Apples 2 pounds
Water 2 cups
Mustard seed 1 tbsp
Tomatoes 2 pounds
Onion 1
Garlic 1 clove
Golden raisins ½ cup
Sugar ¾ cup
Curry 5 tsp
Cayenne pepper 1 tsp
Salt 4 tsp
Malt vinegar 2 ½ cups

Steps:

  • In a large saucepan, bring the apples and 2 cups water to a boil, then reduce heat and cook, stirring occasionally for 25 minutes until apples have softened. If needed, add more water to keep the apples simmering.
  • Wrap the mustard seed into a cheesecloth and place inside the saucepan with the apples.
  • Add the tomatoes, onions, garlic, sultanas, sugar, curry powder, cayenne pepper, salt and vinegar and mix until the sugar has dissolved through.
  • Bring the saucepan to a boil, then reduce heat and simmer, stirring occasionally for 3 hours until a thickened chutney forms.
  • Remove the cheesecloth with mustard seed, and discard.
  • Seal chutney in sterile bottles or serve cooled.

1 ½kg cooking apples, peeled and diced
750g light muscovado sugar
500g raisins
2 medium onions, finely chopped
2 tsp mustard seeds
2 tsp ground ginger
1 tsp salt
700ml cider vinegar

Steps:

  • Combine all the ingredients in a large, heavy saucepan. Bring the mixture to a boil over a medium heat, then simmer uncovered, stirring frequently, for 30-40 mins, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilised, clean, dry jars and seal.

3 cans (14-1/2 ounces each) fire-roasted diced tomatoes with garlic, undrained
2 medium red onions, chopped
1 large apple, peeled and chopped
1 cup golden raisins
3/4 cup cider vinegar
1/2 cup packed brown sugar
1 tablespoon chopped seeded jalapeno pepper
1 tablespoon minced fresh cilantro
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground allspice
Baked pita chips

Steps:

  • Combine the first 11 ingredients in a greased 3-qt. slow cooker. Cook, uncovered, on high 5-6 hours or until thickened. Serve warm with pita chips.

I got this recipe from an older lady who sold chutney and jam's at a local bake sale stall. I haven't made it yet, but I will! I am keeping it here for safe keeping.

1 1/2 kg apples
1 1/2 kg onions
1 1/2 kg ripe tomatoes
850 ml white distilled vinegar
3 tablespoons salt
1 1/2 tablespoons black pepper (not freshly ground)
1 7/8 kg white sugar

Steps:

  • Finely chopped the peeled and cored apples and the onions (food processor would work well, but don't over whizz it and make a sauce).
  • Peel and slice the tomatoes and place in a large pan with all the other ingredients.
  • Boil for about 2 hours and stir occasionally. Place into sterilised bottles and seal.
  • Chutney keeps for 12 months and once opened, keep in the fridge.

500g red onion, finely sliced
1kg tomato, chopped
4 garlic cloves, sliced
1 red chilli, chopped (optional)
4cm piece ginger, peeled and chopped
250g brown sugar
150ml red wine vinegar
5 cardamom seeds
½ tsp paprika

Steps:

  • Tip all the ingredients into a large heavy-based pan and bring to a gentle simmer, stirring frequently. Simmer for 1 hr, then bring to a gentle boil so that the mixture turns dark, jammy and shiny. Place into sterilised jars and allow to cool before covering. Will keep for 6 weeks.

My Mum used to make green tomato chutney many years ago but she lost the recipe. I have spent ages looking for a replacement recipe & this is the closest to what we remember. This recipe is adapted from one on Hidden England. I love this best with cheese sandwiches or a ploughmans salad etc. Time to make doesn't include the 'resting' times given.

1 lb green tomato
1 lb onion
1 lb apple (granny smith or other firm, tart apple)
1 lb brown sugar
1 pint malt vinegar
1/2 teaspoon mixed spice
1 teaspoon dry mustard
1/2 teaspoon cayenne pepper
2 ounces salt

Steps:

  • Finely chop the tomatoes, apples and onions. Put them in a bowl and sprinkle with the salt. Cover and leave somewhere cool overnight.
  • Strain off the resulting salty juice and discard. Put the remains of the onion, tomato, apple mix into a pan and add the vinegar, spice, mustard, ginger and pepper. Bring to the boil and simmer for about 1½ hours, stirring occasionally. You will know when it is ready because the chutney will start to become 'thick' in texture.
  • Turn off the heat and leave it in the pan to cool. Once it is at room temperature then decant it into clean storage jars, seal and put to one side for use. This can be eaten immediately after cooking, but you will find that the flavour improves if left for a few weeks in the jars before eating.

A delightful apple chutney with the added kick of ginger. I make this every autumn when I harvest my apples from the garden - you can use windfall apples too. Chutney is such an interesting preserve as it combines sweet and savoury flavours, making it an ideal accompaniment for a range of dishes such as cold meats, salami, ham, pasties, pies and is essential in a traditional Ploughman's Lunch! I also add chutney to my curries, tagines and winter stews. The word chutney is derived from the Hindu word "chatni" meaning strongly spiced. Try to use good cooking apples with plenty of flavour and taste for the best results. This is based on a family recipe and is a mellow and mild type of chutney.

1 lb onion, weight is for onions when peeled and finely chopped
2 lbs cooking apples, weight is for apples when peeled, cored and roughly chopped
4 ounces sultanas
1 ounce fresh gingerroot, grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb soft brown sugar
1/2 pint malt vinegar
1/2 pint cider apple cider vinegar
1/2-1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
  • Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
  • Stir the chutney regularly and make sure it does not "catch" and burn on the base of the preserving pan.
  • Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
  • (A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet!).
  • Spoon the hot chutney into hot and sterile jars and seal immediately.
  • Makes about 4 lbs chutney.
  • Store in a dark and cool place and leave to mature for at least 2 weeks.
  • Will keep in ideal storage conditions for up to 2 years+.

This classic condiment makes the most of end-of-season green tomatoes with apples, sultanas and spice

Number Of Ingredients 14

4 tbsp olive oil
1kg onions, chopped
6 garlic cloves, finely chopped
1 tbsp mixed spice
1 heaped tsp yellow mustard seeds
1 tsp chilli flakes (optional)
2 bay leaves
2kg green tomatoes, roughly chopped
500g cooking apples, peeled and diced
850ml cider vinegar
500g light soft brown sugar
200g soft pitted dates, chopped
200g sultanas
1 tbsp flaky sea salt (or 1 heaped tsp coarse crystal)

Steps:

  • Heat the oil in a preserving pan, then add the onions and let them gently soften for 10 mins. Add the garlic, spices and bay, and cook for 5 mins more until fragrant.
  • Tip in the tomatoes, apples and half the vinegar, then simmer for about 15 mins or until the tomatoes and apples are soft. Add the rest of the vinegar, then the sugar, dried fruit and salt, and cook gently until the sugar dissolves.
  • Turn up the heat a little, then bubble the chutney for about 1 hr 30 mins, or until it is thick and jammy. When ready, you will be able to drag a line across the bottom of the pan without the chutney flooding back straight away. The timing can vary depending on the water content of the tomatoes. Remove the bay leaves before potting the hot chutney into hot, sterilised jars.
