floured surface and cut into 8 pieces; shape into rounds and brush with half-and-half. Bake at 425 degrees F on a parchment-lined baking sheet until golden, 12 to 15 minutes.

6 tablespoons unsalted butter, chilled and cut into 1/2-inch pieces, plus more for topping, if desired
3/4 cup plus 1 tablespoon nonfat buttermilk
Honey (optional)

Steps:

  • Heat oven to 400 degrees. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and sugar. Using your fingers or a pastry cutter, cut butter into flour mixture. Using a wooden spoon, stir in 3/4 cup buttermilk until the mixture holds together.
  • Line a baking sheet with parchment paper. On a lightly floured work surface, roll out dough to a 1-inch thickness. Using a 2-inch-round cookie cutter or a drinking glass, cut out eight rounds, and place on prepared parchment; discard scraps of dough. Brush tops of biscuits with remaining tablespoon buttermilk. Bake until golden and puffy, about 12 minutes. If desired, spread with butter or honey. Serve warm.
