This savory Japanese pancake is typically made only with cabbage. Our version includes zucchini and carrot too. Top with fried eggs to make it a meal.

¼ cup mayonnaise
1 teaspoon Sriracha
¼ teaspoon toasted sesame oil
2 cups shredded green cabbage
2 cups shredded zucchini
1 cup shredded carrot
4 scallions, sliced, whites and greens separated, divided
¼ cup brown or white rice flour
½ teaspoon kosher salt
2 large eggs
2 tablespoons canola oil
2 teaspoons toasted sesame seeds

Steps:

  • Whisk mayonnaise, Sriracha and sesame oil in a small bowl. Set aside.
  • Combine cabbage, zucchini, carrot and scallion whites in a large bowl. Sprinkle with rice flour and salt and toss to coat. Beat eggs in a small bowl, then pour over the vegetables and stir until evenly combined.
  • Heat canola oil in a large nonstick skillet over medium-high heat until shimmering. Add the vegetable mixture, pressing gently on the top and sides with a spatula to shape it into a large pancake. Cook until a golden crust forms on the bottom and edges, 6 to 9 minutes. (Reduce heat, if necessary, to prevent burning.) To flip, carefully place a large plate or inverted rimless baking sheet over the pan and quickly invert. Slide the pancake back into the pan, browned-side now facing up. Continue to cook until the vegetables are tender and the bottom is golden, 3 to 4 minutes more.
  • Slide the okonomiyaki onto a serving plate. Drizzle with the reserved mayonnaise mixture and sprinkle with sesame seeds and scallion greens.

For the Okonomiyaki (Pancakes):
2 cups all-purpose flour
1 1/4 cup dashi soup stock (or water)
1 to 1 1/2 pounds cabbage , finely chopped, divided
4 to 6 tablespoons green onion, chopped, divided
1/2 to 3/4 cup tenkasu ( tempura flakes), divided
4 to 6 eggs, divided
1 teaspoon of vegetable oil
12 to 18 strips thinly sliced pork or beef
For the Toppings:
Dash of okonomiyaki sauce
Mayonnaise
Pinch of Ao-nori (dried seaweed powder)
Handful of katsuobushi (dried bonito flakes), optional
Beni-shoga (pickled red ginger), optional

Steps:

  • Gather the ingredients.
  • Put flour in a large bowl.
  • Add dashi to bowl and mix to make batter. Rest for about an hour in refrigerator.
  • To make one okonimiyaki pancake, take out about 1/2 cup of batter and place into another bowl.
  • Mix about 1/4 pound chopped cabbage, about 1 tablespoon chopped green onion, and about 2 tablespoons of tempura flakes into batter.
  • Add 1 egg ​into batter and stir.
  • Heat an electric pan, griddle , or skillet and oil lightly.
  • Pour batter into the pan and make a round shape. It will take a few minutes to cook, keep an eye on it.
  • Meanwhile, fry a couple slices of meat on the side in another saucepan and place the meat on top of okonomiyaki.
  • Flip okonomiyaki and cook until cooked through.
  • Garnish the okonomiyaki as directed below. Repeat until you have used up all of the batter.
  • Gather the ingredients.
  • Flip the okonomiyaki again and spread okonomiyaki sauce and mayonnaise on top.
  • Sprinkle ao-nori over the sauce.
  • Sprinkle katsuobushi and beni-shoga, if you would like.
  • Serve and enjoy!

Okonomiyaki means "what-you-like-grilled". You can add anything you like to the batter. It's quite versatile. This is the recipe based on the Otafuku brand Okonomiyaki sauce package minus the meat.

1 cup all-purpose flour or 1 cup okonomiyaki flour, if you can find it
3/4 water or 3/4 dashi stock, if preferred
3 eggs
10 large cabbage leaves, chopped or 500 g cabbage
2 stalks green onions
1 1/2 tablespoons vegetable oil
1/2 cup okonomi sauce
8 ounces sliced mushrooms
1/4 cup japanese mayonnaise
2 tablespoons nori, flakes
2 tablespoons bonito flakes
1 tablespoon tempura batter (cooked and crumbled)

Steps:

  • Mix flour with water in medium size bowl.
  • Stir eggs and vegetable ingredients in the batter.
  • Heat oil on a griddle, a hot plate, or in a large skillet.
  • Pour enough batter to make a single serving griddle cake (about 6" across and 1/2" thick.) Repeat for three more servings as room allows.
  • Cook both sides on medium-low heat until golden brown (about 5 minutes each.).
  • Move each griddle cake to a serving plate and immediately spread 1/4 cup of Okonomi sauce over the top of each one.
  • Top the griddle cakes with the remaining ingredients evenly.

1 sheet nori (seaweed, about 8x7 inches)
1/4 cup catsup
1 1/2 tablespoons Worcestershire sauce
1/4 teaspoon Dijon mustard
2 tablespoons sake
1 teaspoon soy sauce
2 eggs
1 cup flour
1 cup water
2 tablespoons sake
1 pinch salt
2 cups cabbage, shredded (about 1 1/2 inch strips)
1/4 cup carrot, shredded (1 1/2 inch strips)
4 scallions, cut in half lengthwise and into 1-inch strips (about 1 cup)
1/4 cup vegetable oil
1/2 cup chicken, cooked or bacon, cooked, cut in 1/2-inch pieces (whatever meat you like)
4 teaspoons mayonnaise

Steps:

  • Toast the nori by waving it over a flame until it stiffens slightly, but be careful--it burns easily. Crumble into little pieces and set aside.
  • Combine all the sauce ingredients in a small saucepan and simmer for 30 seconds, stirring constantly.
  • Remove from the heat and cool to room temperature.
  • Beat the eggs in a large bowl.
  • Add the flour and water and continue beating until you have a batter the consistency of pancake batter.
  • Add the sake and salt.
  • Fold in the cabbage, carrots, and scallions. Be sure to mix the batter and vegetables together evenly. Each okonomiyaki will use 1/4 of this mixture.
  • Heat 1 tbsp. of the oil in a standard 10-inch skillet. Spoon 1/4 of the batter onto the hot skillet (like a pancake) making sure the vegetables are evenly distributed.
  • Then sprinkle 1/4 of the shrimp or meat of you choice on top.
  • Cook each side on medium heat for 2 minutes, until lightly browned. Reduce the heat to low and cook, covered, for another 5 minutes, occasionally turning and gently pressing the okonomiyaki with a spatula.
  • Prepare three more okonomiyaki as above. Keep the finished pancakes warm in a low oven while making the rest, or use two skillets and make two okonomiyaki at a time.
  • Serve hot with the sauce to taste--I recommend 1 tbsp. per okonomiyaki-- and top with about a tsp. of mayonnaise and a sprinkling of toasted nori.

2/3 cup all-purpose flour
100 g shredded cabbage
1/3 cup water
1 slice ham or 1 slice bacon, diced
1 egg
salt and pepper
1 tablespoon barbecue sauce
1 tablespoon mayonnaise

Steps:

  • Combine the flour, water, egg, salt & pepper.
  • Add shredded ham or bacon and cabbage.
  • Pour enough oil into a pan to cover base.
  • When oil is heated, add all or half the mixture.
  • Brown on both sides.
  • Combine the barbecue sauce and mayonnaise and smear on the fritters to serve.

KANSAI-STYLE OKONOMIYAKI

I got this delicious recipe for Okonomiyaki from my friend Mayumi, who is from Osaka. Okonomiyaki is basically a savory vegetable and meat pancake that is topped with 2 kinds of sauce: Okonomi sauce, which is similar to Worcestershire sauce but is thicker and sweeter, and Mayonnaise - the mayonnaise used on okonomiyaki is a Japanese brand called Kewpie. It is a bit thinner and more tangy than the mayo sold in the US. Many people call Okonomiyaki "Japanese Pizza", which is a translation that doesn't really work, frankly. It is round, hot, and you choose what sort of meat you want to put in it; but that's pretty much where the similarities end. You can use whatever sort of meat you'd like in these, the most common is pork and/or shrimp; but you could use chicken or bacon or squid or anything, really. There are some ingredients in this recipe that you will need to get from a Japanese grocery store. If you don't have one in your town you can order them from Amazon.com - they sell the Okonomi sauce, Kewpie Mayonnaise, and an "Okonomiyaki Kit" which has Bonito Flakes and the mix for the batter in it. Weirdly, the kit does not have the two sauces in it. Tenkasu are crunchy bits of fried flour and they are also called Agedama. If you can't find them just leave them out. Nagaimo is a type of Japanese yam. If you can't find it you can just leave it out. Do not try to use the yams we have here in the US - it's a very different type of yam. If you can find the Nagaimo, when you grate it it will have a very runny, sticky texture, kind of similar to egg whites. I chop the cabbage, green onions, kimchee and pickled ginger all at the same time in my Cuisinart - it goes much quicker that way. You can make 1 large pancake or 2 smaller individual servings. I like to do 2 because they are easier to flip that way! Whew! Anyway, I hope you enjoy your Okonomiyaki! It is delicious and also a good way to get kids to eat some cabbage ;) *NOTE*: the Recipezaar computer doesn't recognize a lot of the ingredients in this and won't let me put them in the "Ingredients" area, so I am listing them here: Where it says "1 cup flour", it should say 1 cup Okonomiyaki mix. 4 green onions, finely chopped
1 tablespoon pickled ginger, finely chopped
1/2 lb pork belly, cut in very thin strips
kewpie mayonnaise
okonomi sauce
bonito flakes
Pam cooking spray or vegetable oil

Steps:

  • In a large bowl, beat together the eggs, nagaimo and water.
  • Slowly beat in the okonomiyaki mix until it is well incorporated with the nagaimo/egg mixture. This is your okonomiyaki batter.
  • Mix the cabbage, kimchee, green onions and pickled ginger into the okonomiyaki batter. Set aside.
  • Heat a large skillet over medium heat and grease lightly with Pam or vegetable oil.
  • Fry the pork belly until it is just cooked (do not brown, it will be cooking more later) and set aside.
  • Add the 1/2 cup of tenkasu to the okonomiyaki batter.
  • Make a large pancake (or two smaller ones) in the skillet with the okonomiyaki batter - you will have to be turning this pancake over at some point, so don't make it so big that you won't be able to flip it.
  • Place the cooked pork belly on top of the pancake and push it down a bit (gently) into the batter. Let the pancake cook for about 10 minutes. Keep peeking at the bottom - you want it to brown but not to burn.
  • Flip the pancake over and let it cook for another 5 minutes or so until it is browned.
  • Place the pancake on a plate and top with okonomi sauce, mayonnaise, and bonito flakes - the heat from the pancake will make the bonito flakes "dance"! It's pretty cool.
