1/4 cup extra virgin olive oil
2 cloves garlic, thinly sliced
1 large red onion, cut into 2 inch chunks
2 red bell peppers, cored,seeded and cut in 2 inch chunks
2 green bell peppers, cored,seeded and cut in 2 inch chunks
4 hot Italian sausages
4 italian sweet sausage
1 cup canned crushed Italian plum tomato
1 1/2 cups chianti wine
1 pinch dried oregano
salt and black pepper

Steps:

  • Divide oil between 2 large skillets with lids; heat over medium heat.
  • Divide garlic, onion and peppers between skillets and cook, stirring as needed, until onion is translucent, about 5 minutes.
  • Add sausages, 4 to a skillet, and cook about 4 minutes more until sausages begin to brown.
  • Add tomatoes, wine, oregano and a pinch of salt to pans.
  • Cover, bring to simmer for about 25 minutes, until peppers are soft.
  • Season with salt and pepper.
  • Serve with crusty bread.

1 cup milled or crushed canned Italian plum tomatoes
1 1/2 cups dry red wine
1 pinch of dried oregano
Salt and freshly ground pepper

Steps:

  • In a large skillet with a lid, heat the olive oil over medium-high heat. Add the garlic, onion, and peppers, and cook, stirring, until the onion is translucent, about 5 minutes. Add the sausages, and cook about 4 minutes more, until sausages begin to brown. Add the tomatoes, wine, oregano, and a large pinch of salt. Cover, bring to a simmer, and simmer gently about 25 minutes, until the peppers are very soft. Season with salt and pepper to taste. Serve immediately. 1/4 cup extra-virgin olive oil
1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

Easy Italian Sausage and Peppers image

My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

8 hot Italian sausages (if you prefer) or 8 italian sweet sausage (if you prefer)
2 tablespoons olive oil
1 large onion, halved and sliced
2 large red peppers, seeded and sliced
1 green pepper, seeded and sliced
2 garlic cloves, minced
salt and pepper, to taste
1 pinch crushed red pepper flakes (optional)
1 teaspoon dried oregano
8 Italian rolls
mustard (optional)

Steps:

  • Heat the oil in a large pan, over medium heat.
  • Add the sausages and cook, turning frequently.
  • You want them browned all over and this takes about 10 minutes.
  • Add the onions and stir up the browned bits on the bottom of the pan.
  • Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
  • After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

1 tablespoon olive oil
1 lb smoked sausage (I use Eckrich skinless smoked sausage)
3 cups yukon gold potatoes, peeled and diced, approx. 1 lb
1 large green bell pepper, cut into 1/2 inch strips
1 large red bell pepper, cut into 1/2 inch strips
1 small red onion, peeled and finely diced
1 (2 ounce) envelope Lipton Recipe Secrets onion soup mix
1 1/2 cups water

Steps:

  • In a 12 inch skillet, heat oil over medium-high heat. Brown sausage on all sides and remove.
  • Cut sausage into 1-inch slices (when slightly cooled) and set aside.
  • Add peppers and onion to sausage drippings and saute, stirring frequently, approximately 2 minutes until tender.
  • Blend onion soup mix with water, add to pan and add diced potatoes. Bring to a boil over high heat.
  • Reduce heat to low and simmer, covered, 10 minutes.
  • Return sausage to skillet and simmer, covered, an additional 10 minutes or until sausage is done and potatoes are fork tender.
