Try this Middle Eastern sandwich of chickpea and spice 'meatballs,' which are actually falafel that are oven-fried to keep their calorie count down. Serve with grilled pita wedges or pita pockets, diced tomatoes, shredded lettuce, and cucumber slices.

1 (15 ounce) can chickpeas, drained and rinsed
¾ onion, diced
¼ cup packed chopped fresh cilantro
¼ cup packed chopped fresh parsley
3 cloves garlic, smashed
1 small lemon, zested
½ teaspoon ground cumin
½ teaspoon kosher salt
½ teaspoon red pepper flakes
½ teaspoon baking powder
⅓ cup all-purpose flour
1 egg, beaten
½ cup plain Greek yogurt
¼ cup seeded and minced cucumber, squeezed dry
2 teaspoons fresh lemon juice
1 teaspoon minced garlic
salt to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Coat a 9x13-inch metal baking pan with cooking spray and 1 tablespoon olive oil and place inside the oven. Preheat the oven to 375 degrees F (190 degrees C). C
  • Combine chickpeas, onion, cilantro, parsley, garlic, lemon zest, cumin, salt, red pepper flakes, and baking powder in a food processor. Pulse until minced but not yet pasty. Transfer to a bowl and stir in flour and egg until fully incorporated.
  • Remove baking pan from the oven. Drop golfball-sized portions of chickpea mixture onto the hot pan.
  • Bake in the preheated oven 15 to 20 minutes. Brush falafel with remaining olive oil and flip over. Continue baking until golden on both sides, 15 to 20 minutes more.
  • Meanwhile, combine yogurt, cucumber, lemon juice, and garlic in a bowl. Season with salt and cayenne pepper. Store in the refrigerator until ready to serve.
  • Serve falafel with yogurt sauce.

1 (6 ounce) container plain yogurt
½ cucumber - peeled, seeded, and finely chopped
1 teaspoon dried dill weed
salt and pepper to taste
1 tablespoon mayonnaise
1 (15 ounce) can chickpeas (garbanzo beans), drained
1 onion, chopped
½ cup fresh parsley
2 cloves garlic, chopped
1 egg
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 dash pepper
1 pinch cayenne pepper
1 teaspoon lemon juice
1 teaspoon baking powder
1 tablespoon olive oil
1 cup dry bread crumbs
oil for frying
2 pita breads, cut in half
1 cup chopped tomatoes

Steps:

  • In a small bowl combine yogurt, cucumber, dill, salt, pepper and mayonnaise and mix well. Chill for at least 30 minutes.
  • In a large bowl mash chickpeas until thick and pasty; don't use a blender, as the consistency will be too thin. In a blender, process onion, parsley and garlic until smooth. Stir into mashed chickpeas.
  • In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together; add more or less bread crumbs, as needed. Form 8 balls and then flatten into patties.
  • Heat 1 inch of oil in a large skillet over medium-high heat. Fry patties in hot oil until brown on both sides. Serve two falafels in each pita half topped with chopped tomatoes and cucumber sauce.

2 tablespoons canola oil, plus extra for frying
1 medium yellow onion, chopped
1 large red bell pepper, chopped
5 cloves garlic, chopped
Two 14-ounce cans chick peas, drained
1 teaspoon red chili flakes
1 teaspoon ground cumin
1 egg
1 tablespoon salt
1/2 tablespoon freshly ground black pepper
5 tablespoons flour
2 cups freshly chopped parsley leaves
3/4 cup freshly chopped cilantro leaves
Pitas, for sandwich
Toppings: shredded lettuce, chopped tomato, and sliced cucumbers
Yogurt Dipping Sauce, recipe follows
1 cup plain yogurt
1/2 tablespoon lemon zest
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1/2 teaspoon ground cumin
Kosher salt, as needed

Steps:

  • In medium skillet over medium heat, add 2 tablespoons oil and sweat onion and peppers 2 to 3 minutes then garlic and cook until translucent, about 5 minutes.
  • In a food processor, pulse together chick peas, red chili flakes, ground cumin, the egg, salt and black pepper to form a coarse consistency. Then add flour, parsley, and cilantro. Pulse until mixture starts pulling from the sides of the food processor.
  • Remove mixture to a large bowl and mix in the onion mixture. Chill falafel until ready to cook.
  • Roll falafel dough into 1-inch rounds. Then form rounds into an oblong quenelle shape, like a football.
  • In a thick-bottomed skillet heat 1/2 inch of canola oil over medium heat to 350 degrees F. Cook falafel balls a few at a time, until golden brown, about 5 minutes. Be sure to turn them so they do not burn or stick to the bottom of the pan. Drain on paper towels and sprinkle with salt while still hot.
  • Open the pita bread to make pockets. Place 3 to 4 falafels inside. Stuff with lettuce tomato and cucumbers and drizzle sauce generously on the inside. Serve immediately.
  • Mix the yogurt, lemon zest, lemon juice, cilantro, parsley and cumin together in a small bowl. Add salt to taste. Chill until ready to use.

1/2 cup vinegar (I like apple cider vinegar)
2 tablespoons fresh dill or 1 1/2 teaspoons dried dill
3 tablespoons grated onions
1/4 teaspoon fresh ground black pepper
4 medium cucumbers, peeled, seeded and thinly sliced
2 cups low-fat plain yogurt
1 medium potato, nuked and peeled
3 tablespoons canola oil
2 small onions, finely chopped
1 medium jalapeno pepper, seeded and minced (if you don't like heat, use banana pepper or poblano pepper)
2 garlic cloves, minced
1/2 cup fresh parsley, minced (plan on using the whole bunch, Zaar editor doesn't do BUNCH)
2 (19 ounce) cans garbanzo beans, drained, rinsed and well smashed
1 tablespoon plain low-fat yogurt
1 teaspoon paprika
1 lemon, juice of
6 whole wheat pita bread, cut in half
2 cups shredded lettuce
12 slices tomatoes

Steps:

  • CUCUMBER DRESSING: Mix vinegar, dill, onions and pepper in a bowl.
  • Add cucumber slices and marinate overnight.
  • Drain; discard liquid. Stir in yogurt. Makes about 4 cups; more than enough for the sandwiches.
  • FALAFEL PATTIES: Preheat oven to 350ºF. Spray baking sheet with cooking spray.
  • Microwave potato for about 3 minutes; cool, peel and mash with a fork. Set aside.
  • Heat oil in skillet over medium heat and saute onions, jalapeno and garlic till soft; about 3 minutes. Stir in parsley and saute another minute.
  • In a large bowl, combine beans with onion mixture; mix well.
  • Stir in mashed potato, yogurt, paprika and lemon juice.
  • Form into 24 patties using 2 tablespoons mixture for each. (It's easier to spoon 2 tablespoons on baking sheet and form into rounds).
  • Place patties on baking sheet and bake for 10 minutes; turn patties over and bake for another 10 minutes.
  • Assemble sandwiches by placing 2 patties in each pita half. Top with lettuce and 1 tomato slice. Serve with cucumber dressing.
  • Serving = 2 pita halves with 4 patties and toppings.

18 cooked falafel balls (homemade, or store-bought falafel mix )
2 medium tomatoes (diced)
1 medium cucumber (diced, with peel)
1 medium onion (white or red, sliced)
1/4 cup fresh parsley (finely chopped)
1 tablespoon olive oil
6 pita bread loaves
Optional: 3 sliced sandwich pickles
Tahini sauce (homemade or use store-bought; to taste)

Steps:

  • Gather the ingredients.
  • Heat a large nonstick skillet or griddle to medium-high heat. Coat with olive oil and heat a pita round for 2 minutes on each side. The pita may begin to brown a little. Repeat with the remaining pita rounds, making sure to cut the top part to reveal the pocket after heating.
  • Stuff each pita round with 3 falafel balls and a spoonful each of diced tomatoes and cucumber. Top each with sliced onion, chopped parsley, the optional pickles, and a generous drizzle of tahini sauce.

Make this for your friends. They won't believe that it didn't come from that little Mediterranean place around the corner. This is a great recipe to partially prepare in advance and refrigerate until you're ready to cook and eat, but once you cook the falafel, it's best to eat it right away. This sauce is good on anything from veggies to bread. I like to make extra just for snacking on.

Number Of Ingredients 13

1 (15-ounce) can chickpeas
1 onion
5 cloves garlic
2 tablespoons finely chopped fresh parsley
1 teaspoon ground cumin
2 tablespoons flour
Salt and pepper
Canola oil for frying
1 cup sour cream
1/2 cucumber
1 carrot
1 tomato
2 pieces pita bread

Steps:

  • Pour the chickpeas into a colander and rinse under cold water. Let drain for 10 minutes. Place the chickpeas in a bowl and smash them well with a fork or a potato masher, if you have one, until they are the consistency of dense, grainy mashed potatoes. Peel and finely chop the onion and garlic, or pass the garlic through a garlic press. Reserve 1 tablespoon of the chopped onion and 1 teaspoon of the chopped garlic for the sauce and add the remainder of each to the mashed chickpeas. Stir in the parsley, cumin, and flour until they are completely combined. Season with salt and pepper and mix well. Form the mixture into small balls about the size of ping-pong balls, and press them gently between your palms to flatten slightly into patties.
  • Pour about 1 inch of oil into a deep skillet or large saucepan and place over medium-high heat until very hot (about 350°F). (A tiny drop of water flicked into the pan should immediately cause the oil to bubble up.) Carefully add a few of the patties to the oil using a slotted spoon. Make sure not to crowd the patties in the pan. Cook for 3 to 4 minutes on each side, or until golden brown. Remove to a plate lined with several layers of paper towels to drain and repeat the process with the remaining patties.
  • Place the sour cream in a bowl and add the reserved onion and garlic. Peel the cucumber and cut it in half lengthwise. Scrape out the seeds with a spoon and cut the cucumber into thin slices. Stir the cucumber into the sour cream and season with salt and pepper.
  • Peel and grate the carrot. Cut the tomato in half, remove the seeds by scraping them out of the tomato with a small tool or your finger, and chop into 1/2-inch pieces. Cut the pita breads in half and open the pockets. Place 3 or 4 falafel in each pocket and spoon on some of the cucumber sauce. Top with some of the grated carrot and tomato and serve immediately.
  • Temperature control is the key to nongreasy frying: if your oil is hot enough when you add the food, and if it stays hot enough, the food will cook fast and absorb a surprisingly small amount of oil. Fry the food in batches to keep the pan uncrowded-adding a lot of food to the pan can cool the oil down too much.

This recipe was developed one night in haste from a more traditional, chickpea-based recipe in an effort to recreate an appetizer from an Ethiopian restaurant. Its dual use as a bean dip was discovered quite accidentally but to very delicious results. These falafel are excellent when served in pita bread with the sauce as well as with some tomato and hummus.

3 (15 ounce) cans black beans
3/4 large onion
6 -8 green onions
4 -5 cloves garlic
1/2 bunch fresh cilantro
1 egg
5 teaspoons ground coriander
5 teaspoons ground cumin
2 teaspoons ground black pepper
1 teaspoon baking powder
salt, to taste
red pepper flakes, to taste
1/3 cup flour
vegetable oil
16 ounces plain yogurt
1 cucumber
3/8 teaspoon dried dill
1/4 large onion
1 clove garlic
black pepper, to taste

Steps:

  • Drain the black beans.
  • If you have a food processor, pulverize them until a paste; if not, mash them with a fork, your hand, or potato masher.
  • Chop onion, green onion, garlic, and cilantro; add to the beans and again process until paste like if you have the equipment, or just mix in thoroughly (your hands work quite well for this).
  • Add coriander, cumin, black pepper, baking powder, salt, and red pepper flakes and mix well.
  • At this point, the mixture is a yummy bean dip; you may choose to reserve all or part of it (about a third) solely for this purpose.
  • To continue with the falafel, if the mixture is noticeabley runny add enough flour to make it hold together (no more than 1/3 cup).
  • Lightly beat the egg, add it to the bean mixture, and mix well.
  • Refrigerate for 30 minutes.
  • While the falafel mixture refrigerates, chop the remaining 1/4 onion, garlic clove, and cucumber into small bits; add these to the yogurt with the dill and black pepper and mix thoroughly; refrigerate in a covered container until needed.
  • Coat a large (nonstick) frying pan with enough oil to keep the falafel from sticking (you will need to replenish this periodically between batches).
  • Spoon the falafel mixture into the pan and flatten to make patty-shaped (3"-4" in diameter and 1/2"-3/4" thick).
  • Cook over medium-high heat on each side for 5-10 minutes, or until brown and crispy.
  • Transfer to a paper towel-lined plate to cool; serve warm.
