water
2 lbs okra pods
2 teaspoons salt, divided
1/2 cup olive oil
1/3 cup white vinegar
1/2 teaspoon dry mustard
1/2 teaspoon thyme leaves
1/4 teaspoon sugar
1/4 teaspoon pepper
2 garlic cloves, crushed
1/4 cup chopped pimiento
12 large butter lettuce leaves

Steps:

  • In a large skillet over medium heat in 1 inch of boiling water heat okra and 1/2 teaspoons salt.
  • Cover and cook 5 minutes or until tender.
  • In a large bowl with a fork mix together 1 1/4 teaspoons salt with the oil and remaining ingredients except pimento and lettuce.
  • With a slotted spoon remove okra and add to oil mixture along with pimento.
  • Stir and chill 4 hours up to overnight.
  • In 6 bowls line each with 2 leaves of lettuce and arrange okra evenly.

1/2 pound fresh okra, washed, with 1/4-inch stem attached
1 recipe vinaigrette (see recipe)
1 tablespoon loosely packed fresh basil leaves (preferably the tiny bush basil leaves, but if they aren't available, then the smallest leaves, finely shredded)

Steps:

  • Bring two quarts of heavily salted water to the boil. Blanch the okra for exactly five minutes. Drain and refresh under cold running water for five minutes. Drain. Toss okra, vinaigrette and basil. Allow to marinate for 30 minutes before serving. This salad may be made up to four hours ahead of time.

  • In a large cast iron skillet over medium heat, fry the bacon slices until crisp, about 5 to 7 minutes. Drain the bacon on a paper towel lined plate, reserving the rendered bacon grease for the vinaigrette and for cooking the okra later.
  • In a small bowl, whisk together the honey, stone ground Dijon mustard, red wine vinegar, and sea salt, until smooth. Slowly add the olive oil and 2 tablespoons of the reserved warm bacon grease, whisking until the dressing is emulsified.
  • When the bacon is cool, crumble a slice and add to the vinaigrette. Crumble the remaining bacon and set aside.
  • If not preparing the okra immediately, cover the vinaigrette and refrigerate. When ready to serve, warm in the microwave for 20 to 30 seconds.
