2 Tbsp olive oil ((extra virgin))
1 lbs ground lamb
2 tsp each, salt & pepper ((divided into 2 equal portions - 1 tsp each))
1 large white onion ((finely grated))
1 large carrot ((finely grated))
2 cloves garlic ((finely grated))
2 Tbsp Worcestershire sauce
2 Tbsp tomato puree ((or tomato paste, but then only 1 1/2 tablespoons))
1 cup dry red wine ((I use Cabernet Sauvignon or Pinot Noir))
2 sprigs fresh thyme ((chopped))
1 sprig fresh rosemary ((chopped))
1 cup chicken stock
2 lbs russet potatoes ((washed, peeled and quartered))
2 Tbsp butter ((unsalted))
2 large egg yolks
1 cup Parmesan cheese ((reserve some for topping, if desired))

Steps:

  • Bring a large cast iron skillet, skillet, or frying pan to high heat with the olive oil.
  • After the oil is hot, add in the ground lamb. Spread in an even layer and crisp one side, then turn and crisp the bottom side. Break apart the ground lamb after it is browned and crisped. Season the lamb with salt and pepper (use the first portion of salt & pepper, 1 teaspoon of each).
  • Add in the onion, garlic, and carrot and cook for about 2-4 minutes till vegetables are soft.
  • Pour in the Worcestershire sauce then the tomato puree and combine. Add in the red wine, thyme and rosemary and cook until most of the wine has evaporated off.
  • Pour in the chicken stock and cook for 3-4 minutes. Then turn heat off and set aside.
  • In a large stockpot cover peeled potatoes with water then boil the potatoes for about 20 minutes or until potatoes are soft. Drain.
  • Mash potatoes either with a fork or a ricer if you have one.
  • Season with the remaining salt & pepper.
  • Stir in the butter, egg yolks and stir very quickly then add the Parmesan cheese and combine well. (Optional - reserve a few tablespoons of the Parmesan cheese for topping the Shepherds pie)
  • Spoon the lamb meat into a casserole dish and then top with the potato. Using a spatula run the potatoes completely over the mince filling in any holes. It should look like a smooth mound.
  • Sprinkle the remaining Parmesan cheese on the top and then using a fork drag along the top of the potatoes (this will give the potatoes a nice crunchy texture where they get raised by the fork).
  • Place in your preheated oven at 350°F (180°C) for 18-20 minutes.
  • Remove from the oven and allow 5-10 minutes to cool before serving.

4 large russet potatoes, peeled and quartered
10 whole garlic cloves, peeled
1/2 cup sour cream
1/4 to 1/2 cup beef broth
4 tablespoons butter, softened
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Nonstick cooking spray
4 slices bacon, cut into thin strips
1 tablespoon vegetable oil
2 medium onions, chopped
1/2 teaspoon salt, plus 1/2 teaspoon
1 teaspoon sugar
1 pound ground beef
2 to 3 medium carrots, roughly chopped, (about 1 cup)
3/4 cups frozen peas, thawed
2 garlic cloves, minced
2 tablespoons tomato paste
1 tablespoon all-purpose flour
1 (12-ounce) bottle light or dark beer
1/2 cup beef broth
1 teaspoon finely minced fresh rosemary leaves
1/2 teaspoon freshly ground black pepper
1/2 cup grated Swiss or Cheddar
2 tablespoons chopped fresh parsley leaves

Steps:

  • Prepare potato topping: In a large saucepan add the potatoes and garlic and cover with cold water. Bring to a boil over medium heat and cook, uncovered, until the potatoes are fork-tender, about 15 to 20 minutes. Drain. Transfer the potatoes and garlic to a large bowl. Add the sour cream, 1/4 cup of the broth, butter, salt and pepper, and beat on low speed with a hand mixer until the potatoes are light and fluffy, about 1 to 2 minutes. If the mixture is too dry, add the remaining 1/4 cup broth. Do not overmix. Cover and set aside.
  • Preheat the oven to 350 degrees F. Spray a 10-inch round baking dish with nonstick spray.
  • Prepare filling: Heat a large skillet over medium heat. Add the bacon and cook, stirring occasionally until browned and almost crisp, about 7 to 8 minutes. With a slotted spoon, transfer the bacon to a plate; set aside.
  • Add the oil to the drippings in the skillet and put over medium heat. Add the onions and 1/2 teaspoon of salt, and cook, stirring occasionally, until the onions are very soft and just beginning to brown, about 10 minutes. Sprinkle in the sugar, and cook, stirring occasionally, until the onions begin to caramelize, about 3 minutes. Stir in the beef and cook, stirring occasionally, over medium-high heat, until the beef begins to brown, about 7 minutes. Add the carrots, peas, and garlic and cook, stirring, until the vegetables begin to soften, about 5 minutes. Stir in the tomato paste and flour and cook, stirring, until well blended, about 2 minutes. Add the beer, bring to a boil and boil for 3 minutes. Cook, stirring with a wooden spoon, and scraping up the browned bits from the bottom of the pan, about 2 minutes Add the cooked bacon, the broth, rosemary, 1/2 teaspoon of salt, and the pepper, and bring to a boil. Reduce the heat and simmer, uncovered, until the sauce thickens, about 15 minutes.
  • Spoon the meat mixture into the prepared baking dish. Spread the potato topping evenly over the beef mixture. Bake until the filling is hot, the topping is lightly browned and the edges are bubbly, about 35 minutes. Remove from the oven and sprinkle with the cheese. Return to the oven and bake for 10 more minutes. Let rest out of the oven for 10 minutes before serving. Sprinkle with parsley and serve.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

1 tbsp rapeseed oil
1 onion, chopped
3-4 thyme sprigs
2 carrots, diced (total weight 300g/11oz)
250g lean minced lamb (we used 10% fat)
1 tbsp plain flour
1 tsp vegetable bouillon powder, made up to 350ml/12fl oz stock with boiling water
227g can chopped tomatoes
1 tbsp tomato purée
400g can green lentil with no added salt, drained
1 tsp Worcestershire sauce
650g Maris Piper or King Edward potato, roughly chopped
250g sweet potatoes, roughly chopped
2 tbsp half-fat crème fraîche
1 tbsp semi-skimmed milk

Steps:

  • Heat the oil in a large, deep sauté pan or saucepan. Tip in the onion and thyme sprigs and fry for 2-3 mins. Then add the carrots and fry together for 5-8 mins, stirring occasionally until the vegetables start to brown. Stir in the mince to break it down. Fry for 1-2 mins until no longer pink. Stir in the flour, scraping the bottom of the pan in case the meat sticks, then cook for another 1-2 mins. Pour in the stock and stir until thickened. Stir in the tomatoes, tomato purée, lentils and Worcestershire sauce and season with pepper. Reduce the heat and simmer, covered, for 45 mins, stirring occasionally.
  • Meanwhile, prepare the topping. Drop all the potatoes into a large pan of boiling water. Bring back to the boil, then simmer for 12-15 mins or until the potatoes are tender. Drain well in a colander then tip back into the pan. Mash with a masher or, briefly, with an electric hand mixer until smooth. Beat in the crème fraîche and milk with a wooden spoon until light and fluffy. Heat oven to 200C/180C fan/gas 6.
  • Spoon the meat into a 1.5 litre pie dish and remove the thyme sprigs. Top with the mash and smooth over with a knife. Use a fork to create a ridged pattern on top. Place the dish on a baking sheet and bake for about 20-25 mins until piping hot and the filling starts to bubble around the edges. If the top is not brown enough, pop it under the grill for 5 mins or so until the mash is crisp and golden. Let it sit for 5 mins then serve.

1 lb ground beef
1 (15 ounce) can peas
1 (15 ounce) can corn
3 -4 cups mashed potatoes
6 slices Velveeta cheese or 2 cups shredded medium cheddar

Steps:

  • Preheat oven to 350.
  • Brown ground beef and drain.
  • Drain MOST of the water out of the peas and corn then dump peas and corn into casserole dish.
  • Mix in the ground beef with the corn and peas.
  • Spread potatoes over the top to cover well.
  • Cover top with slices of velvetta or shredded cheddar.
  • Bake for approximately 15 minutes or until cheese is melted.

NO-FUSS SHEPHERD'S PIE



No-fuss shepherd's pie image

We've got some lovely twists on shepherd's pie on the site, but we were missing a definitive version of this classic family recipe - here it is!

1 tbsp sunflower oil
1 large onion, chopped
2-3 medium carrots, chopped
500g pack lamb mince
2 tbsp tomato purée
large splash Worcestershire sauce
500ml beef stock
900g potatoes, cut into chunks
85g butter
3 tbsp milk

Steps:

  • Heat 1 tbsp sunflower oil in a medium saucepan, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.
  • When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.
  • Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.
  • Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.
  • Meanwhile, heat the oven to 180C/fan 160C/gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. Drain, then mash with 85g butter and 3 tbsp milk.
  • Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.
  • Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)
  • Leave to stand for 5 mins before serving.

I love making this. It's such a nice winter meal, and it's so easy and quick, and best of all..so economical!! Growing up, Mum made shepherds pie almost weekly. Over the years I have altered it, and this is the way my family enjoys it now. We don't serve this with anything, except maybe a nice bread roll.

500 g ground beef
1 medium onion, finely chopped
1 medium carrot, grated
1 tablespoon olive oil
2 tablespoons gravy mix
1 garlic clove, crushed
1 teaspoon cracked black pepper
1 teaspoon mixed herbs
6 potatoes
2 tablespoons butter
1/4 cup milk
2 eggs
1/2 cup cheese, grated

Steps:

  • Heat olive oil in a large saucepan. Cook onions untiil tender, add beef and carrots.
  • Stir in gravy powder, garlic, pepper, and herbs.
  • Add enough water to just cover the meat mixture, stir, cover, and simmer until thickened, stirring occasionally.
  • Remove from heat, and set aside to cool.
  • Boil the potatoes until tender. Drain, and mashe with butter and milk.
  • Using electric beaters, beat eggs into potato until creamy.
  • Pour the meat mixture into a casserole dish.
  • Top with mashed potatoes. You can spoon the potatoes on, or if you want a nicer presentation and you have the time, pipe on with a piping bag.
  • Top with grated cheese, and bake at 180C for around 30 minutes, or until cheese has melted and just started to brown.
